Tasty Lentil Tacos

When my husband's cholesterol numbers rose, I quickly lowered the fat in our family's diet. Finding dishes that were healthy for him and yummy for our ve children was a challenge, but this fun taco recipe was a huge hit with everyone. — Michelle Thomas, Bangor, Maine

TOTAL TIME: Prep: 15 min. Cook: 40 min. YIELD: 6 servings. Ingredients 1 teaspoon canola oil 1 medium onion, nely chopped 1 garlic clove, minced 1 cup dried lentils, rinsed 1 tablespoon chili powder 2 teaspoons ground cumin 1 teaspoon dried oregano 2-1/2 cups vegetable or reduced-sodium chicken broth 1 cup salsa 12 taco shells 1-1/2 cups shredded lettuce 1 cup chopped fresh tomatoes 1-1/2 cups shredded reduced-fat cheddar cheese 6 tablespoons fat-free sour cream

Directions

1. In a large nonstick skillet, heat oil over medium heat; saute onion and garlic until tender. Add lentils and seasonings; cook and stir 1 minute. Stir in broth; bring to a boil. Reduce heat; simmer, covered, until lentils are tender, 25-30 minutes.

2. Cook, uncovered, until mixture is thickened, 6-8 minutes, stirring occasionally. Mash lentils slightly; stir in salsa and heat through. Serve in taco shells. Top with remaining ingredients.

WorkForce 1 is currently offering their services 100% virtual/remote at this time. Clients must either interview virtually (i.e Skype, FaceTime) or at minimum have a phone where WF1 can conduct a phone screening. They are also still offering Job Readiness/Career Service workshops virtually (i.e. Resume Upgrade, Mock Interview, & Career Advisement). If you have never been to a Workforce1 Center, below you will find "How to register for Workforce1 Online" which provides a step by step process on how to register online (all NEW customers need to register).

Woman In Need - Shelter (BK): Residential Aid - The Residential Aide is responsible for providing security and safety for all clients and staff. Ensures that all residents are observing site rules. ($15-19/hr.)

Maintenance Worker - The Maintenance Worker is responsible for maintaining the interior and exterior of the building, ensuring a safe, clean and pleasant environment for all staff, residents and visitors. ($15-18/hr.) Porter/Van Driver - The Porter/Van Driver is responsible for providing safe transportation for clients and Win staff and performs general driving duties as needed for the organization. The Porter/Van Driver will also be responsible for maintaining the interior and exterior of building to ensure a safe, clean, and pleasant environment for all staff, residents and visitors. ($15-16/hr.)

AST Financial (BK): Call Center Representatives - $15-17/hr. The successful candidate is extremely professional, possesses excellent reading comprehension and verbal communication skills and is able to multi-task in a high volume production driven environment while maintaining expected performance levels.
