    Latkes Traditional latkes are made of shredded, white potatoes. They are the richer brother of potato pancakes, a German staple. There are endless variations. Any veggie can be used to make latkes. As for me, I’m a lazy cook, so I’ve assembled a latke using frozen, shredded hash browns. Here is a traditional latke recipe, although there are many out there, and my shortcut version. Bon Appetit. Traditional Latkes 1 pound of potatoes, peeled or not, shredded ½ cup finely chopped onion 1 egg ½ tsp. salt pinch black pepper oil for frying sour cream applesauce Rinse the shredded potatoes. If you shred them in advance, cover with cold water. Mix all ingredients except oil. Heat oil, ½ inch deep. (It should pop when you put a drop of water in, but be careful! Too hot and the latkes will burn before they cook inside.) Take a scoop of the mixture and pat it into a flat, 3 inch pattie, about ½ inch thick. The sides should not be thinner than the middle. Fry a few at a time, turning when the bottom gets brown. Remove to a plate with paper towels to soak up the excess oil. Eat these puppies warm with sour cream and applesauce. I know this sounds like a terrible combination to anyone who has not had latkes, but try it. You’ll like it. This recipe doesn’t call for matzo meal, but I always use some. Be sure you let the mixture stand a while before shaping, if you add matzo meal, so the matzo meal binds to the rest of the ingredients.

Place a piece of foil on top to prevent excess browning. POTATO KUGEL Thaw completely. Preheat oven to 375°F. Cook 20-30 minutes until hot (165°F). MACARONI & CHEESE Thaw completely. Preheat oven to 350°F. Cook uncovered for 45 minutes CHICKEN POT PIE Thaw completely. Preheat oven to 350°F. Cook1 hour and 15 minutes. Use foil on top to prevent excess browning. STUFFED CABBAGE Thaw completely: Cover with foil. Bake at 350° 20-30 minutes until 165°. Frozen: cover with foil and bake at 325° for 1 hour and 15 minutes. until 165°. CHEESE BLINTZES Thaw completely. Fry in sweet butter (salted butter or margarine may be used) over medium heat until both sides are golden. POTATO PANCAKES Fry over medium heat until both sides are golden. Do not use oil or butter in the pan. Or bake at 350° on an ungreased cookie sheet for 12 minutes or until 165°. SOUPS & CHILI They may be defrosted and cooked in microwave, or slowly heated on the stove. For cream based soups, we recommend slowly thawing by immersing container in cool running water to prevent separation. KASHA VARNISHKAS Microwave: remove from packaging and place in a microwavable container. Heat on medium for 3 minutes. Stir. Heat again for 2 minutes or 165°F. Conventional oven: Remove plastic lid and cover with foil. Heat approx. 15 minutes at 350°F. Stir and return to oven, covered, heat to 165°.

    From Generation to Generation Sisterhood Temple Emanu-El Dallas, TX Throw Together Noodle Kugel 3 eggs 2 cups milk 1 teaspoon vanilla 1 stick margarine 12 ounces cottage cheese ½ cup sugar (less to taste) 8 ounces noodles, uncooked Topping: 1 cup crushed corn flakes 1 cup brown sugar Cinnamon to taste 1. Melt margarine. 2. Stir in all ingredients. 3. Pour into greased, 9-inch Pyrex dish. 4. Bake at 350 degrees for 30 minutes. 5. Sprinkle topping over kugel and continue cooking for about another 30 minutes until crisp on top and knife inserted in center comes out clean.     Traditional Chanukah Potato Latkes I recently realized that while I've shared my recipes for corn latkes, butternut sguash sweet gotato latkes, vegetabl e latkes and beet latkes stuffed with goat cheese, I've never shared my traditional potato recipe. ! You'll need onion, oil, salt, potatoes, eggs, flour and oil. While the recipe works with any type of potato, using Yukon Gold will be much more aesthetically pleasing because they discolor much more slowly than other potatoes and will keep your mixture looking bright and fresh for longer. They also have a buttery taste which will take your latkes to the next level ! Most latke recipes call for raw onion, but I like to fry them off first to give the latkes more flavor. Dice the onion and saute it in 2 tbsp. oil and 1 tsp. salt until golden. Peel and grate the potatoes (by hand or with a food processor) and immediately put the potato shreds into a bowl of cold water. Continue shredding until all the potatoes are grated. Place the eggs, flour, fried onion and 2 tsp. salt in a separate bowl. Drain the grated potato well, add it to the rest of the ingredients and mix immediately. Heat 2-4 tbsp. of oil in a frying pan, over medium heat. Test the oil by dropping a tiny bit of the mixture into the pan. When the oil sizzles upon contact, it is ready. TIP: Add a small piece of carrot to the oil you're fry ing in. When the carrot starts to looks shriveled and brown, replace it with a fresh piece.

    Potato Kugel 5 large eggs 2 large or 3 medium onions, cut into 2 inch chunks 6 medium baking potatoes, cut into 2-inch cubes 1 tablespoon salt 3/4 teaspoon freshly ground black pepper 1/2 cup + 2 tablespoons matzo meal 1/2 cup melted unsalted butter, margarine, vegetable oil, or rendered chicken fat Preheat oven to 400 F and place rack in upper third of oven. Puree 3 eggs together with half of the onion in a food processor fitted with the metal blade, until the mixture is smooth and fluffy. Add half of the potatoes and pulse until the mixture is finely chopped but still retains some texture. Place in a large bowl. Repeat the process with the remaining ingredients. Add the salt, pepper, matzo meal and 1/4 cup melted butter, margarine, oil or chicken fat and quickly process to combine. Do not over process. Reserve. (You can test the batter for flavor at this point; heat a nonstick skillet on medium-high heat and add a tablespoon of oil to it. Spoon in a tablespoon of batter and cook on both sides until brown, about 4 minutes. Taste for seasoning; if desired add more salt or pepper to the batter.) Place the remaining 1/4 cup butter, margarine, oil or chicken fat into a 9 x 13- inch baking dish. Place in the oven for about 5 to 7 minutes or until the fat is very hot. Remove from the oven with potholders. Using a silicone brush, brush the sides of the pan. Pour in the potato batter.

The reason why it is called a kartufel is because the potato which was meant to be a tufel food has been made into an ikur.1 The potato is a vegetable that was not around in the days of the Gemorah or Rishonim. Although, the potato first reached the shores of North America in the 18th century, the current value of the world potato market is 100 billion dollars. Can we imagine a world without potato kugel, latkes or french fries? Horav Avigdor Miller zt”l said we have a great zechus that the potato is part of our diet. The Gemorah2 mentions many steps one has to follow in order to put bread on his table, while potatoes can be prepared straight from the soil. This is something to think about the next time we recite a beracha on a potato. There are many halachos that apply to this wonderful vegetable which is eaten daily by millions of people. Making Designs out of a Potato Sometimes one wishes to take a potato, cut it into different shapes and put some coloring etc on it to decorate it. This is done as art project etc. to make the potato look good. However, one should not do this to a potato since it is a disgrace for the potato, and one is not allowed to treat foods in a disrespectful manner.3 Beracha Rishona There are many poskim who maintain that the correct beracha rishona on a potato is shehakol.
