Glutathione and Its Application in Winemaking
GLUTATHIONE AND ITS APPLICATION IN WINEMAKING What is glutathione? Glutathione (L-g-glutamyl-L-cysteinyl-glycine) is a tripeptide which contains three constitu- tive amino acids: glutamate, cysteine and glycine. In must, wine or even yeast, glutathione can be found under its reduced (GSH) or oxidized form (GSSG), the later being two molecules of glutathione linked by a sulfide bridge. It is present in plants and foods, and fruits like grapes. It is also the most abundant nonproteic sulphur compound found in most living organisms including the wine yeast Saccharomyces cerevisiae. Figure 1: Molecular structures of glutathione (GSH) and glutathione disulfide (GSSG) Why is it important Glutathione (GSH) is important in wine because it has the ability to scavenge ortho-quinones, in wine? main protagonists of color browning and aroma loss due to oxidation mechanisms. Because it has a very low oxydoreduction potential (E’o=-250 mV at pH 7.0 ; E’o=-40 mV at pH 3.0), it can act as a strong buffer in many cellular oxydoreduction reactions. It has been known for years that it is a more potent anti-oxidant than ascorbic acid (E’o=+60 mV at pH 7.0 ; E’o=+267 mV at pH 3.0). It then plays a critical role in preventing the oxidation of must phenols as it can react via its –SH group with caftaric acid – one of the most susceptible phenols to oxidation in musts and generate Grape Reaction Product (GRP) which is a stable and colorless compound (Moutounet et al, 2001). Notably, this mechanism has been shown for GSH and not for the other compounds present in must or in yeast, and possessing SH-group (such as cystein or glutamyl-cystein for instance). -

Morgado Do Quintao Palhete Rose
Morgado do Quintão Palhete Rosé Morgado do Quintão, owned by Filipe Vasconcellos, is an historic estate with thousand-year-old trees in DOC Lagoa located in Algarve, the southernmost region of Portugal. The property encompasses 60 hectares of vineyards which have been in his mother’s family for generations. Recognizing the potential of these old vines, Filipe recruited winemaker Joana Maçanita for her viticulture insight and the minimal interventionalist approach to winemaking that matches the Vasconcellos family’s philosophy. Joana Maçanita, born in Lisbon with family from Algarve, Azores and Alentejo, brings not only engineering and agronomy degrees but also an extensive knowledge of Portugal’s terroir and a commitment to the same mission as Filipe: to show the potential of indigenous grape varieties Crato Branco and Tinto Negra Mole. WHAT MAKES THIS WINE UNIQUE?: Morgado do Quintão Palhete Rosé was originally reserved for family and friends of the winery, but now we can all experience a rare example of a co-ferment of the 2 oldest native grape varieties in Portugal: Tinta Negra Mole and Crato (also known as Roupeiro or Codega). This limited production rose is a true unadulterated expression of the potential complexity of Crato and Negra Mole, touched by over 3000+ sunlight hours and expert winemaking. GRAPE: 70% Crato Branco and 30% Tinta Negra Mole. Age of vines ranges up to 80 yrs old. Organically farmed. (Non-certified) PAIRING SUGGESTIONS: Pairs well with seafood like bacalhau a bras (codfish & egg scramble), sardinhas asadas (grilled sardines), ponzu seared salmon with baby bok choy, miso-marinated seabass, and pork dishes such as jamón and Manchego croquettes or pulled pork.
