Per kryerjen e ketij studimi eshte angazhuar stafi i ARZH Tirane: Ilir Rembeci-Drejtori i ARZH, Jorgo Dhimarko - Specialist kerkimi, Godiva Rembeci-Specialiste Kerkimore dhe Arben Rapo- e Specialist ne fushen e Shitjeve. • The Evaluation of Spontaneous Fermentation Based on Initial Number of Yeast in Some Autochthonous Albanian Grape Varieties
Albanian j. agric. sci. 2018; (Special edition, Proceedings - ICOALS, 2018) Agricultural University of Tirana RESEARCH ARTICLE (Open Access) The evaluation of spontaneous fermentation based on initial number of yeast in some autochthonous Albanian grape varieties ROZETA HASALLIU 1*, KLOTILDA MARKU 1, KRENAR GOZHDARI 1, MARSEL KEÇI 1, RENATA KONGOLI 1 1Faculty of Biotechnology and Food, Agricultural University of Tirana *Corresponding author; E-mail: [email protected] Abstract The aim of this study is to evaluate the spontaneous fermentation based on initial number of yeast in some autochthonous Albanian grape varieties. There are many microorganisms in grape that contribute to the production of wine. Some of them are wild yeast, lactic acid bacteria and acetic acid bacteria. The grapes contain indigenous yeasts which contribute in the spontaneous alcoholic fermentation during the vinification process. On the other hand we can have a controlled alcoholic fermentation by inoculating industrial yeast and controlling the fermentation temperature. In Albania, some of wine producers use spontaneous alcoholic fermentation and others inoculated yeasts that are Saccharomyces cerevisiae, Saccharomyces bayanus or a mix between two yeasts, Saccharomyces cerevisiae and Saccharomyces bayanus . During the 2017 year we have produced wine using some Albanian grape varieties like Kallmet, Shesh i Zi and Shesh i Bardhe which are obtained from different areas of Albania. In some grape varieties spontaneous fermentation couldn't start without the addition of Saccharomyces cerevisiae starter culture. In some others varieties the fermentation couldn't start even with the addition of starter culture. In the same grape variety Shesh i Bardhe obtained from different areas of Albania, in one vinification trial the fermentation didn't start even with the addition of starter culture.

This fact is testified by its extension over whole territory of the country, as well as, by the existence of a great number of autochthon cultivars, which are distinguished for quantitative productivity and they are well accepted by market. Lobesia botrana is the main pest which attack native grape cultivars, causing a considerable damage. To find a proper time of intervention is the crucial moment for realizing the treatments. For that reason, attending of flying curve of Lobesia botrana, four pheromone traps were located in the non treated plots. The counting of the adults caught in pheromone traps is done weekly. According to climatic conditions of Albania, Lobesia botrana gives three generations per year. The most harmful generations are second and third one. Using Bt varieties for controlling of L. botrana provide biological effectiveness, so it is an alternative for controlling of the pest in native cultivars. During the experiment is shown a difference between incidence and severity in treated plots and non treated plots. Keywords : Lobesia botrana, pheromones, Bt varieties, Shesh i zi, native cultivar. I. INTRODUCTION Viticulture is the most important agricultural sector in Albania with hundreds of hectares grapevine planted each year and millions of Euros invested.

Representing a rich historical past, the food of modern Albania has been developed over millennia and reflects a variety of influences. East meets West in many discernable ways throughout Albanian culture, but nowhere is this more evident than in the cuisine. The mild climate is favorable for many agricultural products. Among Albania’s most popular are: peppers, eggplants, tomatoes, cucumbers, and an assortment of legumes. The wide variety of fruits and vegetables grown here serves to further enhance the varied fare offered. 02 Albanian Traditional Cuisine 03 Vegetables 04 Albanian Traditional Cuisine The vegetables grown in Albania are combined with meats in a number of delectable ways to form the basis for many Albanian delights. Most often, these creations are baked in earthenware or sautéed, and take one of the following forms: stew, casserole, stuffed vegetables, or meatballs. Other types of dishes blend many vegetables together (with or without meat) and can be traced to Asian origins. 05 Olives As in many other Mediterranean countries, olives are a staple in Albania. Although they are most frequently enjoyed on their own, olives are combined with many foods and are an essential ingredient in many signature dishes. Types vary by region. Olives from the Berat region are prized for their unique flavor and low fat content while olives from Vlora, Borsh, Himara, and Tirana are higher in fat content and are more often used for olive oil production.
