Travel the world as you walk through Dollywood with our Passport to Food. Using this guide, you will map out all the locations where you can sample international cuisine—everything from savory to sweet! Immerse yourself in this multi-cultural experience. Use the stickers in the middle of this guide to “stamp” your passport throughout the day. Enjoy! FIRST NAME LAST NAME DATE CANADA As Canada stretches across the North American continent, each region of the country has its own unique influences. Much the same, Canadian cuisine changes by region with ingredients unique to one area added to more common ingredients found nationwide. The poutine and fried cheese curds found here are among the most popular foods found across Canada, though Quebec is acknowledged as the originator of both. FOOD: o Poutine - Originally from Quebec, Canada, poutine rose to prominence in the 1950s. In our version, fries are served up golden and crispy, then topped with savory brown gravy and fresh cheese curds. o Fried Cheese Curds - Fresh cheese curds are breaded and deep fried, resulting in rich, melty nuggets of cheese! The fried curds are served with a side of brown gravy for dipping. LOCATION: STAMP Market Square BIG SKILLETS® HERE MAP #123 ECUADOR Due to the Andes Mountains extending through Ecuador, altitude changes vary greatly throughout the country. Accordingly, Ecuadorian food varies by region due to the agricultural products able to be produced in each area because of the elevation changes. FOOD: o Carnitas & Rice - Authentic pork carnitas (translated as “little meats”) are coated in true Ecuadorian spices, then braised in hot oil until tender. These carnitas are not spicy and are served over a bed of excellently-seasoned rice! o Upside Down Plantain Cake - Ripe plantains are cooked until caramelized, then baked with a moist, white cake. Once finished, the cake is turned on its head, and a sweet-cream icing is drizzled over the top, completing this simple and beautiful dessert. Greeks pride themselves on their heritage, cuisine and culture. Opa! FOOD: o Pastitsio - This Greek pasta dish is similar to traditional lasagna. As tasty as it is hearty, pastitsio features a base layer of bucatini (tubular pasta), a middle layer of seasoned beef, tomato sauce and is topped with béchamel, a form of white sauce, and cheese. Served alongside is a Greek salad of feta cheese, cucumbers and olives. Known largely for vibrant hues, curry and spice, the diversity of Indian lifestyle has sparked worldwide inspiration. FOOD: o Chicken Tikka Masala - Tender chunks of chicken are covered in a traditional, yet not spicy, Indian sauce that gives a smooth taste. It is served with pearled couscous, which provides the perfect flavor complement. o Carrot Fritter - You won’t be able to get enough of these sweet treats! These fritters are made with carrots, dusted in cinnamon and covered in a sweetened condensed milk topping. Though small, Ireland is the second largest island of the British Isles and has had massive impact on world art and literature. FOOD: o Shepherd’s Pie - Talk about comfort food! These fluffy mashed potatoes hide layers of flavor! Its food is some of the most popular in the world, as can be seen in its appearances in varied locations worldwide. FOOD: o Cannoli - These Italian pastries originated in Sicily and feature a crisp, fried pastry dough shell, filled with a sweet, rich and creamy filling. o Chocolate Biscotti - This Italian bakery delight features notes of white chocolate and chunks of pecan and is drizzled with rich milk chocolate. The cuisine has been shaped by a number of cultures and is known for being heavily meat-based. FOOD: o Beef Berbere - Berbere is a chili powder that delivers a rich, earthy flavor. It is coated on tender beef then grilled to perfection. It is sliced and served alongside a tomato chutney that perfectly complements the beef thanks to its sweet, crisp bite. o Bean Salad - Enjoy a side of South African flavor! This bean salad features green, kidney and butter beans tossed with red onions in a lemon and red chili vinaigrette. Many older traditions combine with newer traditions to create the varied dishes of Spanish origin. Creole traditions have major influence on both culture and cuisine in this country. It is important that you adhere to all safe food-handling practices, including cooking temperatures, holding temperatures and good personal hygiene. LICENSING PROCEDURES Applications must be completed and submitted for review/approval to the Health Department at least 10 days before the event. The application must be filled out completely and accompanied by the required fee. The license is valid only for the dates listed on the application and may be revoked at any time by the Health Department. An inspection may be conducted on the day of the event/festival based on the amount of food handling/anticipated number of people served. If an inspection is required, you will receive your license after the inspection. Please set- up your booth as directed as we need to view your operation and food handling. You DO NOT have to wait for an inspection BEFORE you start. All vendors must complete a Food Service Application.
