With Style Guideline Committee assistance and review by Paul Gatza, Chris Swersey and suggestions from Great American Beer Festival and World Beer Cup judges. Since 1979 the Brewers Association has provided beer style descriptions as a reference for brewers and beer competition organizers. Much of the early work was based on the assistance and contributions of beer journalist Michael Jackson. The task of creating a realistic set of guidelines is always complex. The beer style guidelines developed by the Brewers Association use sources from the commercial brewing industry, beer analyses, and consultations with beer industry experts and knowledgeable beer enthusiasts as resources for information. The Brewers Association' beer style guidelines reflect, as much as possible, historical significance, authenticity or a high profile in the current commercial beer market. Often, the historical significance is not clear, or a new beer in a current market may be only a passing fad, and thus, quickly forgotten. For these reasons, the addition of a style or the modification of an existing one is not undertaken lightly and is the product of research, consultation and consideration of market actualities, and may take place over a period of time. Another factor considered is that current commercial examples do not always fit well into the historical record, and instead represent a modern version of the style. Our decision to include a particular historical beer style takes into consideration the style's brewing traditions and the need to preserve those traditions in today's market.

    Barley Wine Source: Nick Thomas Ingredients: 12 pounds, Extra Light Dry Malt Extract 1 pound, Light Malt Extract 1 bottle, clear Belgian Candi Syrup ½ pound, Honey 234 SE 12th AVE, Portland, OR 2 ounces, Chinook Hops (Bittering) (503) 232-8793 2 Ounces, Cascade Hops (Bittering) www.FHSteinbart.com 2 Ounces, Fuggles Hops ¼ tsp., Irish Moss or 1 Whirlfloc Tablet Wyeast 1728, Scottish Ale Yeast (a large starter is required), and 1 package Champagne Yeast or 1 vial of White labs #099 (a starter is also required) Procedure: Heat 2-5 gallons of water to 170F Add malt extract, candi syrup, and honey, stirring until fully dissolved. Bring mixture to a boil then add Bittering hops (Chinook and Cascade, 60 min.) At 30 minutes add aroma hops (Fuggle) and Whirlfloc tablet or Irish Moss. Boil for remaining 30 minutes Turn off heat and cool mixture by placing kettle an ice bath or using a wort chiller Add mixture to fermenter, removing hops, and bring total volume to 5 gallons with non-distilled bottled water or filtered water Aerate unfermented wort (Shaking works well, oxygen is recommended) Pitch yeast (Wyeast 1728) and ferment at 68F to 70F After primary fermentation, rack to secondary and pitch second yeast (champagne or White labs #099) Ferment until a final gravity of 1.030 is reached. Special Note: This beer may not fully ferment if a yeast starter is not made or if proper fermentation temperatures are not maintained. Fermentation and conditioning times will be much longer than that of a standard beer. This beer should be aged in bottles or kegs for at least 2 months before drinking, but will not fully mature for 6 to 12 months.

Pilsner is said to have been the first golden, clear lager beer, and is well known for its very soft brewing water, which contributes to its smooth taste. Nowadays, for example, over half of the beer drunk in Germany is pilsner. PILSNER DESCRIPTION Pilsner was originally famous for its fine hop aroma and strong bitterness. Its golden color and moderate alcohol content, and its slightly lower final attenuation, give it a smooth malty taste. Nowadays, the range of pilsner beers has extended in such a way that the less hopped and lighter versions are now considered ordinary lagers.
