Trim woody ends of asparagus and toss spears with oil. Spread evenly Salt and pepper on a baking sheet lined with foil or parchment paper. Sprinkle asparagus with salt, pepper 2 lemons and cheese. Halve one lemon and squeeze the juice over the coated asparagus. Cut the lemon halves in half again and place them on the sheet to roast with the vegetables. Bake about 8 minutes, or until cheese starts to brown. EDDIE'S TIP TO SERVE For a cheesier dish, replace Cut the remaining lemon in half to garnish the serving platter.
