    Domaine Laroche, Chablis `St Martin` 2015 PRODUCER Domaine Laroche epitomises Chablis, with impeccable quality and a remarkable 100 hectares of vineyards, including 30 hectares of Premier and six hectares of Grand Crus. Founded in 1850, there is still a dynamism which permeates everything they do. Michel Laroche merged with another family-owned producer, Jeanjean, in 2009 and he remains involved in the business, along with his wife Gwénaël. As part of their aim to retain purity and minerality in the finished wine, Laroche was the first Burgundian producer to move to screwcaps in 2002. VINEYARDS Saint Martin refers to the patron saint of Chablis, whose relics were kept in the domaine's ancient monastery for many years. Domaine Laroche owns 63 hectares of Chablis vineyard on the famous Kimmeridgian soil that gives the wines such precision. Each plot, of which there are 30 in total, has a different exposure, soil depth and vine age which contributes complexity to the wine and means that every parcel ripens at a different time. Gregory Viennois refers to Chardonnay's 'two-day window' of maturity - if the parcels aren't harvested in this time the precious Chablis aromas are lost. VINTAGE The 2015 vintage started with very good conditions during flowering, with dry and sunny weather. These conditions continued and were ideal for preventing diseases during ripening. On the morning of 1st September, a hailstorm affected the vineyards of Les Clos and Les Blanchots. This resulted in a partial loss of yield but didn’t impact the quality of the grapes due to careful sorting in the vineyard and in the cellar.

    Hatton Daniels|Rosé of Dornfelder ​ ​ ​ ​ Mokelumne Glen Vineyard |Mokelumne River AVA ​ ​ The Story: This is a true story of expecting to kiss a frog and ​ finding beautiful wines and great people. Hatton Daniels is a tiny Napa winery working with unusual varietals: Dornfelder, Blaufränkisch, Zweigelt, and Malvasia Bianco, in addition to Pinot Noir and Cabernet Sauvignon. Dan Fishman is the winemaker, who in 2007 worked at Calvert Woodley Fine Wine & Spirits in DC. He makes some of the most interesting California wines we have tasted in a long time. Production ranges from 25-115 cases so there is not much to go around, but they are worth seeking out. Vineyard: Mokelumne Glen Vineyard in Lodi, CA. Viticultural ​ ​ practices include cane pruning (seldom used in the Lodi area) and expanded vertical trellis, and a dual irrigation system utilizing the most favorable benefits of both drip and sprinkler. Grapes harvested prior to full maturity for fresh rose acidity. Vinification: Clusters were pressed directly after harvest, ​ squeezed very gently, only using about 60% of the total potential juice to ensure light color and delicate flavors. The wine was then fermented with native yeast in old oak barrels, and ultimately transferred to a used 500L puncheon for aging. Malolactic fermentation was prevented in order to preserve the beautiful, fresh acidity. Ageing: Aged 3 months in barrel. ​ ​ Everything else you want to know about this wine: The wine was bottled without fining or filtration. For this ​ reason it often throws a sediment, or even so-called “wine-diamonds,” the crystals of tartaric acid that form when the wine is chilled.

    BORDEAUX SALE CATALOGUE FEBRUARY 2014 UNDERSTANDING BORDEAUX To start the journey of exploring Bordeaux, you need to fi rst start with the classifi cation system. In 1855, being lovers of red tape, the French ‘authorities’ created what became known as ‘The Classifi ed Growths of the Médoc ’. A fi ve-class classifi cation of 61 of the leading Médoc Châteaux (as well as two from Graves). This formalised lists that were already in place, based on each Châteaux relative quality as expressed by the prices of each individual estate. These growths, or ‘Crus’ range from fi rst (Premier) through to fi fth (Cinquièmes). Over the years that have passed since, there has been very little change to the 1855 classifi cation other than Château Mouton Rothschild moving from second growth to fi rst in 1973 - Baron Philippe de Rothschild reportedly saying “First I am, second I was, Mouton does not change”. Château Cantamerle was added as a fi fth growth in 1856 and Château Dubignon, a third growth, was absorbed into Château Malescot St Exupéry. Saint-Émilion added its own classifi cation system in 1955, which has subsequently been frequently amended. Pomerol has never been classifi ed, although the greatest wine from this region, Château Petrus, is generally spoken of in the same hushed tones as the fi ve fi rst growths of the Médoc .     2013 Dornfelder Unconventional and Iconoclastic Cambiata is not your average California winery. We are a little more unconventional and iconoclastic than our compatriots around the Golden State. I launched Cambiata in 2002 after making wines for other people for nearly two decades. My intention was to produce distinctive bottlings that go beyond the Franco triumvirate of Bordeaux, Burgundy and Rhone. Today, we are vinifying a handful of compelling wines from some of California’s scarcest grape varieties including Albariño, Tannat and Dornfelder. We also make limited quantities of Pinot Noir and Chardonnay from the Santa Lucia Highlands. Enjoy. What The Hell? Walk past the rows of meticulously manicured Pinot Noir and Chardonnay to the top of the McIntyre Estate Vineyard and you’ll find a single acre of strange-looking vines bearing long, loose clusters of pitch black berries. “What the hell?” you mumble to the wind. “What vintner would have the cajones to plant Dornfelder in the Santa Lucia Highlands?” Turns out, we would. We figured if the grape loves Germany so much, it should thrive in the cold, windy climate of the Salinas Valley. Kissing Cousins Dornfelder, related by marriage to Pinot Noir, is the second-most planted red grape in Germany. When grown in the right location and made with labor-intensive, artisan practices, it can produce a rich, age worthy, red wine that offers incredibly juicy aromatics and luscious flavors. Just like our Pinot Noir, the wine was fermented in open top fermenters with frequent punch downs of the cap. It spent approximately 14 months in 100% French oak barrels (40% new) prior to bottling.
