DAME Wine List-05.04.18 Copy DAME’S WINE COLLECTION: We’ve gone all in on natural wine because we believe in celebrating farmers and other stewards of the land who work tirelessly to create biodiverse landscapes. Great wine is a transmitter of a certain place and time in history: if made with nothing but grapes, a bottle has the ability to tell us what the soil in the vineyard is composed of, what the weather was like in a given vintage, and what the surrounding flora and fauna are doing. Cover it up with any number of 60-plus legal chemical additives, and what are you left with? Something engineered that no longer transmits its story. The winemakers represented on these pages make wine from their core; with dedication and integrity for the land they farm. We are delighted to share the wines and the stories of folks whose hearts lay in the same vein as our own. These producers represent some of the world’s most unique vineyards and rare heritage grape varietals. We believe sharing these special wines with you is an honest extension of our desire to provide thoughtful hospitality. The bottles below might be the closest representation of how wine was made over 5,000 years ago in the Republic of Georgia…what some may consider the ‘first’ wine ever produced. White grapes are left to ferment on their skins in barrels, steel vessels, or clay amphorae, lending all shades of color from golden yellow to burnt amber, as well as tannin, texture, and loads of complexity. Aromatics and flavors run the spectrum of toasted nuts, farmhouse cider, and mottled fruits. They are a little wink at history and wonderful food wines. There is, however, an extensive list of medical doctors who are winery owners, winegrowers or winemakers. In addition, there are many doctors who have combined their medical background and enjoyment of wine to become advocates of wine as part of a healthy lifestyle. Many Pinot Noir winemakers started out in a career path to become medical doctors. Examples abound, such as Dan Goldfield (Dutton-Goldfield), Natalie West (Foppiano Vineyards), Eric Hammacher (Hammacher Wines), Rod Berglund (Joseph Swan Vineyards), and Cécile Lemerie-Dèrbes (Derbès Wines) According to Wine into Word (James Gabler), the first book about wine was published by Arnaldus of Villanova, who was a physician, surgeon, botanist, alchemist, philosopher, writer, astrologer, lay theologian and counselor to kins and popes. About 1310, Arnald wrote a book on wine, but because the printing press had not yet been invented, his book was initially handwritten. In 1478, his book was translated into German and printed, making it the first book on wine to use this new invention. The first complete book in English on wine was by William Turner (1568), and the first (Sir Edward Berry), the second (Robert Shannon), and third (Alexander Henderson) books in English that discuss modern wines were written by physicians.
