They call her the Axel Vervoordt of parties. “That’s one of the best compliments I’ve ever gotten,” says Nadine Winten (57), founder of the party planning agency Feratius, which has its base of operations in Knokke-Heist. he remembers the legendary parties of the 20th- century Knokke-Heist. “Ah, the Zwinneblomme gala Sball in the casino back when I was a student; now that was a great party,” says party architect Nadine Winten. “All the young men in handsome tuxedoes, the girls in evening gowns… If there is one thing I regret about today’s party culture, it’s that dressing up is out of fashion. Now, the dress code at most parties, including those in Knokke- Heist, is casual chic. Today, you can easily go to a party in a glittery top or without a suit jacket. I really enjoy it when I get to organise a party with a Hollywood theme from the 1930s with a matching dress code. The guests always look wonderful in their gowns and suits.” “But the most important thing is that the theme and style of the party suits the people who are celebrating,” says Nadine. “Just like a house is only really right when it suits the people living there, a party is only perfect when it suits those who are celebrating. FESTIVAL FEELING You also get a bit of a festival feeling at these outdoor locations, with all those tents and food trucks. A lot of the gardens in Knokke-Heist are perfect for these kinds of parties. “The time when a six-course dinner was the norm for the opening dance is over. Even though good catering and a beautifully dressed plate remain important, it’s much more informal and there’s less time spent dining. You can get your cocktail at the gin & tonic bar, you can find sweets in the candy bar, and a photographer takes perfect pictures of the guests in the photo booth. And after midnight, chips are often fried up and served with homemade mayonnaise, so everyone has enough energy to keep dancing into the wee hours.”

day, are also becoming more common. “Families are less traditional than they used to be, which means the family parties are the also less traditional. There can be more than one reason for the whole family to come together to celebrate. In the past, the parents of the married couple often had the decisive voice at the party, but now several generations have input. The parents, the couple themselves, sometimes even their children in the newly formed family, and many others. My job is to translate all their wishes into a party where everyone has a great time, from young to old.” A number of trends are also evident on the table. Nadine: “Twenty years ago, I always put silver cutlery on the table; but gold or black cutlery is much more popular now. The trend is eclectic, combining things like wooden tables with a retro service including glass plates, linen napkins, a mix of different kinds of chairs, etc. But the people who make up the party always remain more important to me than trends: it has to fit them perfectly, not just some passing trend. Because a great part is a memory that will last a lifetime.”

Who are Maurice and Deborah? Maurice started his culinary adventure at Esmeralda and then moved to Le Cirque where he met Deborah. After the birth of their daughter, they lived in Spain for three years so they could return to the kitchen and dining room at Brasa. They opened their own ‘Vinum&- Sensum’ together at the end of last year.

Hoe gaan jullie te werk bij de realisatie van een project? Chris: “Eerst en vooral gaan we langs in de te renoveren woning. Jullie zetten dus volop in op die zorgeloze ervaring? Chris: “Dat is wat onze aanpak uniek maakt. Wij houden zelf enorm veel van de rust die de zee brengt en willen onze klanten diezelfde ervaring geven. Daarom is het voor ons zo belangrijk om hun wensen en verwachtingen volledig in te lossen.
