RUDD MT. VEDEER ESTATE 2013 $28/$55/$220 (sauvignon blanc, napa valley) Rudd Mt. Vedeer estate stands out as an exceptional place with unmatched terroir – uniquely situated within Napa Valley with a geologic backbone of volcanic rock weathered into core stone bedrock and alluvial sediments creating iron-rich, well-drained soil ideal for growing grapes. Leslie and susan's vineyards are farmed organically by their own full-time team. Having their own team enables some of the most significant winemaking actions of the year to be made in a focused, adaptive, and timely manner. Most importantly, this control over the vineyards allows them to learn from the cycles of each season and alter their techniques to bring out the unique potential of the estate’s land. RED: (3oz/6oz/bottle) DOMAINE CHARLES AUDOIN 2014 $15/$30/$120 (pinot noir, marsannay) The first estate-bottled wine exited the domaine in 1972, thanks to Charles and Marie-Francoise. In 2000, they placed the family business in the capable hands of their son, Cyril. After enology school and years of hands-on experience in various vineyards around the world, the fifth-generation vigneron was champing at the bit to take over. Cyril has since increasingly focused on vineyard health, growing in a "lutte raisonnée" (reasoned fight) approach, emphasizing traditional techniques like plowing and organic farming save for emergencies. Cyril attributes a great deal of the estate's progress to his father, who despite officially retiring in 2009, "is always out in the vineyards". ROBERT SINSKEY VINEYARDS 'pov' 2015 $15/$30/$120 (merlot/cabernet franc/cabernet sauvignon, carneros) Robert Sinskey Vineyards has been producing incredible wines from cool-climate carneros for the past three decades with a staunch dedication to biodynamic farming and quality. The wines are not manipulated or blended with fruit from any outside source, touting that wine is not 'an athletic event' and is supposed to be 'grown not manu- factured.' This riff on the St. Emilion style is generous, layered, and rich right from the start, with lush fruit tones and well-integrated tannins. SANGUIS 'misfit' 2016 $19/$38/$152 (syrah, santa maria valley) "MISFIT is playful, has a sunny and warm disposition, possesses a cool calmness and mischievous charm; she is exceedingly friendly, and doesn’t judge whether her company on the table used to have legs, wings or roam the oceans, so long as it has substance to stand up for itself, and ideally a bit of a smoky character. This is a very important aspect in the Hojicha tea trade, to obtain the typical “roasted” aroma and, at the same time, to maintain the widely reported beneficial properties of green tea. Abstract: The present study aims at the development and validation of a quali-quantitative headspace solid-phase microextraction gas chromatography–mass spectrometry (HS-SPME GC-MS) method for the analysis of odorants in different Chinese and Japanese green teas. A 65 µm PDMS/DVB fiber was used, and GC-MS was performed on a ZB-5 (30 m × 0.25 mm ID, 0.25 µm film) column. The main odorants in green tea samples were identified and the method was fully validated. Linearity (r2 0.981–0.999), sensitivity (LOQ 0.005–0.04 µg/mL), reproducibility (CV% 3.12–10.37), accuracy (recovery% 79.08–99.17) and matrix effect (ME% −9.5 to +4.5) were determined.

    Sencha – Japan’s green tea Sencha (煎茶) is Japan's most consumed and also the most produced tea variety. This green tea owes its popularity due to the refreshing taste and the numerous variations. Depending on the time of harvesting a Sencha can either get a sweet or tarty taste. For Sencha is usally the outstanding variety Yabukita used which makes up about 77% of all cultivated tea cultivars. But, depending on terroir, are also completely different varieties such as Yutakamidori or Asatsuyu used. Varieties of Sencha Sencha can be divided into many different categories. But mainly, it is is distinguished by harvest time and steaming duration. A very early harvested Sencha for example is generally of a higher quality and the tea leaves are finer than a later harvested (eg. Bancha). Asamushi (浅 虫), Sencha which was only slightly steamed (about 30s). Chumushi, Sencha with medium steaming (30-90s). This is the standard steaming time. Fukamushi (深 蒸し), deep steamed Sencha (1-2 min). It is often marketed as Fukamushicha. Jo Sencha (上 煎茶), fine Sencha. Toku Jo Sencha, (特 上 煎茶), extra fine Sencha. Hachijuhachiya Sencha (八 十八 夜), tea that was harvested 88 days (literally nights) after Risshun, the beginning of spring. Shincha (新 茶) is the first harvest of a year. Kabusecha or Kabuse Sencha is like Gyokuro a shaded tea. It's often regarded as a own tea variety. Production of Sencha Sencha is nowadays mostly harvested by machine and immediately steamed in order to prevent oxidation (kill green). This method, also called the Japanese method, ensures that the tea tastes very fresh.

    4th Class, Healing the Five Emotions January 4th & 15th at Ruth Sager’s Review of Support and Control Cycles The generating cycle (also called the mother-child relationship) describes a process of mutual support from transformation to transformation. For example, by having a good diet and eating in moderation (benefiting the earth element) we will have energy to support our metal element (lungs). The metal transformation provides good immunity and facilitates proper circulation of our energy. Thus the cycle continues, each transformation supporting the next in a mother-child relationship. Problems may arise when either the mother is weak (cannot provide for her son) or the son is too immoderate and wastes all of mother’s resources. A real life example is illustrated by a stagnant liver from too much stress and an unhealthy lifestyle. A stagnant liver cannot feed the heart, leading to depression, anxiety, etc. and it will pull too much energy from the kidneys, leading to fatigue, sexual problems, and more. A poor diet weakens the lungs for example, leading to asthma and/or allergies, which is why people with allergies need to watch their diet and particularly avoid dairy food. The control cycle (also called the grandparent-grandchild relationship) can be best described as the body’s backup plan. When the mother can no longer control her son, she asks the grandparent for help. To continue with the liver stagnation example (i.e. stress) – the kidneys are weakened in part because they use their water to try to control the fire (heart – anxiety) as the liver is no longer providing the proper generative function.
