The walks provide a wonderful balance of quiet country lanes, vineyard tracks and woodland trails taking in sleepy, unspoilt villages, majestic vine-clad hills and ancient oak forest. Your luggage is transferred and route notes and maps are provided. The route notes contain a 24-hour emergency assistance telephone number. Adult min age: 18 Child min age: 12 Child max age: 17 Itinerary Land Only Start City: Beaune End City: Beaune Land Only Itinerary Day 1 Arrive in Beaune Take time to discover this lovely city and marvel at the multi-coloured roofs of the 15th-century Hospices de Beaune just two minutes from your hotel. Day 2 Beaune to Gevrey-Chambertin Cross the limestone escarpment of the Côte d’Or with wonderful views across the plain. Descend to the village of Chenôve and wind your way along the Chemin des Grand Crus to Gevrey-Chambertin. Stay the night at the Rotisserie de Chambertin. Meals included: Breakfast Distance covered: 14 km / 9 miles Day 3 At Gevrey-Chambertin Options today include taking the train to Dijon or Beaune. In Dijon stroll the history-lled streets and alleyways with 12th-15th century timbered houses to see the Church of Notre Dame, cathedral and the grand Palace of the Dukes of Burgundy. In Beaune marvel at the multi-coloured roofs of the 15th century Hospices de Beaune. Meals included: Breakfast Day 4 Gevrey-Chambertin to Vosne-Romanée Leave the vines behind today and head up into the woods where you'll follow an old disused railway track. Wind through shady, protected woodland before emerging back into the sun-soaked vines behind tranquil Morey-St-Denis, a good place to enjoy a coffee break. Continue on through the sleepy village of Chambolle-Musigny to Vougeot and visit the historic Chateau du Clos de Vougeot which produces one of the world's most celebrated Grand Cru wines. Meals included: Breakfast Distance covered: 12 km / 7.5 miles Day 5 At Vosne-Romanée There are two options for your 'rest day'. You could walk up through the woods to a secluded chateau in the hills, behind the vineyards of Vosne-Romanee - here you have the opportunity to learn about trufe hunting in the chateau grounds with Thierry, his son Yann and their specially trained dog Elfe (Thursday to Monday only). Alternatively take a stroll through the vines to the world-famous medieval town of Nuits-St-Georges. Explore the town and enjoy lunch here, then maybe a spot of wine tasting in one of the many local caves. Meals included: Breakfast Day 6 Vosne-Romanée to Beaune A 25-minute transfer takes you to Pernand-Vergelesses to follow vineyard tracks past the Hill of Corton, once owned by Holy Roman Emperor Charlemagne. Then it's on to medieval Savigny-les-Beaune for a morning coffee next to the impressive chateau, which houses a collection of vintage cars, motorbikes and planes. Walking up through woodland, you emerge above Beaune with spectacular views over the town and its surrounds. Descending into the vineyards you can visit the Parc de la Bouzaise or Beaune before continuing on to the hotel. Single supplement from $533.20 USD Food & Transport Eating & Drinking France is a country renowned for its food and wine and this trip should give you the full avour of Burgundy. Suggestions of what to do for lunch are in the cycling notes. Self-guided cycling lends itself perfectly to picnics, it is always a good option to pick up some local produce and then pick a spot along your route to stop and eat it. For dinner you will be spoilt for choice; Burgundians are passionate about both their food and wine. Boeuf Bourguignon (a stew with beef in red wine), Escargots à la Bourgogne (snails) and Coq au Vin (chicken braised with wine) are arguably the most famous exports but the prime local ingredients are expertly showcased in countless mouthwatering dishes. Common main ingredients are pigeon, quail, boar, venison and freshwater sh. You will nd many small, independent suppliers offering local pates, cheese, sausages and mustard, synonymous with Dijon. Food markets are a delight to visit - support for individual artisan food producers is something the region excels in. Weather & Seasonality Weather Information Burgundy is situated in the heart of France and usually has warm or hot summers with a continental feel to them. Generally the summer months are warm and dry, with rainfall averaging 6cm per month in July and August. The climate in Spring and Autumn is a mixture of sun and scattered showers with temperatures in the mid 20s (degrees celcius). If no facilities are available there may come a time when you need to go to the loo behind a tree/bush/rock. To avoid leaving toilet paper behind we recommend taking biodegradable dog poo/sandwich bags with you. Once you have done your business you can pop the used toilet roll in here and take it off the mountain or trail at the end of the day and dispose of it when there are appropriate facilities available.     France Few regions can claim the fame and admiration that Burgundy BURGUNDY has enjoyed since the second century. Comprised of the Chablis, Côte d’Or, Côte Chalonnaise, Mâconnais and Beaujolais regions, Burgundy occupies a long and narrow stretch of vineyards in eastern France. The critical effect of terroir in Burgundy is expressed in its complex classification system. • Vineyards are divided into separate appellations along terroir France boundaries; the full range of classification levels from broadest to the most distinguished follows: District (e.g. Beaujolais or Chablis), Village (e.g. Pommard), Premier Cru (e.g. Pommard les Rugiens) and Grands Cru (e.g. Clos Vougeot). • As a result of Burgundy’s rules of inheritance, vineyard ownership is quite fragmented, with multiple owners for most crus. The Clos de Vougeot vineyard, for example, is split between 80 different owners. • Though soils vary, clay and limestone predominate in the Côte d’Or and granite is common in Beaujolais.     Clos de Vougeot 2015 Grand Cru- 100% Pinot Noir Clos Vougeot is a large vineyard (50 hectares - 125 acres) located bewteen Vosne-Romanée and Chambolle-Musigny. Joseph Drouhin owns two parcels in this mythical vineyard, both on a mild incline with a due east exposure. History & Tradition: • The most glorious and famous of all Burgundy vineyards. • The Clos (French for “enclosure”) was first planted and surrounded by a wall at the end of the 12th Century by the monks of Citeaux. They built a castle which is now the seat of the Confrérie des Chevaliers du Tastevin. • Soil: very diverse and a true mosaic, a mix of clay and limestone in various pro- portions. Drouhin estate: 0,90 ha. (2.25 acres). Average of the vines: 31 years. Viticulture: • Biological cultivation since 1990; biodynamic cultivation a few years later. • Soil maintenance: compost of manure and white wood, sometimes guano (sea- bird manure used as fertilizer). Soil is ploughed either by tractor or by horse to manage spreading of weeds. • Treatment: only authorized products for biological cultivation are used: infusions and macerations of plant materials, sulfur and copper, powdered rock. Natural predators are not eliminated. • Plantation density: from 10,000 to 12,500 stocks/ha in order to extract all possible nuances from the ter- roir and limit the production of each vine stock. Pruning: Guyot. • Yield: we aim to keep our yields low, more in line with the previous regulation: around 20% less than al- lowed by the current law. Like a few of his colleagues, he compared ’16 and ’15 to ’10 and ’09, noting that ’15 and ’09 gave us our most mature grapes ever but that “in ’16 and ’10 we were surprised at the successful results.” He went on: “People learned from their mistakes in 2009 and did better in 2015; in this very warm vintage, many very fresh, fine wines were made. The ‘16s were born by Caesarean: the baby was not sitting well, mom was hysterical and the doctors were in panic. So we cut out the baby and he’s a genius.” The key in 2016, said Saouma, is how to bring out the tannins and keep enough energy without allowing the wines to dry out by the time they go into bottle. “There’s a fresh, mineral as- pect to the vintage, but I’m a bit concerned that if we make wines with tannins that are too supple, we’ll lose length, but if we go in the direction of tannins, we risk having dry wines.” Still, he maintained that alcohol levels are “classical” (i.e., below 13.5%) and that acidity levels and pHs are good.

    Clos de Vougeot 2014 W I N E D E S C R I P T I O N Domaine Jean Grivot is among the great names in Burgundian wine. Étienne Grivot and his wife Marielle took over from Étienne’s father Jean Grivot in 1987. The vineyards are densely planted and farmed organically “sans certification” while the aim in the cellar is for balance and clear expression of terroir. Jean Grivot’s 38.3 acres spread across 22 appellations with vineyards in the communes of Vosne-Romanée, Vougeot, Chambolle-Musigny, and Nuits-Saint-Georges. Besides the three grand crus, there are 8 premier crus including the much lauded Les Beaux Monts and Suchots in Vosne-Romanée. The grapes are completely de-stemmed and fermentation is spontaneous. A B O U T T H E V I N E Y A R D Clos de Vougeot grand cru was acquired by Étienne’s grandfather, Gaston Grivot, in 1919. The total holding is 4.6 acres from the middle of the vineyard to the lower wall and the average vine age is 40 years old. A good Clos de Vougeot should be a complete wine without any one feature standing out. It is a perfect balance of power, aroma, and flavor. W I N E P R O D U C T I O N The grapes are destemmed and maceration à froid usually lasts just a day or two. The alcoholic fermentation is spontaneous and malolactic fermentation occurs in barrel. Depending on the vintage, the proportion of new oak is around 40-70% percent for the grands crus.
