Karim1* , Farah Adibah Che Ishak1, Mohd Mursyid Arsyad2, Supatra Karnjamapratum3 and Jiraporn Sirison3 Abstract The Malaysia’s cultural heritage is authentic, unique and colourful with various local cuisines of different races and cultures. It is mainly originated from the Malay culture being the largest ethnic group in the country. The Malays themselves have contributed to many local cuisines ranging from appetiser, soup, main course and dessert. However, some Malay heritage foods have almost been forgotten and jeopardized in quality. This is especially happening to the Malay sweets or desserts which have gradually become less appealing to the younger generations. They are not even familiar with Malay foods, let alone consuming them. Among the popular Malay heritage foods in Malaysia are lemang, ketupat, rendang, wajik and dodol. Dodol specifically has been listed as one of the endangered heritage foods in Malaysia. Preserving the Malay cuisines is part of sustaining the Malay culture and this should begin with a great amount of knowledge and understanding about any elements within the culture itself. This article highlights a nostalgic and evergreen Malay’s traditional sweet, known by the locals as dodol by discussing its history, different types and names of dodol, as well as the recipes, preparation, cooking methods and packaging. -

Today Is: National Cold Cuts Day Dagwood, eat your heart out. March 3rd is National Cold Cuts Day. Call them lunch meats, deli meats, sandwich meats or cold cuts. Some like them thick, while others stack them mile high. Others still just like them with cheese and crackers. However you like them, National Cold Cuts Day was made for sandwich and snack makers. Dagwood sandwich A Dagwood is a tall, multi-layered sandwich made with a variety of meats, cheeses, and condiments. It was named after Dagwood Bumstead, a central character in the comic strip Blondie, who is frequently illustrated making enormous sandwiches. Wikipedia There are the deli staples like the humble turkey and ham. Then there are the culinary delights like salami and prosciutto and flavors that require a more acquired taste like head cheese and braunschweiger. Whatever your taste, there is a cold cut for everyone. Well, everyone except the vegetarian. Every nationality has a flavor all their own when it comes to seasoning, curing and aging a variety of meats. The flavor is altered by spices, smoking and time. When the animal is butchered as well as temperature and air circulation affect the flavor, too. It’s practically an art history lesson all rolled into one and at the end of it all there’s mouth watering food that can be enjoyed with friends and a good beverage. Or, it’s simply a piece of meat meant to make a meal. Breaking bread with friends sounds so much more delightful, though. One of the most well known cold cuts in the United States due to a famous commercial is bologna. -

Advances in Seafood Byproducts 43 Alaska Sea Grant College Program • AK-SG-03-01, 2003 Utilization of Fish Byproducts in Iceland Sigurjon Arason Icelandic Fisheries Laboratories, and University of Iceland, Department of Food Science, Reykjavik, Iceland Abstract Fisheries are the single most important industry in Iceland, and will con- tinue to play an important role in the economy of Iceland for a long time to come. In 2001 the total catch was around 2 million tons, accounting for 62% of the country’s merchandise exports. The living marine resources are, however, limited and it is important to utilize these resources in a sustainable way. It is also important to maximize their value by produc- ing high-priced products from the raw material, which is currently be- ing used for fish meal or simply discarded. For example, today all cod heads from land-based processing plants are being utilized and lately the freezing trawlers have begun freezing them onboard for processing on shore. Fortunately, most of the byproducts are no longer regarded as waste but are used as raw material for fish processing like roe, liver, mince, viscera, etc. The byproducts from salting, freezing, and canning fresh fish and other processes have different qualities and potentials. Therefore, quality management is important and new technologies are emerging that will allow a new range of products to be made from byproducts which will, for example, benefit the pharmaceutical, cosmetics, and food industries worldwide.
