Recipe By Brian Carson Preparation and Recipe Edits by Matthew Wong Prep Time: 25 Minutes Cook Time: 40 Minutes Serving Size: 3 people Ingredients Cabbage Rolls: Cabbage Roll filling ● 1 each head of green cabbage ● 8 cups chicken stock ● 1 Tablespoon olive oil ● 3 each Springer Mountain Farms © chicken thighs, grilled and cubed ● 1 pound Springer Mountain Farms © ground chicken ● ½ teaspoon allspice ● ½ teaspoon nutmeg ● 1 Tablespoon salt ● ½ Tablespoon pepper Tomato Sauce: ● 1 Tablespoon olive oil ● 1 teaspoon garlic minced ● ½ cup carrot, small diced ● ½ cup celery, small diced ● 1 Tablespoon rosemary, chopped ● 2 cups chunky tomato sauce ● 1 teaspoon salt ● 1 teaspoon pepper Plating Garnish: ● 2 Tablespoons rosemary, picked Preparation For Cabbage Roll Filling: 1. Pull 6 full cabbage leaves and set aside. Thinly slice 1 cup cabbage and set aside temporarily 2. In a medium pot over medium heat, add chicken stock and bring to a boil 3. Boil full cabbage leaves for 2-4 minutes covered or until tender then turn heat off and set aside temporarily 4. In a medium pan over medium heat, add olive oil and saute shredded cabbage for 3 minutes or until tender 5. In a medium mixing bowl add chicken thighs, ground chicken, sauted shredded cabbage, spices, salt and pepper 6. Mix well until fully integrated 7. Set aside temporarily For Cabbage Rolls: 1. Place 1 cup of Cabbage Filling near the steam end of full cabbage leaf 2. Curl stem end over filling, fold in ends then roll cabbage until Cabbage Filling is enveloped on all sides Note: To prevent cabbage roll from unraveling, place toothpick through outer fold and into center of cabbage 3. -

Dining in Warsaw — Hints for ETAPS 2003 Participants — Andrzej TARLECKI The ETAPS Team Institute of Informatics Warsaw University, Poland. Foreword About the only complaint on ETAPS’02 in Grenoble I heard concerned the fact that no list of restaurants was readily available. Since this was considered a defect in France, I realised immediately that this might be even more of a problem in Poland. So, one of the first resolutions of the ETAPS’03 team was that a list of Warsaw restaurants must be made available for participants. Indeed, you will find more than one such list among the tourist material provided. I looked at them though and realised that they all are so dry: I wouldn’t be able to make up my mind where to go for dinner on this basis. Hence, additionally stimulated by an old, classical paper by Fernando Orejas written I believe for ICALP’83 in Barcelona (once ETAPS’03 is over, you should really look forward to ETAPS’04!), I decided to try to write down at least a few random hints to help. I must admit that I have no good idea how to start, or how to organise whatever I might be able to suggest. I guess I will try to first hint on typical Polish dishes you might encounter in a restaurant menu. Here, the order is pretty obvious: starters, soups, main course, desserts. Then I will try to list some Warsaw restaurants that might be worth thinking about. Basically, the list will be arranged by moving from one area to another, with an occasional insert on some specific motif. -

LAZY CHEESE DUMPLINGS / Kopytka Recipe / Przepis Separate the yolks from the egg white / Oddzielić żółtka od białka Whip the egg white / ubić białka Add the yolks into the cottage cheese and season it with the nutmeg. / Dodać żółtka do sera i przyprawić z gałką muszkatułową. Add the whipped egg white into the yolks and stir it slightly. / Dodaj ubitą pianę do żółtek i lekko ją wymieszać. Add some flour and knead it, but remember not to make it too hard. / Dodać mąkę i zagnieść ciasto, ale pamiętaj, aby nie dokonać tego zbyt mocno Divide the dough into two parts. Roll each part into a roller than is not thicker than 2 cm. Cut the rollers into small pieces / Ciasto podzielić na dwie części. Rolki każdej części w walcu nie jest grubsza niż 2 cm. Rolki należy ciąć na małe kawałki. Boil water with salt / Zagotować wodę z solą When the water boils add the dumplings gently / Gdy woda wrze dodać delikatnie pierogi. Be careful not to burn yourself / Należy uważać, aby się nie poparzyć Cook everything for 2 minutes and then take the dumplings out of the water / Gotować wszystko przez 2 minuty, a następnie Wyjąć pierogi z wody. Make a frying pan hot and put some breadcrumbs on it. Make it a lightly brown. Add some butter and keep it on the frying pan for a moment so the breadcrumbs become golden. Put the dumplings onto the plate and sparkle them with the breadcrumbs. Add cottage cheese onto the top. / Roztopić masło a wraz z nim bułkę tartą.
