Darioush Khaledi was instilled at an early age with the winemaking craft of his father, inspired by the literary city of Shiraz. he became a lifelong collector, seeking out old world wines infused with tradition and energized by modern technique. BOYER-MARTENOT 'en'L'ormeau' 2017 $24/$48 (chardonnay, meursault) Vincent Boyer can be found in his vineyard with his hands on the vines and in the soil, honoring the legacy of the meursault appellation and the four generations of his family that cultivated the land before him. Eschewing the blended style favored by many meursault winemakers, boyer focuses on single-vineyard wine from his 'villages' and the result sings for itself. his wine expresses an entrancing resonance and demonstrates the splendor of simplicity. RUDD MT. VEDEER ESTATE 2013 $28/$55/$220 (sauvignon blanc, napa valley) Rudd Mt. Vedeer estate stands out as an exceptional place with unmatched terroir – uniquely situated within Napa Valley with a geologic backbone of volcanic rock weathered into core stone bedrock and alluvial sediments creating iron-rich, well-drained soil ideal for growing grapes. Leslie and susan's vineyards are farmed organically by their own full-time team. Having their own team enables some of the most significant winemaking actions of the year to be made in a focused, adaptive, and timely manner. Most importantly, this control over the vineyards allows them to learn from the cycles of each season and alter their techniques to bring out the unique potential of the estate’s land. RED: (3oz/6oz/bottle) DOMAINE CHARLES AUDOIN 2014 $15/$30/$120 (pinot noir, marsannay) The first estate-bottled wine exited the domaine in 1972, thanks to Charles and Marie-Francoise. In 2000, they placed the family business in the capable hands of their son, Cyril. After enology school and years of hands-on experience in various vineyards around the world, the fifth-generation vigneron was champing at the bit to take over. Cyril has since increasingly focused on vineyard health, growing in a "lutte raisonnée" (reasoned fight) approach, emphasizing traditional techniques like plowing and organic farming save for emergencies. Cyril attributes a great deal of the estate's progress to his father, who despite officially retiring in 2009, "is always out in the vineyards". ROBERT SINSKEY VINEYARDS 'pov' 2015 $15/$30/$120 (merlot/cabernet franc/cabernet sauvignon, carneros) Robert Sinskey Vineyards has been producing incredible wines from cool-climate carneros for the past three decades with a staunch dedication to biodynamic farming and quality. The wines are not manipulated or blended with fruit from any outside source, touting that wine is not 'an athletic event' and is supposed to be 'grown not manu- factured.' This riff on the St. Emilion style is generous, layered, and rich right from the start, with lush fruit tones and well-integrated tannins. SANGUIS 'misfit' 2016 $19/$38/$152 (syrah, santa maria valley) "MISFIT is playful, has a sunny and warm disposition, possesses a cool calmness and mischievous charm; she is exceedingly friendly, and doesn’t judge whether her company on the table used to have legs, wings or roam the oceans, so long as it has substance to stand up for itself, and ideally a bit of a smoky character. Misfit is a lovely example of the Santa Ynez Valley’s many capabilities, composed of it’s Syrah core, generous splashes of perfumed Grenache and wild Cabernet Franc, and a bit of muscle and “exotiques” from Petite Sirah and Viognier, respectively." - Matthias Pippig, winemaker グラスワイン WINES BY THE GLASS SPARKLING WINE & CHAMPAGNE: CANARD-DUCHÊNE 'brut authentic', nv $30 (champagne, france) CAVES SAO JOAO 2018 'bairrada espumante bruto rosé' $14 (beiras, portugal) BORGOLUCE PROSECCO treviso DOC brut, nv $ 13 (veneto, italy) WHITE: O FILLO DA CONDESA albarino, 2018 $ 12 (rias baixas, spain) CAPOLINO PERLINGIERI 'nembo campania' fiano, 2018 $15 (campania, italy) SEA PEARL sauvignon blanc, 2018 $ 13 (marlborough, new zealand) WEINGUT STADT KREMS grüner veltliner, 2018 $ 13 (kremstal, austria) DOMAINE JEAN MARC BERNHARD riesling, 2015 $14 (alsace, france) MAISON FOUCHER LEBRUN sauvignon blanc, 2018 $18 (sancerre, france) ETIENNE BOILEAU chardonnay, 2018 $16 (petit chablis, france) KNUTTEL 'kate's pas de deux' chardonnay, 2018 $16 (russian river, california) ROSÉ: LIONEL OSMIN & CIE ‘la vie en rosé‘ négrette, 2018 $ 13 (toulouse, vin de france) RED: GLATZER blaufränkisch 2017 $ 13 (carnuntum, austria) SEAN MINOR pinot noir, 2017 $17 (sonoma coast, california) ELLENA GIUSEPPI nebbiolo doc, 2017 $17 (piedmont, italy) MAAL 'biutiful' malbec, 2017 $15 (mendoza, argentina) MOMMESSIN MORGON COTE DU PY gamay, 2016 $16 (beaujolais, france) FREDERIC BROUCA grenache/syrah/carignan, 2017 (languedoc-roussillon, france) $15 MATCHBOOK cabernet sauvignon, 2017 $16 (dunnigan hills, california) CHÂTEAU LAMOTHE cab sauv/ merlot 2016 $17 (bordeaux, france) ボトル一覧 BOTTLE LIST 酒 SAKE SPARKLING: OTTER FEST SPARKLING NIGORI $75 sparkling junmai daiginjo 360mL dassai, yamaguchi SEASIDE SPARKLING $90 sparkling junmai 500mL fukucho, hiroshima HONJOZO: MUKANSA SUPER-DRY $65 honjozo 720mL ichinokura, miyagi EIGHT PEAKS $85 tokubetsu honjozo 720mL hakkaisan, niigata KIMOTO/YAMAHAI: SNOWFLAKE $65 kimoto junmai 720mL dewanoyuki, yamagata RED LABEL $86 yamahai junmai muroka genshu 720mL tamagawa, kinki TOKYO KURABITO $48/$108 kimoto junmai ginjo 300mL/720mL sawanoi, tokyo TRUE VISION $ 125 yamahai tokubetsu junmai muroka genshu 720mL manatsuru, fukui TUXEDO $195 kimoto junmai daiginjo sohomare, tochigi JUNMAI: DANCE OF DISCOVERY $35 junmai 300mL rihaku, shimane NINE-HEADED DRAGON $82 junmai 720mL kokuryu, chubu NOBLE ARROW $105 tokubetsu junmai 720mL taka, yamaguchi NIGORI: SACRED MIST $40/$85 honjozo nigori 300mL/720mL miyashita, okayama DEWATSURU $42 junmai nigori 300mL dewatsuru, akita DREAMY CLOUDS $90 tokubetsu junmai nigori 720mL rihaku, shimane UMESHU: AKASHI-TAI SHIRAUME $75 plum ginjo 500mL hyoga SOUTHERN BEAUTY $145 plum junmai 720mL nanbu bijin, iwate JUNMAI GINJO/GINJO: BULZAI $44 nama-chozo ginjo 300mL manotsuru, niigata RYOSHIZAKE $62 junmai ginjo 300mL nihonkai, shimane DRUNKEN SNAPPER $95 ginjo nama genshu 720mL narutotai, tokushima EUPHORIA $44/$90 junmai ginjo 300mL/720mL jokigen, yamagata ODAYAKA $95 junmai ginjo 720mL kinpou, fukushima MOON ON THE WATER $50/$112 junmai ginjo 300mL/720mL fukucho, hiroshima BRIDE OF THE FOX $ 115 junmai ginjo 720mL kanbara, niigata SUNRISE dewasansan $ 115 junmai ginjo 720mL toko, yamagata JUNMAI DAIGINJO/DAIGINJO: HEAVEN & EARTH $ 115 junmai daiginjo 720mL ten to chi, niigata OTTER FESTIVAL 50 $ 120 junmai daiginjo 720mL dassai goju, yamaguchi PEARLS OF SIMPLICITY $ 125
