U.S. share improved 5 % from 2018 • Traditional “IOM Soybeans” imports via bulk vessel in 2019 completely shifted to single variety container imports between 1995-2020 ( bulk vessel change 89% ➡ 1%) • Plant Based boom (mostly SOY) continue and 3 major convenience stores Seven-Eleven, Lawson, and Family Mart have launched new SOY MEAT products between May-July. Soy Protein imports and production will continue to grow • Food Service segments such as School Lunch program, restaurant and hotels have been in decline due to COVID-19, however, overall soy foods consumption have been increasing because of increase of home cooking INDUSTRY VOICE • There is tendency that major tofu manufacturers have been shifting from U.S. black-hilum to Canadian clear-hilum varieties. The reasons are: 1) To avoid black-color hilum to be comingled with their tofu and relevant products, 2) Canadian white hilum variety has higher protein content & higher production yield than that of U.S. black hilum variety. Therefore tofu processors want to source from Canada where they perceive that U.S. white hilum high protein variety is more expensive than that of Canada, and white hilum with mid-price range variety which make beneficial for mid-to- larger scale tofu manufacturers to process tofu are not available in U.S. • Even if importers have planted Canadian higher protein variety in U.S., the protein have not been improved. They expect the U.S. white hilum higher protein variety to be same price as Canadian white hilum higher protein variety, however, this longstanding challenges still continue. The levels of pH, salt content, water content, yeast and mold, and aerobic plate count (APC) in all samples ranged from 4.7 to 5.9, 4.4% to 14.0%, 6.8% to 51.6%, 3.0 to 5.1logCFU/g, and 5.2 to 9.2logCFU/g, respectively. None of these samples contained total coliform and Escherichia coli. Although black bean douchi products had an average histamine content of 29.0 mg/100 g, 18 of them had histamine contents greater than 5 mg/100 g, the allowable level set by the US Food and Drug Administration (FDA) for scombroid fish and/or products. In contrast, only four soybean douchi products had histamine levels greater than 5 mg/100 g.

The present study aims to investigate the microbial contribution to BAs in Douchi, and to fnd the benefcial strain for BAs control. Firstly, the BAs profles of 15 Douchi samples were analyzed, and common 6 kinds of BAs were detected from diferent samples. All the samples showed the total BAs contents within the safe dosage range, while the histamine concentrations in 2 samples and β-phenethylamine in 6 samples were above the toxic level. Then, the bacterial and fungal communities were investigated by high-throughput sequencing analysis, and Bacillus and Candida were identifed as the dominant bacteria and fungi genus, respectively. Furthermore, nineteen strains were selected from the dominant species of Douchi samples, including 14 Bacillus strains, 2 Staphylococcus strains, 1 Enterococcus strain and 2 Candida strains, and their BAs formation and degradation abilities were evaluated. B. subtilis HB-1 and S. pasteuri JX-2 showed no BAs producing ability, and B. subtilis GD-4 and Candida sp. JX-3 exhibited high BAs degradation ability. Finally, fermented soybean model analysis further verifed that B. subtilis HB-1 and S. pasteuri JX-2 could signifcantly reduce BAs.

TKU042, a bacterium isolated from Taiwanese soil, produced α- glucosidase inhibitors (aGIs) in the culture supernatant when commercial nutrient broth (NB) was used as the medium for fermentation. The supernatant of fermented NB (FNB) showed stronger inhibitory activities than acarbose, a commercial anti-diabetic drug. The IC50 and maximum α- glucosidase inhibitory activities (aGIA) of FNB and acarbose against α-glucosidase were 81 μg/mL, 92% and 1395 μg/mL, 63%, respectively. FNB was found to be strongly thermostable, retaining 95% of its relative activity, even after heating at 100 °C for 30 min. FNB was also stable at various pH values.

In this study, the key aroma-active compounds of Yongchuan douchi were characterized by the combined gas chromatography–olfactometry (GC–O) and gas chromatography−mass spectrometry (GC–MS) with sensory evaluation. In total, 49 aroma com- pounds were sniffed and identified, and 20 of them with high flavor dilution factors (FD) and odor activity values (OAVs) greater than one were screened by applied aroma extract dilution anal- ysis (AEDA) and quantitated analysis. In particular, preserving health through diet has been a very important part of the traditional dietetic culture of the Chinese, based on the theory of Chinese medicine. Increasingly, other people throughout the world are recogniz­ ing the functionality of Chinese traditional foods. But these foods are also facing challenges due to lack of contin­ ued investigation and coordination, changes in people's lifestyles, and the Western influence on food and medicine. For these reasons, Chinese traditional health foods have not advanced, and some are even in danger of being lost. In order preserve these foods for future generations, modem knowledge and technology should be applied to investigate, coordinate and develop them. Advances in this field would also have a significant role to play in meeting the requirements of an increasing population, improving the health of consumers, increasing value-addi­ tion of agricultural products in China, and vitalizing the rural economy. In this paper, Chinese traditional foods are reviewed in terms of their functionalities and current standing. At the end of the paper, some countermeasures are suggested and some recommendations given on how to develop the traditional foods of China.
