[email protected] Milk and dairy products are present in countries all over the world. They exist under several forms depending on type of milk, climate, level of milk production, type of transformation, social and cultural developments, local economy and food habit of people. The objective of this presentation is to show some examples describing the diversity in biochemical compositions of milks from different species, milk management and technological practices which ultimately lead to a huge diversity in dairy products.
