How to Buy Eiswein Dessert Wine Eiswein is a sweet dessert wine that originated in Germany. This "late harvest" wine is traditionally pressed from grapes that are harvested after they freeze on the vine. "Eiswein" literally means "ice wine," and is called so on some labels. If you want to buy eiswein, know the country and the method that produced the bottle to find the best available "ice wine" for your budget. Does this Spark an idea? SYBILLE KUNTZ Weingut 2011 SYBILLE KUNTZ Mosel-Riesling Trockenbeerenauslese edelsüss Alcohol 7,0 Vol%, Residual sugar 380,0 g/l, Acidity 11,6 g/l. General: The Trockenbeerenauslese is the final step in the quality pyramid. All our grape pickers are briefed right at the beginning of harvest to view and sort the right berries already in the vineyards into the seperate boxes. The hand selected raisins have to be so dry that you can hear them when they drop into the crate. Collected from the Niederberg-Helden, a single vineyard site (designated an Erste Lage or “First Growth“ site). The vines were planted in the 1920’s and are mostly ungrafted. At 70% steepness of the slope the midday sun is positioned almost vertically above the vines and the Mosel River reflects the sun with mirror-like intensity. This causes the dehydrati- on of the grapes to the state of raisins. In 2011 our Trockenbeerenauslese reached an Oechsle level of an amazing 220° (Specific gravity 220° = 1,220 kg/l or 50,0 ° Brix). It fermented to 7,0% Alcohol and had still 380 g/l residual sugar. To get 400 l of juice we have picked, viewed and sorted way over 1,000,000 raisins. Fermentation for the yeast is very difficult, because the juice is so thick. It took a long time, was very slow and finished late into the year 2012. This rare Riesling is not available in every vintage. It is undeniably the very best that Mosel Riesling grapes are able to bring forth. These wines have built the world-wide reputation of Mosel Rieslings. -

Mosel Fine Wines “The Independent Review of Mosel Riesling” By Jean Fisch and David Rayer Dr. Hermann Weingut Dr. Hermann (Erden – Middle Mosel) Christian Hermann is satisfied with his 2018 vintage: “We had seven weeks without rain in June and July until, at last, some rai n came. On the plus side, we had simply no issue with diseases. However, a few younger vines suffered from the drought. Fortunately, most of our holdings are planted with old vines whose roots go deep and can still find some water. Nevertheless, we started our harvest as early as ever, on September 25, and it took us a full five weeks to complete it, despite working flat out every single day. We started with Kabinett right from the start and this on higher grounds. It is crucial for me that my Kabinett do not exceed 82-85° Oechsle and this is why we started with Kabinett right away. Then we brought in the fruit for our Estate wines before turning to our high-end wines. Botrytis did not really develop but we started to select the dried up berries right from the start of the harvest. This allowed us to bring in some of noble-rot berries, but not many. Yields were good and, with hindsight, I’m really happy that we bought a second press just before the harvest. This allowed us to work the grapes immediately and not have to work every night until 2am. We left a sizeable parcel out for Eiswein but the grapes started to rot in the plastic cover, so we eventually gave up. -

General: The Beerenauslese is the next step up from the Auslese level a berry selection from fully ripe and sundried Riesling grapes, selected on site, berry for berry. All our grape pickers are briefed right at the beginning of harvest to view and sort the right berries already in the vineyards into the seperate boxes. This causes the dehydration of the grapes to the state of raisins. In 2011 our Beerenauslese reached an Oechsle level of an incredible 160° (Specific gravity 160° = 1,160 kg/l or 36,5 ° Brix). It fermented to 13,5% Alcohol and had still 111 g/l residual sugar. The mazeration time in the small hydropress takes 1–2 hours to stimulate the natural aroma extraction. Sedimentation is 12 hours then the juice is moved to the fermenter. Vinification is in a small stainless steel tank at 15° C. Fermentation lasts 12 weeks. After racking the wine matures on its fine lees until the diatomaceous earth filtration at the end of March. -
