Spice – Coastal Speciality Restaurant ALL SPICE – COASTAL SPECIALITY RESTAURANT All spice brings to you a love story of coastal culture and food which depicts the traditional family dining. Our Chefs travelled into the homes and villages along the coast in search for traditional recipes and authenticity in flavors. Our first stop brings to you a Maharashtrian delight ‘TAMBDA RASSA’ a traditional lamb curry made with Malvani spices. As we travel down south, Goa is a must stop enchanting the taste buds which has Portuguese influence. The ‘GOAN BAKED CRAB’ need I say more. The next stop being Coorg, rightly called as the Scotland of India. Our chef travelled into the heart of the state to find the age old recipe of the famous ‘COORGI PORK ROAST’. Our last stop but defiantly not the least, God’s Own Country. Famous for the traditional clay pot cooking, a century old technique. He sat behind a desk in his sparsely furnished office on Beach Road. Abdulbhai is reading a Gujarati newspaper, while one of his younger brothers is talking on the phone in Hindi to a client from Bombay. The office is quiet and so is business: our conversation is only interrupted by the occasional friend who peeps into the office to greet Abdulbhai. He begins: Business is dead, all the godowns (warehouses) along the beach are closed; all the other exporters have closed down. But at my father’s time it was all different. During the trade season, there would be hundreds of boats anchored offshore, with barges full of goods going to and fro. There were boats from Bombay, from Gujarat, from Burma and Ceylon, but most of them belonged to Arabs. Down the road there were the British warehouses, and on the other end there is the Beach Hotel, only Britishers stayed there. The beach front was busy with carts and lorries and there were hundreds of Arab sailors walking up and down. The Arab boats arrived as soon as the monsoon was over, in October, and the last left the following May, before the rain started.

Chavadi ABSTRACT Today women are not only playing the role of hardcore ‘housewives’, they are also playing a different role of ‘chief purchasing officer’ and controlling 85% of buying decisions. Most of the women are employed and they want to save time in cooking and yet maintain natural taste. In this modern era, instant food products play a vital role in satisfying this attitude of modern women. A lot of studies have been conducted by many researchers, practitioners and professional on behaviour of consumers towards instant food products but only a few studies have been conducted on specific for women buying behaviour. In this context, a study on women buying behaviour was deemed to be important. This paper makes an attempt to understand the women’s purchase behaviour along with an attempt to know what factors play a significant role in her purchase behaviour.   • Kerala Cuisine
    KERALA CUISINE The cuisine of Kerala is linked in all its richness to the history, geography, demography and culture of the land. Because many of Kerala's Hindus are vegetarian by religion (e.g., brahmins or namboodiris,Nairs etc.), and because Kerala has large minorities of Muslims and Christians that are predominantly non-vegetarian, Kerala cuisine has a multitude of both vegetarian and non-vegetarian dishes. Like other South-Indian cuisines, Kerala cuisine (called pachakam in Malayalam) is predominantly spicy. Coconuts grow in abundance in Kerala, and consequently, grated coconut and coconut milk are widely used in dishes and curries. Kerala's long coastline and strong fishing industry has contributed to many fish-based delicacies, particularly among the Christian community. HISTORICAL AND CULTURAL INFLUENCES Pre-independence Kerala was split into the princely states of Travancore and Kochi in the south, and the Malabar district in the north; the erstwhile split is reflected in the cuisines of each area. Malabar has an array of non- vegetarian dishes such as pathiri (a sort of rice-based pancake, usually paired with a meat curry), porotta (a layered flatbread), and the kerala variant of the popular biriyani. In contrast, traditional Travancore cuisine consists of a variety of vegetarian dishes using many vegetables and fruits that are not commonly used in curries elsewhere in india including plantains, bitter gourd ('paavaykka'). Amorphophallus ('chena'), Colocasia ('chembu'), Ash gourd ('kumbalanga'), etc. Garlic is predominantly used in south-kerala dishes as well. In addition to historical diversity, the cultural influences, particularly the large percentages of Muslims and Syrian Christians (also see Syrian Christian Cuisine of Kerala) have also contributed unique dishes and styles to Kerala cuisine.
