    Latkes Traditional latkes are made of shredded, white potatoes. They are the richer brother of potato pancakes, a German staple. There are endless variations. Any veggie can be used to make latkes. As for me, I’m a lazy cook, so I’ve assembled a latke using frozen, shredded hash browns. Here is a traditional latke recipe, although there are many out there, and my shortcut version. Bon Appetit. Traditional Latkes 1 pound of potatoes, peeled or not, shredded ½ cup finely chopped onion 1 egg ½ tsp. salt pinch black pepper oil for frying sour cream applesauce Rinse the shredded potatoes. If you shred them in advance, cover with cold water. Mix all ingredients except oil. Heat oil, ½ inch deep. (It should pop when you put a drop of water in, but be careful! Too hot and the latkes will burn before they cook inside.) Take a scoop of the mixture and pat it into a flat, 3 inch pattie, about ½ inch thick. The sides should not be thinner than the middle. Fry a few at a time, turning when the bottom gets brown. Remove to a plate with paper towels to soak up the excess oil. Eat these puppies warm with sour cream and applesauce. I know this sounds like a terrible combination to anyone who has not had latkes, but try it. You’ll like it. This recipe doesn’t call for matzo meal, but I always use some. Be sure you let the mixture stand a while before shaping, if you add matzo meal, so the matzo meal binds to the rest of the ingredients.

    The Weekly Message of Torah from Rabbi Rheins Shabbat HaGadol: What Makes It Great? This Friday night we usher in Shabbat HaGadol, “The Great Sabbath.” It is the Shabbat that directly precedes Pesach. Some maintain that it was called “HaGadol” (“Great”) because the sermon this Shabbat was frequently a long and detailed review of the laws and rituals of Passover and the Seder. That is, the “greatness” was not the quality of the Sabbath. Rather, it was the quantity, the great length of the service. Notwithstanding the kernel of truth at the center of that bit of folk wisdom, there are other explanations that are worthy of our attention. Rabbi Avraham HaLevi, a 17th century Polish scholar who is also known as The Magen Avraham, wrote a commentary in the Shulchan Arukh. He refers to a midrashic interpretation that maintains that this Shabbat is called “HaGadol” because a great miracle happened. Just before the Exodus from Egypt, on the 10th of Nisan, for some reason the Egyptian task masters did not try to prevent our ancestors from selecting the lambs that would be sacrificed and used the night of 14th, the evening of Passover. On this night, our ancestors began their preparations for their long awaited moment of redemption. The Passover began the evening of 14th of Nisan and was experienced on the night of the 15th, but the miracles that led up to and enabled the Exodus started well before. And so it is that though we will observe Passover with Seders next week in our homes on Friday night, April 19, we know that the greatness of that night depends on the preparation we make in the coming days.

Ingredients • 1 1/2 lbs chicken livers • 1/4 cup schmaltz, divided (see note below) • 2 large onions, sliced (for a sweeter chopped liver, use up to 4 onions) • 5 hard boiled eggs, peeled and diced (divided) • Salt, to taste • Black pepper, to taste • 1/2 cup gribenes (optional - see note below) • 2 tbsp minced fresh parsley for garnish (optional) Recipe Notes You will also need: large cast iron or nonstick skillet with lid large enough to cover, kitchen shears, chef's knife, food grinder or food processor. Makes 3 1/2 cups chopped liver, serving size 1/4 cup. Calories calculated using 1 tsp salt and 1/2 tsp pepper. Learn to make schmaltz and gribenes here. Instructions 1. Prepare schmaltz and gribenes ahead of time, or purchase schmaltz from your local kosher market. Goose fat or duck fat can be used in place of schmaltz if desired. 2. Prepare the livers by cutting off any tough pieces or stringy tendons. You should also cut away any pieces of liver that look discolored, yellow or strange. This is pretty much the worst prep job ever, as uncooked liver has a soft and slimy texture, so make sure this step is done by someone with a strong stomach. 3. Add 2 tbsp schmaltz or oil into a large cast iron or nonstick skillet and melt over medium heat. Put half of the chicken livers into the skillet and fry them for 3 minutes on each side (about 6 minutes total).

Place a piece of foil on top to prevent excess browning. POTATO KUGEL Thaw completely. Preheat oven to 375°F. Cook 20-30 minutes until hot (165°F). MACARONI & CHEESE Thaw completely. Preheat oven to 350°F. Cook uncovered for 45 minutes CHICKEN POT PIE Thaw completely. Preheat oven to 350°F. Cook1 hour and 15 minutes. Use foil on top to prevent excess browning. STUFFED CABBAGE Thaw completely: Cover with foil. Bake at 350° 20-30 minutes until 165°. Frozen: cover with foil and bake at 325° for 1 hour and 15 minutes. until 165°. CHEESE BLINTZES Thaw completely. Fry in sweet butter (salted butter or margarine may be used) over medium heat until both sides are golden. POTATO PANCAKES Fry over medium heat until both sides are golden. Do not use oil or butter in the pan. Or bake at 350° on an ungreased cookie sheet for 12 minutes or until 165°. SOUPS & CHILI They may be defrosted and cooked in microwave, or slowly heated on the stove. For cream based soups, we recommend slowly thawing by immersing container in cool running water to prevent separation. KASHA VARNISHKAS Microwave: remove from packaging and place in a microwavable container. Heat on medium for 3 minutes. Stir. Heat again for 2 minutes or 165°F. Conventional oven: Remove plastic lid and cover with foil. Heat approx. 15 minutes at 350°F. Stir and return to oven, covered, heat to 165°.
