  • Russia: Franchise Restaurants Doing Well Despite Slowing Economy
THIS REPORT CONTAINS ASSESSMENTS OF COMMODITY AND TRADE ISSUES MADE BY USDA STAFF AND NOT NECESSARILY STATEMENTS OF OFFICIAL U.S. GOVERNMENT POLICY Voluntary - Public Date: 5/18/2015 GAIN Report Number: RSATO13 Russian Federation Post: Moscow ATO Franchise Restaurants Doing Well Despite Slowing Economy Report Categories: Agricultural Situation Agriculture in the News Agriculture in the Economy Approved By: Erik W. Hansen Prepared By: ATO Moscow Staff Report Highlights: The Russian food service sector has faced a number of serious challenges during the past year. A smoke ban in restaurants and bars went into effect on June 1, 2014, which has hurt the growing café culture as well as many bars and pubs. Shortly afterwards, in August 2014, Russia banned a long list of food and agricultural products from Australia, Canada, Norway, the United States and the European Union for one year in response to Western sanctions. In addition, the Russian currency depreciated significantly pushing up food price inflation while dropping consumer purchasing power. Nevertheless, the total number of franchises in Russia has seen double digit growth in the last few years - and growth is expected to continue as lower cost restaurants are expected to do well during the current economic slowdown. American fast food formats dominate the landscape in Russia. General Information: Russian food service sector has faced a number of serious challenges since the middle of 2014. A smoking ban in restaurants and bars went into effect in June 1, 2014. This had a negative impact on Russia’s growing coffee culture and led to more Russians to eating and entertaining at home instead of at restaurants, bars and pubs.

  • Southern Fried Chicken Sandwiches, Subs & Wraps
Southern Fried Chicken Sandwiches, Subs & Wraps Check out the video: https://tinyurl.com/y9lc9fna to learn about the make-up of Sandwiches NOTES Sandwich Time Codes All Southern Fried Chicken sandwiches and burgers have a maximum 10 minute discard time. This must be adhered to at all times to ensure maximum product quality. Southern Fried Chicken uses a simple system to ensure that the holding times are not exceeded; all sandwiches must be marked with a discard time using the method described below. Each sandwich is marked with a discard time which tells us when we should throw the sandwich away. As we will only keep the sandwiches for 10 minutes we do not look at the hour hand of the clock so these diagrams show only the minute hand. For example if we were to make a sandwich when the minute hand is on 12 we would mark on the wrapper the number 2. If the minute hand were on 1 we should mark 3 and so on. If the minute hand is less than halfway between numbers we should write the time that corresponds to the previous number. If the minute hand is nearer the number 12 than the 1 we should write the number 2 on the sandwich and discard the sandwich at ten minutes past the hour. If the minute hand is more than half way between numbers, we should write the time that corresponds to the next number the minute hand will point to. If the minute hand is nearer the number 1 than the 12 we should write the number 3 on the sandwich and discard the sandwich at quarter past the hour.

  • Fast Food Sector Keeps Expanding As Economy Cools Russian Federation
THIS REPORT CONTAINS ASSESSMENTS OF COMMODITY AND TRADE ISSUES MADE BY USDA STAFF AND NOT NECESSARILY STATEMENTS OF OFFICIAL U.S. GOVERNMENT POLICY Voluntary - Public Date: 11/13/2014 GAIN Report Number: RSATO033 Russian Federation Post: Moscow ATO Fast Food Sector Keeps Expanding As Economy Cools Report Categories: Agriculture in the News Agricultural Situation Agriculture in the Economy Approved By: Erik W. Hansen Prepared By: ATO Moscow Staff Report Highlights: The fast food sector in Russia has grown sharply in recent years as consumers having seen nearly 30 percent current value growth in 2013. Russian consumers demand well-known, affordable, and consistent quality standards provided by chained restaurants. Approximately100 fast food operators manage almost 3,800 chain restaurants in Russia. Today fast food is the most popular segment for young and middle-aged Russian consumers. Research has shown that more than 54 percent of fast food restaurants visitors are from 18 to 34 years old with average monthly income of 30,000 rubles. While the economic slowdown and currency devaluation are slowing down fast food expansion plans in Russia, research has shown that consumers are switching from higher end restaurants to mid-level and fast food type establishments which should help fast food chains weather the challenging economic times. General Information: Fast food remained one of the main foodservice engines in 2013 and has continued to grow in the current year. Chained fast food is performing particularly well and has seen current value growth of nearly 30 percent in 2013. Such strong growth is caused, in large part, to the growing overall popularity of franchising in Russia, making it one of the main tools of fast food business development.
