(U.S. Army photo by Kristin Ellis) Feb. 23, 2017 It takes just minutes for a pot of oil to catch fi re "I was frying some food in the kitchen, I put the food on my plate and walked into my room. A moment later, I saw black smoke coming out from the top of the kitchen door. I opened the door and saw the frying pan on fire. I tried to pour water over the stove to turn it off and the whole top of the stove got bigger flames." This incident recently happened to one of our community members. Luckily, no- body got injured but damage to the kitchen could have been avoided if the person knew how to put out a grease fire. The following are basic tips on what to do when your cooking oil becomes too hot: First of all, evaluate the safety. The safety of you and your family is far more important than the safety of your house. If the fire is still small enough and con- tained in one pot, it is safe to put it out yourself. If not, get everyone assembled outside and dial the emergency services. If the fire is small, turn off the heat on the stove. Don't try to move the pot as you can splash yourself with burning oil. Put something on top of the pot to remove its oxygen source. The easiest way to do so is to place the lid of the pot back on with an oven mitt. Do not use glass lids as they can break from the extreme heat of open flame. With the lid on and the heat off, the fire should quickly consume all the oxygen and put itself out. Wait at least 45 minutes to remove the lid. If the grease fire persists, use a chemical fire extinguisher. Although it can contaminate your kitchen, it's a good idea if the extinguisher is the last line of defense between you and a burned down home. After using the extinguisher, wait for the pot to cool and the fire to go out before touching. Call the emergency services if your attempt has failed and you don't know what to do. Do not risk life and limb to save a kitchen. Never pour water over a grease fire.
