    PELLEGRINO ARTUSI (1820- 1911) This month’s subject was suggested by a recent television series on CNN entitled “Stanley Tucci: Searching for Italy.” Each episode follows Tucci in his travels across Italy to discover the secrets and delights of the country’s regional cuisines. In addition to beautiful pictures of Italian scenery, the programs present interviews with numerous chefs and food producers. It is a fascinating look at the variety of cuisines and ingredients that serve as the culinary staples of the various regions of Italy. One such program that focused on Bologna, Rimini, and other towns and cities in the Emilia-Romagna region talked about the importance of a single individual from that region who developed and published a cookbook that played an important role in expanding the popularity of Italian regional dishes throughout Italy and the world. At the same time, he furthered the use of the Italian language, thereby helping to produce a common language in Italy, a country of numerous dialects. Pellegrino Marcello Artusi, known as the “Father of Italian Cuisine,” came from a large family; he was the only boy of the 13 children born to Agostino (nicknamed Buratèl, or “little eel”) and Teresa Giunchi Artusi. He was born on August 4, 1820 in Forlimpopoli in the Emilia-Romagna region in the province of Forlì- Cesena. (At the time of his birth, the area was part of the Papal States). Not much is known of his early life; it was a fairly typical upbringing for a boy in the early 19th century from a prosperous family in this part of Italy.

Murtha Baca and Stephen Sartarelli (Marsilio, New York, 1997), 631pp., $19.95 To make a “pizza alla napoletana” with Pellegrino Artusi, you will need neither tomato nor oregano, neither olive oil nor even salt. Ricotta cheese, almonds, sugar, flour, egg, lemon rind or vanilla and milk will do the trick and, correctly blended and filled into a shortcrust pastry, the mixture will make a “delicious-tasting dessert”. In Artusi’s day - about a hundred years ago - tomatoes and their use as a sauce, especially for pasta, were just becoming widespread in central and northern Italian kitchens; and that was partly because he helped to promote them.1 The foods that we recognize today as staples of Italian cooking are not as securely or atemporally rooted in the overall history and geography of the Italian peninsula as one might expect. And contemporary Anglo-Saxon obsessions with certain Italianate ingredients (such as the sun-dried tomato) perhaps reflect the whimsical nature of culinary habits and the dependence of connotations of ‘authenticity’ on fashions, rather than on any attachment to the historically informed knowledge or experience of real traditions. Precisely such an attachment lies at the core of the huge enterprise that Pellegrino Artusi, great amateur cook, retired banker and sometime literary critic, set out to achieve with his La Scienza in cucina e l’Arte di mangiar bene.

Initiating with an establishing European taste paradigm (e.g. Feuerbach, Fourier, Brillat-Savarin), my research demonstrates that there is an increasing number of works composed within the developing “Italian” context, which reflects and participates in the construction and the consumption of a national identity (e.g., Rajberti, Mantegazza, Guerrini, Artusi). Conversely, this budding taste genre finds itself in sharp contrast to the economic paucity and social divisiveness endured by a large sector of the populace and depicted by the literature of the day (e.g., Collodi, Verga, Serao). It is precisely this lack of confluence between that which is scientific and literary that marks this process of taste ennoblement and indoctrination, defining more than ever the nuances that encompass il gusto italiano.
