Byzantine Gastronomy Byzantine cuisine synthesized dishes from ancient Greece and the Roman Empire with new ingredients and many innovations. The Empress Theodora ( ca. A.D. 500 – 548) invited cooks from different parts of mainland Greece and the islands to cook for her. As the capital of a powerful and rich empire, Constantinople, a bustling city of as many as 1,000,000 inhabitants at its height during the Macedonian dynasty of the late 9th-early 11th centuries, was the center of the domestic and foreign trade of Byzantium. Grain, wine, salt, meat, cheese, vegetables and fruits flowed from the provinces into its markets. The capital was also the centre of luxury trade: exotic spices and lavish foods (such as black caviar) were popular imports for the wealthy land owners, the officials of the State and Church and the rich members of the new middle class, the “mesoi”, who could afford them. Beans were a common source of protein for the peasants, the poor and the monks during fasting. The variety of vegetables, fruits and condiments-black pepper, honey, olive oil, vinegar, salt, mushrooms, celery, leeks, lettuce, chicory, spinach, turnips, eggplant, cabbage, white beets, almonds, pomegranates, nuts, apples, lentils, raisins etc. which were listed as food of the poor by Ptohoprodromos (Poems-1150), mirrors both the interest in good eating and the availability of healthy ingredients regardless of economic class. Tomato and potato were not part of the Byzantine diet, as they were introduced to the area many years later. Bread played a very important role in the Byzantine diet, so much so that the guild of bakers of Constantinople and their animals were never used by the state in order that bread baking could not be interrupted (Book of the Eparch, 911-912). -

It is common, chronic, and can cause disabling complications. What you do for yourself to take care of your diabetes is the most important factor in your diabetes being well controlled. Very little diabetes education is provided in prisons. There are few organized programs for prisoners with diabetes. Experience has shown that others with diabetes are a good source of information about the disease. By cooperating and sharing, diabetics can help each other. A diabetes support group has been meeting at Great Meadow Correctional Facility in Comstock, New York since 1997. This group helps prisoners with diabetes to improve their diabetes management. Science and technology have accelerated dramatically, and continues to grow and forge new paths in shaping and developing the world around us. We are at an age of scientific marvels, where nothing imagined is unattainable. The Next Genius is an original, scripted series that focuses on young and innovative children, hosted by a charismatic child genius about to embark on a journey to the future. The host will take the young viewers on a fun and exciting trip to some of the biggest and most prestigious science fairs and meet the best and brightest of the young science aficionados. We will talk to them about what sparked their ideas, how they went about creating their exhibitions, and what they hope to accomplish in the future. We also venture inside the “Kitchen Laboratories” of these young adventurers to learn fun and innovative ways to conduct scientific experiments and projects that we can teach the young viewers to do right at home, using objects found in most ordinary kitchens. This is a show that encourages children to learn, hypothesize and create. Each week will feature a different science fair and different young pioneer who will discuss and demonstrate the individual project he or she has been working on and also showcasing some simple, complementary science projects that viewers can re-create at home. Saint Sophia HERALD Volume 13 Number 9 Many Lives...One Heart September, 2008 “What’s That Around Your Neck?” I was privileged to have spent almost two weeks in Greece this summer where I had the pleasant task of baptizing the granddaughter of a very dear friend. Greece is the premier laboratory of western history and civilization. Whatever period of time or era one wishes to examine, it is all there. For Christians who study the New Testament scriptures, there is no better place to walk in the footsteps of St. Paul than Greece. On Sunday, August 3rd, I took the commuter train from Kifissia, a northern suburb of Athens, to go to Monastiraki, the closest station to the ancient Athenian agora or market place just under the shadow of the Acropolis. I wanted to walk through the ancient city ruins and end up on Mars Hill, known in the book of Acts, Chapter 17 as the Areopagus. It is a small rocky hill where St. Paul stood and addressed the Athenian philosophers and skeptics, preaching to them the gospel message of Jesus Christ. I wanted to stand where Paul stood nearly 2000 years before and to vicariously sense through my spiritual imagination, a little of what he saw and experienced. The train was packed…standing room only. A few feet away from me stood a young man who was intently looking at me. At ev- ery station stop he inched his way closer to me. Half way into the 30 minute ride to downtown Athens, we were almost face to face. -
