    Our Shabbos in Shebreshin As Ashkenazim — Jews of Northern/Eastern European ances- try — we called it Shabbos; for the Mediterranean Sephardim, the word was Shabbat. It was our Sabbath, and it started on Fridays — to be exact, about six o’clock every Friday morning. I would hear my mother get out of bed and prepare herself for the big event of baking the bread that was to last all week. One day, as a young child, I too got up, announcing to my mother that I would go with her. She didn’t resist very much. She pulled down my nightshirt, took my hand, and led me in my bare feet across the few yards to my grandfather’s house. Grandma was already awake and moving about. The kitchen was brightly lit, the large brick stove and oven were fired up, and there were piles of sifted flour on the table. Some dough was already rising. The kitchen was adjacent to my grandparents’ bedroom, and the door was seldom closed. Zaida saw me coming in, smiled, and beckoned me to come join him in his bed. He put me on his chest. I buried my face in his beard. It smelled of spices. I closed my eyes and enjoyed the warmth. We watched the two women prepare the baking — sifting and kneading. Melted margarine - Melted chocolate Steps: - Mix all ingredients together in a large bowl - Drop spoonfuls onto a greased cookie sheet, you can shape them with your fingers a little - Bake at 325 for 20 minutes and let cool for 1-2 min and then remove them from sheet - Spoon or drizzle melted chocolate of your choice on top of macaroons (tip: pour melted chocolate in a ziploc baggie, snip o corner and drizzle over macaroons) Chocolate Covered Matzo Toee Ingredients: - 3 to 4 pieces of matzo (enough to fill 2 cookie sheets) - 2 sticks of butter - 1 cup of brown sugar - Chocolate chips (any kind!) Steps: - Preheat oven to 400 degrees F - Line 2 cookie sheets with foil and place matzo on sheets, you may need to break some pieces to have it all fit - Put butter and brown sugar in a pot on stove at low heat, simmer for 5 minutes and whisk until fully blended - Pour butter/brown sugar mixture over matzo and bake in oven for about 5 minutes, or until bubbly - Take matzo out of oven and sprinkle with chocolate chips, spread with spatula to cover - Leave it plain or top with sea salt, M&Ms, nuts or any topping of choice! - Let cool in fridge for 45 minutes, then break into pieces Flourless Chocolate Cake Ingredients: - 2 sticks of butter, cut into pieces - 8 ounces semisweet chocolate chips (about 1.5 cups) - 1 ¼ cups sugar - 1 cup sifted unsweetened cocoa powder - 6 large eggs Steps: - Preheat oven to 350 degree F - Butter 10- inch springform pan.

  • Matzo Balls for Passover for Our Passover Seder
    Matzo balls for Passover For our Passover Seder (traditional evening meal on the first night of Passover) my mother always made Matzo ball soup. Her famous soup was a chicken broth with matzo ball dumplings made from matzo meal, eggs, water, and schmaltz (chicken fat). We’ve gotten a little more modern as we make matzo balls in my house by using light oil instead of the schmaltz. There’s an art to making matzo balls as there are some common mistakes that make the dumplings heavy instead of light and fluffy. Here’s my recipe and instructions. Matzo Ball Recipe 1 cup Matzo meal ¼ cup light corn oil ¼ cup water 1 tsp. salt dash of pepper 4 large eggs 1 TB. fresh parsley, chopped Beat the eggs with the water, oil, salt, pepper, and parsley. Add matzo meal and stir until well mixed. Refrigerate the mixture for at least one hour. After chilling, shape walnut-sized dough into balls with your wetted hands. Keeping your hands wet keeps the matzo from sticking as you form the balls. Drop balls into boiling salted water and cook for 30 minutes. Remove the matzo balls from the water with a slotted spoon and add them to your chicken soup. This recipe makes about 20 1-inch matzo balls which is about 6 servings. The key mistakes that people make are to not leave enough time to adequately chill the mixture before dropping the balls into boiling water; stirring the mixture too much; and cooking the matzo balls in the chicken soup instead of salted water first.
