In fact, the Scottish people are more famous for having the most unhealthy diet in Europe than they are for the cuisine itself. This is a shame, however, because as we will discover, the country has many delicious treats to offer us. The most famous is, of course haggis. This gruesome dish, made of a sheep’s heart, liver and lungs wrapped in its stomach and boiled, is actually surprisingly delicious. It has a special place in the hearts of Scottish people and is so loved that each year on Burns Night, a celebration of the national poet Robert Burns, a special ceremony takes place before the haggis is eaten. This involves a poem being read to the haggis as it is cut open, followed by a toast with Scotch whisky. It is served with “neeps and tatties” which is simply turnips and potatoes in the Scots dialect. Scotland is also famous for its great variety of cheeses. Scotland’s climate is well suited to cheese production, and there are dozens of cheese makers across the country. Types on offer include tangy cheddar from the Isles of Bute, Arran, Mull, Gigha, and Orkney, as well as Lockerbie, Stranraer, and Campbeltown on the mainland; Crowdie, a soft cheese that was supposedly introduced by the Vikings in the eighth century; Caboc, a cream cheese rolled in toasted oatmeal; and Dunsyre Blue, rich and spicy with a creamy texture. As far as drinks are concerned, we’ve already mentioned Scotch whisky – probably the most famous in the world – but Scotland also has a long and proud tradition of Gin making, especially in the south of the country.

    This beautiful building has a long history. One of its most fascinating periods saw a private family living within these FOOD MENU walls: Lady Betty Cunningham and her brother, James - Earl of Glencairn. They were close friends with Robert Burns, Scotland’s National Bard who, when seeking publishing approval, used to send his poems to this address, 19 St Andrew Square. Rabbie witnessed a drinking game that involved three lairds drinking themselves under the table. The last man able to blow the ebony whistle was the winner and, as a symbol of his prowess, could exhibit the wee flute as a necklace for the entire week. On this particular occasion, the winner supposedly consumed eight bottles of claret. An inspired Burns wrote, in 1789, a ballad called “The Whistle” - we hope you will enjoy this extract, maybe while savouring a good, old, Scottish Single Malt Whisky. Caboc, Highland Fine Cheeses, Ross-Shire v Made by Ruaraidh (pronounced Rory) Stone in Tain, Caboc (Gallic for cheese) is a double cream cheese from the Highlands which is rolled in pinhead oatmeal. Smooth, rich and milky, it has a good goat’s cheese flavour with a salty finish. Maisie’s Kebbuck, Errington Cheese, South Lanarkshire v The Errington’s have been producing cheese in South Lanarkshire since the 1980s. Selina Errington is the current cheesemaker and it was her father, Humphrey who first made this Kebbuck to impress his new mother in-law (Maisie) who did not like blue cheese. Made from unpasteurised cow’s milk, this semi-hard white cheese is complex and earthy with a nutty finish. Isle of Mull Cheddar, Isle of Mull Cheese, Isle of Mull Chris and Jeff Reade of Isle of Mull Cheese produce an unusual cheddar, made from the milk of cows who are fed on fermented grain from the nearby Tobermory whisky distillery.
