Pellegrino Artusi
PELLEGRINO ARTUSI (1820- 1911) This month’s subject was suggested by a recent television series on CNN entitled “Stanley Tucci: Searching for Italy.” Each episode follows Tucci in his travels across Italy to discover the secrets and delights of the country’s regional cuisines. In addition to beautiful pictures of Italian scenery, the programs present interviews with numerous chefs and food producers. It is a fascinating look at the variety of cuisines and ingredients that serve as the culinary staples of the various regions of Italy. One such program that focused on Bologna, Rimini, and other towns and cities in the Emilia-Romagna region talked about the importance of a single individual from that region who developed and published a cookbook that played an important role in expanding the popularity of Italian regional dishes throughout Italy and the world. At the same time, he furthered the use of the Italian language, thereby helping to produce a common language in Italy, a country of numerous dialects. Pellegrino Marcello Artusi, known as the “Father of Italian Cuisine,” came from a large family; he was the only boy of the 13 children born to Agostino (nicknamed Buratèl, or “little eel”) and Teresa Giunchi Artusi. He was born on August 4, 1820 in Forlimpopoli in the Emilia-Romagna region in the province of Forlì- Cesena. (At the time of his birth, the area was part of the Papal States). Not much is known of his early life; it was a fairly typical upbringing for a boy in the early 19th century from a prosperous family in this part of Italy. -

Off the Pedestal, on the Stage: Animation and De-Animation in Art
Off the Pedestal; On the Stage Animation and De-animation in Art and Theatre Aura Satz Slade School of Fine Art, University College, London PhD in Fine Art 2002 Abstract Whereas most genealogies of the puppet invariably conclude with robots and androids, this dissertation explores an alternative narrative. Here the inanimate object, first perceived either miraculously or idolatrously to come to life, is then observed as something that the live actor can aspire to, not necessarily the end-result of an ever evolving technological accomplishment. This research project examines a fundamental oscillation between the perception of inanimate images as coming alive, and the converse experience of human actors becoming inanimate images, whilst interrogating how this might articulate, substantiate or defy belief. Chapters i and 2 consider the literary documentation of objects miraculously coming to life, informed by the theology of incarnation and resurrection in Early Christianity, Byzantium and the Middle Ages. This includes examinations of icons, relics, incorrupt cadavers, and articulated crucifixes. Their use in ritual gradually leads on to the birth of a Christian theatre, its use of inanimate figures intermingling with live actors, and the practice of tableaux vivants, live human figures emulating the stillness of a statue. The remaining chapters focus on cultural phenomena that internalise the inanimate object’s immobility or strange movement quality. Chapter 3 studies secular tableaux vivants from the late eighteenth century onwards. Chapter 4 explores puppets-automata, with particular emphasis on Kempelen's Chess-player and the physical relation between object-manipulator and manipulated-object. The main emphasis is a choreographic one, on the ways in which live movement can translate into inanimate hardness, and how this form of movement can then be appropriated. -

New Gleanings from a Jewish Farm
http://nyti.ms/1nslqSQ HOME & GARDEN New Gleanings from a Jewish Farm JULY 23, 2014 In the Garden By MICHAEL TORTORELLO FALLS VILLAGE, Conn. — Come seek enlightenment in the chicken yard, young Jewish farmer! Come at daybreak — 6 o’clock sharp — to tramp through the dew and pray and sing in the misty fields. Let the fellowship program called Adamah feed your soul while you feed the soil. (In Hebrew, “Adamah†means soil, or earth.) Come be the vanguard of Jewish regeneration and ecological righteousness! Also, wear muck boots. There’s a lot of dew and chicken guano beneath the firmament. What is that you say? You’re praying for a few more hours of sleep in your cramped group house, down the road from the Isabella Freedman Jewish Retreat Center? After a month at Adamah, you’re exhausted from chasing stray goats and pounding 350 pounds of lacto-fermented curry kraut? Let’s try this again, then: Come seek enlightenment in the chicken yard, young Jewish farmer, because attendance is mandatory. “They definitely throw you all in,†said Tyler Dratch, a 22-year-old student at the Jewish Theological Seminary’s List College, in Manhattan. “It’s not like you do meditation, and if you like it, you can do it every day. You’re going to meditate every day, whether you like it or not.†As it happens, Mr. Dratch and the dozen other Adamahniks tramping through the dew on a recent weekday morning were also bushwhacking a trail in modern Jewish life. -

Bowls of sweet or salty soy milk are classic Taiwanese breakfast fodder, accompanied by a feast of spongy, focaccia-like shao bing sesame sandwiches ; crispy dan bing egg crepes ; and long, golden- fried you tiao crullers. Your email address will not be published. Home 1 Books 2. The switch from real animals to noodles was made over a decade ago, we were told, to cut costs and reduce waste. For example, the San Bei Ji was so salty it was borderline inedible, while the Niu Rou Mian was far heavier on the soy sauce than any version I've had in Taiwan. Hardcover , pages. Little has changed over the years in terms of the nature of the ceremony and the kind of attire worn by the participants, but there have been some surprising innovations in terms of what foods are offered and how they are handled. Aside from one-off street stalls and full-blown restaurants, there are a few other unexpected spots for a great meal. I have to roll my eyes when she says that Taiwan is "diverse" even though it has a higher percentage of Han Chinese than mainland China does and is one of the most ethnically homogeneous states in the world. -
On Pellegrino Artusi, Italy's Victorian Chef
Pellegrino Artusi La scienza in cucina e l’arte di mangiar bene, ed. Piero Camporesi (Einaudi, Turin, 1970, 1995), 776pp., L.25.000 Science in the Kitchen and the Art of Eating Well, trans. Murtha Baca and Stephen Sartarelli (Marsilio, New York, 1997), 631pp., $19.95 To make a “pizza alla napoletana” with Pellegrino Artusi, you will need neither tomato nor oregano, neither olive oil nor even salt. Ricotta cheese, almonds, sugar, flour, egg, lemon rind or vanilla and milk will do the trick and, correctly blended and filled into a shortcrust pastry, the mixture will make a “delicious-tasting dessert”. In Artusi’s day - about a hundred years ago - tomatoes and their use as a sauce, especially for pasta, were just becoming widespread in central and northern Italian kitchens; and that was partly because he helped to promote them.1 The foods that we recognize today as staples of Italian cooking are not as securely or atemporally rooted in the overall history and geography of the Italian peninsula as one might expect. And contemporary Anglo-Saxon obsessions with certain Italianate ingredients (such as the sun-dried tomato) perhaps reflect the whimsical nature of culinary habits and the dependence of connotations of ‘authenticity’ on fashions, rather than on any attachment to the historically informed knowledge or experience of real traditions. Precisely such an attachment lies at the core of the huge enterprise that Pellegrino Artusi, great amateur cook, retired banker and sometime literary critic, set out to achieve with his La Scienza in cucina e l’Arte di mangiar bene. -
