Whiskey / Whisky WHISKEY / WHISKY { wis- kee} Noun “WHISKEY” (OR WHISKY) IS AN ALCOHOLIC DISTILLATE MADE FROM A MASH OF FERMENTED GRAIN. THE SPELLING OF THE WORD DEPENDS ON THE LOCATION WHERE THE SPIRIT ORIGINATES. WHILE THE SCOTS SPELL THE SPIRIT ‘WHISKY’ MOST OTHER NATIONS CALL IT ‘WHISKEY’. THE CATEGORY OF WHISKEY ITSELF IS VERY BROAD, AND IS IN FACT THE LARGEST GROWING SPIRIT CATEGORY IN THE WORLD. WHISKEY IS BEING PRODUCED ALL OVER THE WORLD, AND SO DIFFERS IN TYPE BASED ON THE GRAIN USED AND THE LOCATION IN WHICH IT WAS DISTILLED, AS WELL AS THE LENGTH OF AGEING AND THE TYPE OF OAK BARREL USED IN THE AGEING PROCESS. ALL WHISKEY MUST BE DISTILLED AT LESS THAN 190 PROOF (95% ABV) AND BOTTLED AT NO LESS THAN 80 PROOF (40% ABV). IT MUST POSSESS THE “TASTE, AROMA AND CHARACTERISTICS GENERALLY ATTRIBUTED TO WHISKEY”, ACCORDING TO THE DEFINITION PROVIDED BY THE ALCOHOL AND TOBACCO TAX AND TRADE BUREAU OF THE UNITED STATES. WHILE THERE ARE NO RESTRICTIONS ON WHICH TYPES OF GRAIN CAN BE USED TO CREATE A WHISKEY, THERE ARE RULES PERTAINING TO THE LABELLING OF A WHISKEY DEPENDING ON THE MASH BILL USED. FOR EXAMPLE; • RYE WHISKEY MUST BE MADE FROM A MINIMUM OF 51% RYE GRAIN. • BOURBON WHISKEY MUST BE MADE FROM A MINIMUM OF 51% CORN. • A SINGLE MALT SCOTCH MUST BE MADE FROM 100% MALTED BARLEY, AND BE DISTILLED IN A POT STILL BY A SINGLE DISTILLERY. ONCE DISTILLED, ALL WHISKEY IS AGED IN OAK BARRELS. DEPENDING ON THE LOCATION OF THE WHISKEY PRODUCER, THE OAK MAY VARY. BOURBON IS AGED IN AMERICAN OAK BARRELS, WHILE SCOTCH IS SOMETIMES AGED IN EUROPEAN OAK. THE BARRELS CAN BE EITHER TOASTED, WHICH IS MAINLY A EUROPEAN METHOD, OR CHARRED. MOST WHISKEY PRODUCERS IN THE UNITED STATES WILL CHAR THEIR BARRELS. FROM THIS OAK, THE WHISKEY WILL INHERIT FLAVOUR, COLOUR AND AROMAS. ONCE THE WHISKEY IS BARRELLED, IT WILL BE STORED AND AGED IN A “RICKHOUSE”, UNTIL A TIME AT WHICH THE MASTER BLENDER IS SATISFIED WITH THE WHISKEY AND THE BOTTLING PROCESS BEGINS. FACTORS SUCH AS THE POSITION OF THE BARREL WITHIN THE RICKHOUSE AND THE TEMPERATURE OF THE RICKHOUSE WILL AFFECT THE WHISKEY, AND THOSE PLACED AT THE TOP OF A RICKHOUSE WILL AGE AT AN ACCELERATED PACE, WHILE THOSE AT THE BOTTOM LEVELS OF THE RICKHOUSE WILL MATURE AT A SLOWER RATE. EACH DISTILLERY HAS A MASTER BLENDER WHO OVERSEAS THE WHISKEY FROM THE INITIAL DISTILLATION THROUGH THE AGEING PROCESS AND THEN TO THE BOTTLING OF THEIR WHISKEY. 1 BOURBON BOURBON WHISKEY IS ONE OF THE MOST COMMONLY RECOGNISED CATEGORIES OF WHISKEY. ACCORDING TO THE TOBACCO TAX AND TRADE BUREAU (TTB), ANY SPIRIT LABELLED AS A BOURBON; • MUST BE PRODUCED WITHIN THE UNITED STATES OF AMERICA • MAY NOT EXCEED 160 PROOF (80% ABV) • MUST BE DISTILLED FROM A FERMENTED MASH OF NO LESS THAN 51% CORN • MUST BE STORED AT NO MORE THAN 125 PROOF (62.5% ABV) IN CHARRED NEW OAK BARRELS WHILE THERE IS NO PARTICULAR RULE HOW LONG A BOURBON MUST STAY INSIDE THE BARREL FOR AGEING, THE LABEL MUST STATE THE AGE IF IT IS AGED FOR LESS THAN 4 YEARS.     The 25 Most Important Bourbons Ever Mad If you asked a spirits expert a quarter century ago to name the most important bourbons ever made, they might have wondered whether America’s home-grown whiskey deserved such analytical consideration. Bourbon was in the doldrums, unappreciated and underdrunk. But today, thanks to a boom that shifted into high gear around the turn of the century, bourbon is arguably the most talked-about, most obsessed-over and most in-demand spirit in the world. To better assess how we got here, we consulted with 23 bourbon experts, including distillers, journalists, authors, whiskey-bar owners and one whiskey-centric-liquor-store proprietor. Each participant named five to ten bourbons that made a difference—not their favorite bourbons, or the ones they thought tasted best, but those bottles that were influential, innovative or otherwise held a significant place in bourbon history. They were allowed to reach way back to pre-Prohibition years, cite bourbons they could never have tasted, and yes, in the case of distillers, include their own creations. (One self-serving endorsement would not land them a spot on this list, however, as every bourbon here received multiple votes.) The final order was determined strictly by the votes received. There were a number of ties in the lower rankings. In those cases, editorial judgment determined final rankings. In a few instances, the panelists indicated complete lines of bourbons that bore the same name, not just a single bottling. In other cases, panelists pointed out different bottlings within a single line. As the arguments behind these choices were often similar, these votes were sometimes combined and placed within the rankings as a bourbon label’s complete line.

THE 1800‘S Throughout the 1800s, whiskey dominated the news and medicine. You’d find whiskey invading the White House and causing scandals. President Grant’s reelection campaign was, in part, paid for by whiskey distillers defrauding the government and bribing politicians so they wouldn’t have to pay as much in taxes. It also was the subject of great political debate, from temperance women trying to ban it, to whiskey distillers trying to protect it, while doctors prescribed bourbon for everything from gout to cancer. The whiskeys from this era did not have the same consumer protection as they do today. In some cases, the whiskey rectifiers added acids and unpalatable materials VINTAGE WHISKEY VINTAGE that would be banned by today’s regulations. These whiskeys were tested, but taste at your own risk. IMPORTANT LEGISLATION Bottled in Bond Act of 1897. This was the first consumer protection legislation for whiskey and is still seen on bottles today. E1.
