In Central America the bean/rice team is sometimes called matrimonio (“the marriage”). And beans and rice are interchangeable with peas and rice in the English-speaking Caribbean because of frequent use of pigeon peas and other field peas there. Always referred to as “rice and peas” (in that order) in Jamaica, the combination makes up the country’s unofficial national dish called “The Coat of Arms.” In dishes throughout the Caribbean and South America, beans and rice are often served separately on the plate. In Africa and in some regional dishes, the beans and rice are usually cooked together in the same pot. Try it both ways to add variety to your meals. RICE Rice is an essential element of almost every African and Latin American meal. It’s usually used as an accompaniment to the other, more flavorful elements and is often served by itself or with beans. Spanish settlers and Africans brought over by the slave trade helped disseminate and popularize rice.     Comprehensive Elimination Diet The Comprehensive Elimination Diet is a dietary program designed to clear the body of foods and chemicals you may be allergic or sensitive to, and, at the same time, improve your body’s ability to handle and dispose of these substances. We have called this an “Elimination Diet” because we will be asking you to remove certain foods, and food categories, from your diet. The main rationale behind the diet is that these modifications allow your body’s detoxification machinery, which may be overburdened or compromised, to recover and begin to function efficiently again. The dietary changes help the body eliminate or “clear” various toxins that may have accumulated due to environmental exposure, foods, beverages, drugs, alcohol, or cigarette smoking. In our experience, we have found this process to be generally well tolerated and extremely beneficial. We obviously hope that you will find it useful too. There is really no “typical” or “normal” response. A person’s initial response to any new diet is highly variable, and this diet is no exception. This can be attributed to physiological, mental, and biochemical differences among individuals; the degree of exposure to, and type of “toxin;” and other lifestyle factors. Most often, individuals on the elimination diet report increased energy, mental alertness, decrease in muscle or joint pain, and a general sense of improved well-being. However, some people report some initial reactions to the diet, especially in the first week, as their bodies adjust to a different dietary program. Symptoms you may experience in the first week or so can include changes in sleep patterns, lightheadedness, headaches, joint or muscle stiffness and changes in gastrointestinal function.

    Mixed Vegetables Layered Rice Ingredients 2 cups rice basmati 2 cups mixed vegetables sliced flat and broad as per vegetables (potato, onion, zucchini, ridge gourd, bottle gourd, french beans, carrots, cauliflower or capsicum as per choice) 1 tomato chopped 2 tbsp ghee 1/2 tsp dalchini (cinnamon) - lavang (clove) powder 1/2 tsp garam masala 1/2 tsp turmeric powder 1/2 tsp dhania powder salt to taste lemon juice to taste 1/2 tsp ginger-garlic grated or paste 2 tbsp curds 1 tsp mixed cummin & mustard seeds Method Boil rice till grains separate. Cool in a big plate. Heat ghee in a heavy saucepan. Add cummin/mustard seeds, ginger-garlic paste and cinnamon/clove powder. Fry for a minute. Add all other masalas, and tomato, fry for another minute. Add all vegetables and curds, cover and cook till vegetable are tender. In a transparent casserole spread half the rice. Wet hand and press down lightly. Now transfer the vegetables onto the rice and spread evenly. Save 1 tbsp for top- ping. Add the remaining rice and press down as before. Spread the tbsp. leftover masala in the centre of the rice. Cover with foil. Bake for 15 minutes before serving. Garnish with coriander and french fries (optional) Spinach Cheese Rice Ingredients 1 bunch spinach leaves washed, drained 1/2 cup grated cheese 1 1/2 cups basmati rice 5 green chillies 1" piece ginger 1 tbsp butter 1 onion slice into thin long strips salt to taste 1/2 tsp dalchini (cinnamon)- clove powder 1 cup cabbage thinly chopped juice of 1 lemon 1/4 cup milk Method Keep plenty of water to boil.
