Selected Rose-Scented Pelargonium Recipes from The Herb Society of America CHOCOLATE ROSE-SCENTED SOUFFLÉ Originally I tried preparing this recipe with rose water, but the flavor was not strong enough. Rose syrup is good in this recipe, however cooking down fresh organic rose petals takes longer than the following simple syrup. By all means, try rose syrup if you have some on hand. To make rose geranium syrup, combine 1 cup water with 1 cup sugar and about 10 or 12 rose geranium leaves in a small saucepan, bruising the leaves against the side of the pan with a spoon. Place over moderate heat and bring to a boil. Cover, remove from heat and let stand for at least 30 minutes. Remove the leaves and squeeze them into the syrup to extract their flavor. This syrup can be made ahead and kept in the refrigerator for up to 1 month or frozen for up to 1 year. You can make other herb-flavored syrups in the same manner. Mint-scented geranium, orange mint, peppermint, spearmint, or anise hyssop would be good in this recipe; use about five 4- or 5-inch sprigs in place of the geranium leaves. Serves 6 to 8 ½ cup half-and-half cream 4 ounces semisweet chocolate, broken into pieces 1 ounce unsweetened chocolate, broken into pieces ¼ cup sugar 2 pinches salt 5 extra-large eggs, separated ¼ cup rose or rose geranium syrup Whipping cream Organic rose geranium flowers, rose petals or candied rose petals Preheat the oven to 375ºF. Generously butter six 1-cup ramekins or custard cups and sprinkle lightly with sugar. -

Highland Park 12yr (40%) From Scotland’s northernmost distillery comes a full flavoured Malt. With a nose of malt, sherry and peat, a palate of smoke, heather and other earthy elements. Highland Park 15yr (43%) Highland Park 15 has a remarkable complex nose with notes of camphor, peat and citrus fruits and flowers. The drying sensation on the finish leaves a rich smoky feeling and the immediate desire to refill your glass. Highland Park 18yr (43%) Burnished gold in colour with a rich, mature oak and aromatic smoke aroma. It has a rich, full flavour, honey and peat taste and a soft, round and long finish. Highland Park 21yr (47.5%) Drawing its incredible character from predominantly American oak casks which have been seasoned with sherry, this 21 year old is a truly dynamic whisky with an intensely fruity and spicy centre, surrounded by complex layers of candied orange peel, dark chocolate and rich, slightly drier smoke. A malt that rewards patience and delivers experience like no other. Highland Park 25yr (50.7%) With its golden dark red colour and very rich, mature oak, chocolate fudge aroma, this whisky is universally acclaimed, by the critics as one of the great single malts. PAGE 89 • Articles • Distilling Tradition: The Traditionalization of Craft Moonshine at Bear Wallow Distillery CAROLINE HUNDLEY MILLER Indiana University, Bloomington Abstract: Moonshine has traditionally been defined by the illicit nature of its production. Increasingly micro-distilleries are basing their business on the production of “legal moonshine”—legally produced un-aged whiskey labelled by the distillers as moonshine. This paper draws primarily on ethnographic work at Bear Wallow Distillery to understand how the owners create a destination distillery by connecting their legal moonshine and distillery experience to a local moonshining tradition and a broader rural American imaginary. It will also explore issues of traditionalization and commodification of heritage through examining how micro-distilleries rely on a perceived connection with an “authentic” moonshine tradition even as they seek to challenge traditional definitions of moonshine in the development of their own moonshining tradition. Bear Wallow Distillery is a family-run craft micro-distillery in Gnaw Bone, Indiana, nestled in the hills of Brown County. Brown County, situated about an hour south o f Indianapolis, is a popular tourist destination, especially for outdoor recreation. Its beautiful outdoor attractions include Hoosier National Forest, Brown County State Park, Yellowwood State Forest, Lake Monroe, and Lake Lemon. The distillery opened in 2014 and is owned and operated by Susan Spagnuolo. The distillery is truly a family-run business: Susan’s son Adam is the head of production, her son Jon is in charge of marketing and creates all the labelling and logos, and her husband Mike works at the distillery entertaining customers with highly engaging tours on the weekends. -

The 25 Most Important Bourbons Ever Mad If you asked a spirits expert a quarter century ago to name the most important bourbons ever made, they might have wondered whether America’s home-grown whiskey deserved such analytical consideration. Bourbon was in the doldrums, unappreciated and underdrunk. But today, thanks to a boom that shifted into high gear around the turn of the century, bourbon is arguably the most talked-about, most obsessed-over and most in-demand spirit in the world. To better assess how we got here, we consulted with 23 bourbon experts, including distillers, journalists, authors, whiskey-bar owners and one whiskey-centric-liquor-store proprietor. Each participant named five to ten bourbons that made a difference—not their favorite bourbons, or the ones they thought tasted best, but those bottles that were influential, innovative or otherwise held a significant place in bourbon history. They were allowed to reach way back to pre-Prohibition years, cite bourbons they could never have tasted, and yes, in the case of distillers, include their own creations. (One self-serving endorsement would not land them a spot on this list, however, as every bourbon here received multiple votes.) The final order was determined strictly by the votes received. There were a number of ties in the lower rankings. In those cases, editorial judgment determined final rankings. In a few instances, the panelists indicated complete lines of bourbons that bore the same name, not just a single bottling. In other cases, panelists pointed out different bottlings within a single line. As the arguments behind these choices were often similar, these votes were sometimes combined and placed within the rankings as a bourbon label’s complete line. -
