    France Few regions can claim the fame and admiration that Burgundy BURGUNDY has enjoyed since the second century. Comprised of the Chablis, Côte d’Or, Côte Chalonnaise, Mâconnais and Beaujolais regions, Burgundy occupies a long and narrow stretch of vineyards in eastern France. The critical effect of terroir in Burgundy is expressed in its complex classification system. • Vineyards are divided into separate appellations along terroir France boundaries; the full range of classification levels from broadest to the most distinguished follows: District (e.g. Beaujolais or Chablis), Village (e.g. Pommard), Premier Cru (e.g. Pommard les Rugiens) and Grands Cru (e.g. Clos Vougeot). • As a result of Burgundy’s rules of inheritance, vineyard ownership is quite fragmented, with multiple owners for most crus. The Clos de Vougeot vineyard, for example, is split between 80 different owners. • Though soils vary, clay and limestone predominate in the Côte d’Or and granite is common in Beaujolais.     Clos de Vougeot 2015 Grand Cru- 100% Pinot Noir Clos Vougeot is a large vineyard (50 hectares - 125 acres) located bewteen Vosne-Romanée and Chambolle-Musigny. Joseph Drouhin owns two parcels in this mythical vineyard, both on a mild incline with a due east exposure. History & Tradition: • The most glorious and famous of all Burgundy vineyards. • The Clos (French for “enclosure”) was first planted and surrounded by a wall at the end of the 12th Century by the monks of Citeaux. They built a castle which is now the seat of the Confrérie des Chevaliers du Tastevin. • Soil: very diverse and a true mosaic, a mix of clay and limestone in various pro- portions. Drouhin estate: 0,90 ha. (2.25 acres). Average of the vines: 31 years. Viticulture: • Biological cultivation since 1990; biodynamic cultivation a few years later. • Soil maintenance: compost of manure and white wood, sometimes guano (sea- bird manure used as fertilizer). Soil is ploughed either by tractor or by horse to manage spreading of weeds. • Treatment: only authorized products for biological cultivation are used: infusions and macerations of plant materials, sulfur and copper, powdered rock. Natural predators are not eliminated. • Plantation density: from 10,000 to 12,500 stocks/ha in order to extract all possible nuances from the ter- roir and limit the production of each vine stock. Pruning: Guyot. • Yield: we aim to keep our yields low, more in line with the previous regulation: around 20% less than al- lowed by the current law. Like a few of his colleagues, he compared ’16 and ’15 to ’10 and ’09, noting that ’15 and ’09 gave us our most mature grapes ever but that “in ’16 and ’10 we were surprised at the successful results.” He went on: “People learned from their mistakes in 2009 and did better in 2015; in this very warm vintage, many very fresh, fine wines were made. The ‘16s were born by Caesarean: the baby was not sitting well, mom was hysterical and the doctors were in panic. So we cut out the baby and he’s a genius.” The key in 2016, said Saouma, is how to bring out the tannins and keep enough energy without allowing the wines to dry out by the time they go into bottle. “There’s a fresh, mineral as- pect to the vintage, but I’m a bit concerned that if we make wines with tannins that are too supple, we’ll lose length, but if we go in the direction of tannins, we risk having dry wines.” Still, he maintained that alcohol levels are “classical” (i.e., below 13.5%) and that acidity levels and pHs are good.

    Clos de Vougeot 2014 W I N E D E S C R I P T I O N Domaine Jean Grivot is among the great names in Burgundian wine. Étienne Grivot and his wife Marielle took over from Étienne’s father Jean Grivot in 1987. The vineyards are densely planted and farmed organically “sans certification” while the aim in the cellar is for balance and clear expression of terroir. Jean Grivot’s 38.3 acres spread across 22 appellations with vineyards in the communes of Vosne-Romanée, Vougeot, Chambolle-Musigny, and Nuits-Saint-Georges. Besides the three grand crus, there are 8 premier crus including the much lauded Les Beaux Monts and Suchots in Vosne-Romanée. The grapes are completely de-stemmed and fermentation is spontaneous. A B O U T T H E V I N E Y A R D Clos de Vougeot grand cru was acquired by Étienne’s grandfather, Gaston Grivot, in 1919. The total holding is 4.6 acres from the middle of the vineyard to the lower wall and the average vine age is 40 years old. A good Clos de Vougeot should be a complete wine without any one feature standing out. It is a perfect balance of power, aroma, and flavor. W I N E P R O D U C T I O N The grapes are destemmed and maceration à froid usually lasts just a day or two. The alcoholic fermentation is spontaneous and malolactic fermentation occurs in barrel. Depending on the vintage, the proportion of new oak is around 40-70% percent for the grands crus.
