Pearl couscous with roasted pumpkin and chorizo (serves 4) Ingredients: 500g pumpkin, peeled, seeded and cut in to 1cm cubes 2 large zucchini 225 g pearl couscous 1 chorizo, thinly sliced (125g) ½ cup chopped fresh coriander ¼ cup lemon juice 1 teaspoon smoked paprika 1 tablespoon olive oil Modifications 1 punnet cherry tomatoes (prick these with a knife and add them to the tray) 1 medium eggplant, cubed to 1cm pieces and added to tray for baking Method: Preheat oven to 200C. Line a baking tray with baking paper. Spread the pumpkin, zucchini, tomatoes and eggplant on the tray. Spray with oil and season with pepper Cook couscous in saucepan of boiling water for 10mins or until tender. Drain. Heat a non-stick frying pan over medium-high heat and stir chorizo for 3-5mins or until golden. Combine couscous, baked vegetables, chorizo and coriander in a large bowl. Whisk the lemon juice, oil and paprika in a jug and add to the bowl and stir. Sprinkle with some baby spinach. About this recipe: - Pearl (also known as Israeli) couscous is a handy grain to try – couscous is a medium GI grain, pearl couscous is a low GI grain - Adding more vegetables adds fibre and flavour to the dish as well as adding more volume to the meal without increasing the energy to kilojoules greatly. Nutrition (per serve after modification) Energy: 1957kJ (468 calories), 59g carbohydrates, 7.3g fibre, 16g protein, 16g fat, 3g saturated fat, 342mg sodium. THE OFFICIAL BETH EL KUGEL COOK- OFF RECIPE BOOK April 26th, 2015 Savory Challah-Peño Continued Cheddar Kugel Prepare the bread crumbs by pulsing the bread in the food processor fitted with a metal Chef: Kathy Sklar blade. Keep it chunky; you do not want fine crumbs. You should have at least 1 cup. Add FOR THE KUGEL the jalapeños, butter, eggs, cheddar cheese, 1 pound egg noodles cottage cheese, sour cream, and nutmeg to the noodles. Mix well and season to taste with 1-2 jalapeño peppers salt and pepper. Pour contents into a greased 13 x 9 inch pan. Melt butter in small frying 4 tbsp. butter, melted pan. Mix in the bread crumbs. Sprinkle on top 2 eggs of the kugel. Bake at 350 degrees for 40 minutes until top is golden and crusty. 2 cups grated cheddar cheese 2 cups cottage cheese ¼ cup sour cream ¼ tsp. nutmeg Salt and pepper to taste Corn Kugel FOR THE TOPPING Chef: Glenda Koby Last week’s challah bread (to make bread crumbs) Ingredients: 2 cans creamed corn 1 tbsp. butter 3 eggs 1/2 stick margarine Cook the noodles according to package 1 tsp. vanilla directions, rinse under cold water and transfer 1/4 cup matzo meal to a large mixing bowl. 1 tsp. salt Roast the jalapeno pepper by holding it with a 2 tbsp. sugar fork or tongs over the open flame of a gas burner until blackened all over, turning Melt margarine. Add corn. Beat eggs until frequently. Transfer the blackened jalapeno to fluffy and add to mixture with other a plastic bag, seal the bag and steam for 30 ingredients. -

Latkes Traditional Latkes Are Made of Shredded, White Potatoes. They Are the Richer Brother of Potato Pancakes, a German Staple
Latkes Traditional latkes are made of shredded, white potatoes. They are the richer brother of potato pancakes, a German staple. There are endless variations. Any veggie can be used to make latkes. As for me, I’m a lazy cook, so I’ve assembled a latke using frozen, shredded hash browns. Here is a traditional latke recipe, although there are many out there, and my shortcut version. Bon Appetit. Traditional Latkes 1 pound of potatoes, peeled or not, shredded ½ cup finely chopped onion 1 egg ½ tsp. salt pinch black pepper oil for frying sour cream applesauce Rinse the shredded potatoes. If you shred them in advance, cover with cold water. Mix all ingredients except oil. Heat oil, ½ inch deep. (It should pop when you put a drop of water in, but be careful! Too hot and the latkes will burn before they cook inside.) Take a scoop of the mixture and pat it into a flat, 3 inch pattie, about ½ inch thick. The sides should not be thinner than the middle. Fry a few at a time, turning when the bottom gets brown. Remove to a plate with paper towels to soak up the excess oil. Eat these puppies warm with sour cream and applesauce. I know this sounds like a terrible combination to anyone who has not had latkes, but try it. You’ll like it. This recipe doesn’t call for matzo meal, but I always use some. Be sure you let the mixture stand a while before shaping, if you add matzo meal, so the matzo meal binds to the rest of the ingredients. -
