Family Participation Is The Essential Ingredient In All Passover Recipes There was always a sense of warmth and support when we sat in the kitchen, whether we were watching Mom (in those days it was generally a Mom thing) prepare some new or familiar dish, or when we were invited to actually participate in the cooking or baking. Not only did we have a chance to be drawn in to the actual task, but we had an extended and supportive opportunity to talk about whatever was on either her mind or on ours. Somehow it was the most encouraging environment for what today we call “communication.” The informality linked with the tastes and smells and the sight of the cooking and baking seemed just right. Today, one of the phenomena of the modern modern American family is that fathers are cooking and baking more than ever before; some claim that it is quickly becoming the number one avocation of men between the ages of 25 and 45. -

APRIL 6, 2020 SPECIAL GUIDANCE FOR PASSOVER 2020 Rabbi Adam Zeff Dear friends, Every Pesah is different, but we approach the Passover season this year in extraordinarily difficult times. The story of the Exodus from Egypt asks us to identify ourselves with the suffering of the Israelites, filled with anxiety, fear, and distress, worried for their families and for their lives. This year more than any in recent memory that identification rings true. But the Jewish people have celebrated this Festival of Freedom in difficult circumstances before, and we will manage to do so this year as well! To that end, I wanted to provide some guidance and resources for these special circumstances and for changes we may need to make to our traditional celebrations as the COVID-19 pandemic continues to shape every aspect of our lives. Latkes Traditional Latkes Are Made of Shredded, White Potatoes. They Are the Richer Brother of Potato Pancakes, a German Staple
Latkes Traditional latkes are made of shredded, white potatoes. They are the richer brother of potato pancakes, a German staple. There are endless variations. Any veggie can be used to make latkes. As for me, I’m a lazy cook, so I’ve assembled a latke using frozen, shredded hash browns. Here is a traditional latke recipe, although there are many out there, and my shortcut version. Bon Appetit. Traditional Latkes 1 pound of potatoes, peeled or not, shredded ½ cup finely chopped onion 1 egg ½ tsp. salt pinch black pepper oil for frying sour cream applesauce Rinse the shredded potatoes. If you shred them in advance, cover with cold water. Mix all ingredients except oil. Heat oil, ½ inch deep. (It should pop when you put a drop of water in, but be careful! Too hot and the latkes will burn before they cook inside.) Take a scoop of the mixture and pat it into a flat, 3 inch pattie, about ½ inch thick. The sides should not be thinner than the middle. Fry a few at a time, turning when the bottom gets brown. Remove to a plate with paper towels to soak up the excess oil. Eat these puppies warm with sour cream and applesauce. I know this sounds like a terrible combination to anyone who has not had latkes, but try it. You’ll like it. This recipe doesn’t call for matzo meal, but I always use some. Be sure you let the mixture stand a while before shaping, if you add matzo meal, so the matzo meal binds to the rest of the ingredients. -

Liz Alpern and Jeffrey Yoskowitz are co-authors of The Gefilte Manifesto and co-owners of The Gefilteria. Their goal is to champion Jewish foods like gefilte fish, give them a tasty makeover and earn them the respect they deserve. I first met Liz when she appeared on a panel at the Toronto Ashkenaz Festival. I knew immediately that I had to have her on my podcast. We talked at her apartment in Crown Heights, Brooklyn. Marion: Let's sit down and talk Ashkenazi food - and gefilte fish in particular. I'm going to ask you to introduce yourselves. Liz: My name's Liz Alpern. I am the co-owner of The Gefilteria and co-author of The Gefilte Manifesto. Jeffrey: My name is Jeffrey Yoskowitz. I am the co-owner and chief pickler of The Gefilteria, and I am a co-author of The Gefilte Manifesto cookbook. Marion: You're both Jewish and Ashkenazi. Liz: Yes, we're both of Eastern European Jewish descent. Marion: Gefilte fish - we have to address this matter. I want to read a description of gefilte fish of the worst kind. Quote, "Bland, intractably beige, and (most unforgivably of all) suspended in jelly, the bottled version seemed to have been fashioned, golem-like, from a combination of packing material and crushed hope." Liz & Jeffrey: (laugh) Marion: That's a very unfavorable review of gefilte fish.
