In the time elapsed since the November election, the District has been going about the business of planning for the changes that were approved. As you may or may not have heard, due to a clerical error by the DuPage Election Commission, the Park District has had some challenges in obtaining our referendum-approved bonds to fund the voter- approved projects. At the time of publication of this article, we have not yet been able to obtain the bonds, which means Buzz Puccio there will be uncontrollable delays with all of the proposed projects. This situation is not due to any XSPOHEPJOHPGUIF1BSL%JTUSJDUPSPVSSFTJEFOUT*UJTVOGPSUVOBUFMZPVUPGPVSDPOUSPM BOEXFIPQFJUXJMMCFRVJDLMZ rectified so that we may proceed. We will keep you updated as we know more information via our website and social media (Facebook and Twitter). Keeping on the topic of the referendum, there are three people who I would like to specifically thank for their efforts in its passage.     Saint Sophia HERALD Volume 13 Number 9 Many Lives...One Heart September, 2008 “What’s That Around Your Neck?” I was privileged to have spent almost two weeks in Greece this summer where I had the pleasant task of baptizing the granddaughter of a very dear friend. Greece is the premier laboratory of western history and civilization. Whatever period of time or era one wishes to examine, it is all there. For Christians who study the New Testament scriptures, there is no better place to walk in the footsteps of St. Paul than Greece. On Sunday, August 3rd, I took the commuter train from Kifissia, a northern suburb of Athens, to go to Monastiraki, the closest station to the ancient Athenian agora or market place just under the shadow of the Acropolis. I wanted to walk through the ancient city ruins and end up on Mars Hill, known in the book of Acts, Chapter 17 as the Areopagus. It is a small rocky hill where St. Paul stood and addressed the Athenian philosophers and skeptics, preaching to them the gospel message of Jesus Christ. I wanted to stand where Paul stood nearly 2000 years before and to vicariously sense through my spiritual imagination, a little of what he saw and experienced. The train was packed…standing room only. A few feet away from me stood a young man who was intently looking at me. At ev- ery station stop he inched his way closer to me. Half way into the 30 minute ride to downtown Athens, we were almost face to face.

Boat trips and excursions are available locally to tour the island of Zante and ferry's to take you to Kafelonia or the Peloponnese Islands.

    Pastitsio SERVES Serves 6 WHY THIS RECIPE WORKS In the best renditions of this Greek meat and macaroni casserole, the components—tubular pasta, ground meat and tomato sauce, and a plush blanket of bechamel—are impressively stratified. We started by treating ground beef with baking soda before cooking, which altered its chemistry and made it better able to hold on to moisture. We skipped the usual browning steps to avoid toughening the meat's exterior, which also saved time. Cinnamon, oregano, dried mint, and paprika made the flavor profile distinctly Greek. A minimal amount of red wine plus lots of tomato paste added brightness and savoriness. We further streamlined the method by parcooking the ziti (the closest substitute for authentic Greek “number 2” macaroni) in the hot béchamel; doing so hydrated the pasta just enough to ensure that it would be fully cooked after baking, and the pasta's starches helped thicken the béchamel. We then thickened the rest of the béchamel by whisking in cheese and an egg until it was spreadable. Sprinkling more cheese over the top encouraged the surface to brown.     MIDDLE EASTERN CUISINE The term Middle Eastern cuisine refers to the various cuisines of the Middle East. Despite their similarities, there are considerable differences in climate and culture, so that the term is not particularly useful. Commonly used ingredients include pitas, honey, sesame seeds, sumac, chickpeas, mint and parsley. The Middle Eastern cuisines include: Arab cuisine Armenian cuisine Cuisine of Azerbaijan Assyrian cuisine Cypriot cuisine Egyptian cuisine Israeli cuisine Iraqi cuisine Iranian (Persian) cuisine Lebanese cuisine Palestinian cuisine Somali cuisine Syrian cuisine Turkish cuisine Yemeni cuisine ARAB CUISINE Arab cuisine is defined as the various regional cuisines spanning the Arab World from Iraq to Morocco to Somalia to Yemen, and incorporating Levantine, Egyptian and others. It has also been influenced to a degree by the cuisines of Turkey, Pakistan, Iran, India, the Berbers and other cultures of the peoples of the region before the cultural Arabization brought by genealogical Arabians during the Arabian Muslim conquests. HISTORY Originally, the Arabs of the Arabian Peninsula relied heavily on a diet of dates, wheat, barley, rice and meat, with little variety, with a heavy emphasis on yogurt products, such as labneh (yoghurt without butterfat). As the indigenous Semitic people of the peninsula wandered, so did their tastes and favored ingredients. There is a strong emphasis on the following items in Arabian cuisine: 1. Meat: lamb and chicken are the most used, beef and camel are also used to a lesser degree, other poultry is used in some regions, and, in coastal areas, fish. Pork is not commonly eaten--for Muslim Arabs, it is both a cultural taboo as well as being prohibited under Islamic law; many Christian Arabs also avoid pork as they have never acquired a taste for it.
