    FOOD PRODUCTION MANAGEMENT II OBJECTIVES At the end of this lesson, students should be able to demonstrate appropriate skills, and show an understanding of the following: Meat Cooker Mutton and Lamb Beef and Veal Parks, Bacon, Ham and Gammon Game Poultry and Chicken INTRODUCTION In basic food preparation, meat is generally considered to be the flesh of any animal and includes beef, veal, lamb, and pork along with poultry, fish, and shellfish. Poultry and fish, however, often differ from the red meats in preparation and tests for doneness (rare, medium and well done). The word meat comes from the Old English word mete, which referred to food in general. The narrower sense that refers to meat, which does not include sea food, developed over the past few hundred years and has religious influences. Meat, especially beef, is prepared in many ways, as steaks in stews, fondue, or as dried meat. It may be ground then formed into patties (as hamburgers or croquettes), loaves, or sausages, or used in loose form (as in "sloppy Joe" or Bolognese sauce). Some meat is cured by smoking, pickling, preserving in salt or brine (see salted meat and curing). Other kinds of meat are marinated and barbecued, or simply boiled, roasted, or fried. Meat is generally eaten cooked, but there are many traditional recipes that call for raw beef, veal or fish. Meat is often spiced or seasoned, as in most sausages. Meat dishes are usually described by their source (animal and part of carcass) and method of preparation. Meat is a typical base for making sandwiches.

One of my happiest early-reading memories is of the Little Golden Books. On this day, October 1st in 1942, the 12 original Little Golden Books were published as colorful, sturdy, and affordable books for children—just 25₵ each and bound in a shiny, now iconic, golden spine. I was the proud owner of many of these children’s classics, which I read and reread when I was young, and then introduced to my own child, and my grandson as well. My absolute favorite title remains Two Little Miners. This one features people, rather than animals, with the fascinating life they lead working the underground coal mines. I admired that they were workers with a purpose, and that they had interesting tools with which to perform their important role in life. I was impressed by how the two characters took baths in wooden tubs to wash off the soot at the end of their workday, and then changed into clean clothes for a sit-down dinner at a fancy-laid table.

  • THE MEATS Corned Beef
    The sandwich as we know it was popularized in England in 1762 by John Montagu, the 4th Earl of Sandwich. Legend has it, and most food historians agree, that Montagu had a substantial gambling problem that led him to spend hours on end at the card table. During a particularly long binge, he asked the house cook to bring him something he could eat without getting up from his seat, and the sandwich was born. Montagu enjoyed his meat and bread so much that he ate it constantly, and as the concoction grew popular in London society circles it also took on the Earl’s name. Montagu’s creation took off immediately. Just a few months later, a man named Edward Gibbon mentioned the sandwich by name in a diary entry, writing that he’d seen “twenty or thirty of the first men of the kingdom” in a restaurant eating them. By the Revolutionary War, the sandwich was well established in England. You would expect American colonists to have taken to the sandwich as well, but there’s no early written record of them in the new country at all, until a sandwich recipe finally appeared in an American cookbook in 1815. Of course, most Americans today wouldn’t dream of a eating a tongue sandwich. But that’s ok, since we’ve come up with some pretty excellent sandwich ideas since then. That iconic New Orleans sandwich, the Po’ Boy, came about in the Great Depression during a streetcar worker strike. Two brothers, once streetcar operators themselves, owned a sandwich shop nearby, and promised to feed any down-on-his-luck striking worker for free.
