We had almost 30 entries including one “Let’s Make Music” in the bonus category submitted by Barbara James. There are so many talented people in this group that our fantastic judges, Julie Bechtel and Linda Garret, put much time and effort into their judging. Thank you again for your great job. Held at: Trinity Lutheran Church in Loyal Laurie Carlson—2016 Cultural Arts Chairman May 2016 Clark County HCE Newsletter Roasted Brussels Sprouts with Cranberries & Almond Roasting Brussels sprouts gives them a gentle sweetness that works so well with tart cranberries -Claudia Lamascolo MELBOURNE, FL Prep: 10 min Bake: 30 min Makes: 8 servings 2 lbs. fresh Brussels sprouts, trimmed and halved 1/4 cup olive oil 3/4 tsp. salt 1/4 tsp. garlic powder 1/4 tsp. pepper 1 cup balsamic vinegar 1/2 cup sugar 1 cup dried cranberries 1/2 cup sliced almonds, toasted 1. Preheat oven to 400°. Place Brussels sprouts in a large bowl; toss with oil, salt, garlic powder and pepper. Transfer to a greased 15x10x1-in. baking pan. Roast 30-35 minutes or until tender, stirring occasionally. Transfer to a large bowl. 2. Meanwhile, in a small saucepan, combine vinegar and sugar; bring to a boil, stirring to dissolve sugar. Reduce heat; simmer, uncovered, 15-20 minutes or until syrupy, stirring occasionally. 3. To serve, place hot Brussels spouts in a serving dish; drizzle with glaze and toss to coat. Sprinkle with cranberries and almonds. To Toast Nuts: Spread them in a 15x10x1-in. baking pan. Bake at 350° for 5-10 minutes or until lightly browned, stirring occasionally. Or spread in a dry nonstick skillet and heat over low heat until lightly browned, stirring occasionally. Per Serving 284 cal., 10g fat (1g sat. fat) 0chol., 260 mg sodium, 48g carb., 7g fiber, 6g pro. ************************************************************************************************************************* Blueberry French Toast Prep: 15 min Bake: 1 hr 15 min Makes: 8 servings 1 loaf of bread; cut into 1-inch cubes 2 (8oz) pkgs of cream cheese; cut into 1-inch cubes 2 cup frozen or fresh blueberries 1 dozen eggs; beaten 2 cups of milk 1 teaspoon of vanilla extract 1/3 cups honey or maple syrup 1 cup sugar 2 tablespoons cornstarch 1 cup water 1 tablespoon butter 1. Spray a 9 x 13” pan. Cut the crusts off of 12 pieces of day old bread. Cut into cubes. Spread 1/2 of these cubes into the bottom of a pan. Cut 1 1/2 pkgs (8oz) of cream cheese into cubes. Lay on top of bread. Pour over 1 cup of frozen or fresh blueberries. Put on rest of bread cubes. 2. In a bowl beat 12 eggs, 2 cups of milk, 3 cups honey or maple syrup and pour over the bread. Cover with foil. Chill 8 hours or overnight. 3. Take out 1/2 hour before baking. Preheat the oven to 350° 4. Cover 30 minutes. Uncovered and continue baking another 30 minutes or until brown. 5. In a pan, put 1 cup sugar, 2 tablespoons cornstarch; 1 cup water and bring to a boil. Boil 3 minutes. Stir in 1 cup frozen blueberries. Reduce heat, simmer 8-10 minutes or until thick. Stir in 1 tablespoon butter. 6. Serve both warm. May 2016 Clark County HCE Newsletter Cranberry Fluff 1 lb. cranberries (chopped in blender) 2 cups sugar 2 4 ounce pkg of instant vanilla pudding 1 20 ounce can crushed pineapple 1 lb. mini marshmallows 1 Apple (chopped) 1 8 oz. cool whip 1. Mix cranberries and 2 cups of sugar and put in fridge overnight. 2. Stir in 1- 4 oz. pkg of instant vanilla pudding. Let stand 2 minutes while waiting, mix up the below; 3. Mix 1-20 oz. can of crushed pineapple with 1-4 pkg of vanilla instant pudding. Let stand for 2 minutes or until it thickens a bit 4. Add the cranberry mixture 5. Add 1 lb. of mini marshmallows, 1 apple chopped, and 1- 8 oz. container of cool whip 6. May 2016 Clark County HCE Newsletter HCE DAIRY BAR VOLUNTEERS NEEDED (OLDER YOUTH & PARENT) AT CLARK COUNTY FAIR. August 11th — August 14th Our HCE Dairy Bar at the Clark County Fair could use some extra help again this year! HCE stands for Home and Community Education, which many of you might know better as Extension Homemakers. Maybe you have a Mom, Grandmother, or Aunt who belong or previously belonged to this organization. Our main goal of earning money at the Dairy Bar is to award THREE $500.00 scholarships to 3 Clark County residents who are attending a college or technical school. After one year of education beyond high school, all Clark County residents are invited to apply. The applications can be obtained at the Exten- sion Office. Pick one up today if you qualify! The Dairy Bar is open during the Clark County Fair, Thursday August 11th through Sunday August 14th. It takes many people to help with all the customers throughout the four days. If you have a friend that you'd like to bring along to work on your shift, even if not a 4-H member, they are more than welcome to sign up also.
