Techniques Classes TECHNIQUES CLASSES These hands-on classes are ideal for both novice cooking students and those experienced students seeking to refresh, enhance, and update their abilities. The recipe packages feature both exciting, up-to-the minute ideas and tried-and-true classic dishes arranged in a sequence of lessons that allows for fast mastery of critical cooking skills. Students seeking increased kitchen confidence will acquire fundamental kitchen skills, execute important cooking techniques, learn about common and uncommon ingredients, and create complex multi-component specialty dishes. All courses are taught in our state-of-the-art ICASI facility by professional chefs with extensive restaurant experience. Prerequisites: Because of the continuity of skills, it is strongly recommended that Basic Techniques series will be taken in order. Attendance at the first class of a series is mandatory. Please wear your mask the entire time you are cooking, until it is time to eat. -Upon entering the building please hang your coats on the racks provided and do not bring them into the classrooms. Please also keep purses either on the floor or in your vehicle. -After locating your classroom please go directly to the sink to wash your hands. If there is someone else using the sink, please stand at least 6 feet back behind them. -Once you have clean hands find your seat. Each guest will be assigned a seat in order to ensure proper social distancing throughout class time. -We will not be taking your temperature but ask that you do not attend if you are feeling under the weather. -Each place setting should include most if not all of the necessary equipment for your event, if an item is missing please ask your chef to get you the item needed. -The ingredients for each recipe will be provided to each individual or group in attendance so the only person touching your food should be you, your person you came with, or your chef. -Some recipes will be demonstrated by your chef even in a hands-on event for safety and practicality purposes. For example, if there is a recipe for a whole chicken, that would be prepared by the chef directly. -Please practice good sanitation; wash hands and use gloves frequently throughout the event and keep your distance from other guests as much as possible.     Thinking Outside the Box ^ A collection of unexpected vegetarian recipes for Passover 2021 UPDATE Introduction I became a vegetarian gradually. When I was in law school, I learned to cook vegetarian and enjoyed what I was making. It was mostly beans, grains and pasta, so not suitable for Passover. During Passover, I ate mostly meat. But the rest of the year, I was increasingly eating vegetarian. By 2009, I was eating meat so rarely that I was no longer able to digest it properly. When I ate meat, I would get indigestion and stomach cramps. I didn't mind it when the meal was special or particularly good, but I couldn't eat like that day-after-day. And then came Passover, when I didn't know any appropriate recipes that weren't meat for eight straight days. By the end of Passover that year, I was feeling very sick and realized that I needed to come up with vegetarian options for Passover. I spent the next year coming up with ideas and experimenting with them. Thus was born A Very Veggie Pesach, a series of vegetarian recipes for Passover posted on my rarely-used blog. The first year, I posted eight recipes: enough for each night of Passover. Some of them were vegan and many were gluten-free for my relatives and friends with celiac disease. I have added a few recipes every year and now have over 20 recipes in this book. These recipes are designed to satisfy a fairly strict Orthodox standard for Passover, relying on Passover guides from the Orthodox Union (OU), Star-K and the Chicago Rabbinical Council (CRC).

Cream almond paste and sugar with a paddle until smooth. 2. Add the raw almonds, eggs, and liquor, mixing until just blended. 3. Add the cake crumbs, adjusting by eye to consistency. Almond Dough Grouping: Pastries, amenities, Yield: 0.5 sheet pan Serving: OR 9 pounds 6 ounces Ingredient 1 pound 8 ounce Sugar 2 pound 4 ounce Butter 12 ounce Egg 3 pound 12 ounce Pastry flour Sifted 1 pound 2 ounce Almond flour Sifted Preparation 1. Cream together butter and sugar. Slowly incorporate eggs. 2. Add flours all at once and mix only until incorporated. Soften almond paste with a little egg white. Add sugar and glucose then incorporate the rest of the whites. Pipe round shapes, moisten, and dust with powdered sugar before baking. For Amaretti, allow to dry overnight, THEN dust with powdered sugar and press into star before 2. For walnut macaroons, replace 1 1/2 lbs. Almond paste with very finely ground walnuts, and increase glucose to 3 oz. Let stand overnight before piping oval shapes. Top with half a walnut.

The process of taking raw food ingredients and turning them into a meal that nourishes our body and, often, our soul. An activity that is enjoyed around the world. A cultural common denominator that can both Cdefine us uniquely and bring us together when we break bread. Many of our favorite memories are centered around food. These might be regional delicacies unique to where we grew up, family recipes passed down for generations, traditional holiday meals, or even simple snacks that remind of us of our childhood. When we share these recipes with others, we share a part of our identity. At Idaho National Laboratory, we celebrate this spirit of multicultural togetherness. This book of recipes – gathered from INL employees – carries on this spirit. It celebrates the diversity of people and foods from throughout the world that have made their way to our laboratory. Inside you will find recipes from many countries and cultures, including some that were (until now) closely guarded family secrets. This book assembles are a variety of food types from a wide array of cultures. They represent our unique experiences being shared with one another. We encourage each of you to sample the recipes contained within.
