    Salad-e-Shirazi From A to Z (Shirazi Salad) What is it? A cool, crunchy chopped salad that goes perfectly with the soothing stews and luxurious rice dishes of Persian cuisine. Persians like this quite sour. The Trick? Cut all your ingredients into similarly small pieces so that when you eat a forkful, you get a taste of everything at once. Ingredients: • 3 or 4 small Persian cucumbers • 2 medium-sized tomatoes • ¼ or ½ of a medium-sized onion • ½ tbsp Salt • ¼ tbsp pepper • Dried mint, basil or dill • Olive oil • Lime/lemon juice Instructions: 1. Peel the cucumbers or if they have soft skin, you won’t need to peel. Finely dice the cucumber into 5mm cubes. Dice the tomatoes to match. Also the onion. 2. Use ripe tomatoes if you can, but avoid extra ripe ones. 3. Traditionally, dried, crushed mint is what’s used. Also, a variety of fresh herbs would do (about 2 table spoon). You can use just one of the three herbs or any combination of dried mint, dill and basil that’s available to you. Dressing (use one or mix all): Aside from 3 tbsp of extra-virgin olive oil a good pinch of salt and pepper, you can combine fresh lemon juice, sour grape juice (ab-e-ghooreh) and apple cider vinegar, or just use one of them. In Mexico, more than 250 species with edible stems, leaves, vines and flowers, known as “quelites,” are collected or are cultivated and consumed. The assessment of the quelite composition depends on the chemical characteristics of the compounds being evaluated; the protein quality is a direct function of the amino acid content, which is evaluated by high-performance liquid chromatography (HPLC), and the contribution of minerals is evaluated by atomic absorption spectrometry, inductively coupled plasma-optical emission spectrometry (ICP-OES) or ICP mass spectrometry. The total contents of phenols, flavonoids, carotenoids, saponins and other general compounds have been analyzed using UV-vis spectrophotometry and by HPLC.

    Karela Sabzi (AKA Kerala Fry) Spiced Bitter Gourd 'Dhaba Style' Yield: Serves 2-4 Ingredients: 1 lbs Fresh Bitter Gourd (Karela) 2 large Red Onions (Pyaz) - halved and sliced 3 medium Tomatoes (Tamatar) - diced 4 cloves Fresh Garlic (Leh-sun) - grated into a paste 1 ½ inch piece Fresh Ginger (Adrak) - grated into a paste 4 Tbs Kosher Salt (Namak) + to taste 2 tsp Turmeric Powder (Haldi) - divided 1 tsp Fennel Seed (Saunf) 1 tsp Red Chile Powder (Lal Mirchi) 1 tsp Garam Masala 1 tsp Jaggery (Gur) - grated fine; can substitute granulated sugar (Chini) ½ tsp Mango Powder (Amchoor) 4 Tbs Oil - can use grape seed, canola, avocado, or olive oil Preparation: 1) Thoroughly wash the bitter gourd and thinly slice -Transfer slices to a medium mixing bowl - Add 4 Tbs salt and 1 tsp turmeric powder - Thoroughly combine, cover, and set aside for 15 minutes 2) After 15 minutes, using your hands (you may want to wear gloves for this), squeeze the bitter gourd to remove a much liquid as possible and transfer 'squeezed slices' to a fine sieve (discard left over liquid) - Thoroughly rinse the slices with clean water to remove excess salt - Transfer to absorbent paper and allow to dry for 5-10 minutes 3) Return gourd slices to a mixing bowl and dust bitter gourd with jaggery or sugar -Thoroughly combine and set aside 4) Heat oil in a large heavy bottomed pan, wok, or large kadahi over high heat until shimmering - As soon as the oil is hot, reduce heat to medium and add the fennel seed - Allow to cook for 30 seconds - Add bitter gourd (leaving any liquid
