Brussels waffles are made with a yeast-leavened batter, which makes them lighter and crispier. They are rectangular with defined edges, and they have deeper pockets or holes. It is not as sweet as the other variety but nonetheless, it is still tasty when topped with whipped cream, chocolate, ice-cream or various fruit toppings. The more common waffle sold in Brussels is the Liège waffle. Liège waffles are made with a thicker batter that is similar to bread dough, and they have uneven edges. Pearl sugar is mixed in with the dough, which caramelizes when the waffle is cooked. They are thicker, richer and chewier than the Brussels waffle. There is even a confrérie or guild dedicated to this dish. Every year, its members give a kind of award (the Boulet de Cristal) to the owner of the restaurant proposing the best rendition of the dish. Belgium’s national dish, the Flemish beef stew is traditionally served over hot and crispy French fries, but it’s equally as delectable with a few torn hunks of grainy bread. The meat is extremely tender and the sauce is very sweet. This typical Belgian food is made from beef slowly simmered in Belgian beer until it melts in your mouth. Other more adventurous chefs might attempt to include ingredients like mushrooms or garlic to enhance the taste but beer is the mainstay ingredient (other than the beef). This dish is the ideal comfort food on a wet winter day, especially as it is invariably served with French fries or mashed potatoes. It warms you from the inside out. Based on the account of the Szotek family, collected in accor- dance with oral history methodology, the authors present the family’s complex story of migration: first a journey from Ujków Stary to the Charleroi coal basin in Belgium and then a return to Poland, where they lived again in Ujków Stary, then in Zalesie and Bystrzyca Kłodzka, only to finally return to Ujków Stary. The family’s reasons behind the decision to go to Belgium and then re-migrate to their homeland helps to comprehend the historical context of economic migration to and from Belgium, as outlined by the authors. The issue of adaptation of emigrants in the country of settle- ment, and then their adjustment as re-emigrants to the new reality forged by the authorities of the “democratic” Polish People’s Republic occupies an important place in the paper.
