  • DOMAINE JEAN VESSELLE Brut 'Oeil De Perdrix'
Wine Facts DOMAINE JEAN VESSELLE Brut ‘Oeil de Perdrix’ The family’s collection of top terroirs and generations of leadership in championing Pinot Noir are what make wines from Domaine Vesselle such eloquent examples of Blanc de Noirs Champagnes. For nearly 300 years, the Vesselle family has been tilling the chalky soils of Bouzy and cultivating some of the village’s best-placed Pinot Noir vines. Wines here combine a classic Champagne elegance with the signature Bouzy power, especially in wines such as the estate’s ‘Oeil de Perdrix.’ This unique rosé is a taste of Champagne history, a style of wine long forgotten before winemaker Delphine Vesselle—to honor the traditions of her Champagne-making grandparents—brought it back with great success. WINERY: Domaine Jean Vesselle WINEMAKERS: Delphine and David Vesselle ESTABLISHED: 1800s REGION: FRANCE • Champagne • Bouzy APPELLATION: Champagne AOC BLEND: 100% Pinot Noir VINEYARDS: Estate vineyards are located in and around the village of Bouzy. Soils are the classic, chalky terroir of the Montagne de Reims. AGE OF VINES: 15-30 years WINEMAKING: Hand-harvested. Grapes are macerated briefly (less than 24 hours) for color then pressed; fermented on indigenous yeasts in stainless steel tanks. Aged for three years in bottle. Dosage 6 grams/L. TASTING IMPRESSIONS: Aromas of red roses, orange zest, white pepper, light herbs. Medium-bodied yet light on the tongue; elegant, silky and balanced. Red berries, stone fruits, peppery finish. PAIRING SUGGESTIONS: As an aperitif or throughout a meal; its acidic balance and red-wine body make it endlessly flexible at the table 1601 Martin Luther King Jr.

  • Champagne Lilbert-Fils Cramant
Champagne Lilbert-Fils Cramant The written record has the Lilbert family cultivating vines around its hilltop village of Cramant in 1746, and it’s probably a fair bet that they were there sometime before that (the oldest part of their 23-foot-deep cellar dates from 1712). The record further shows that as early as 1907 the family bottled its own wine for commercial sale. Despite such longevity, the house of Lilbert is tiny: it farms a mere 3.5 hectares of vines (this figure translates into 8.6 acres, and unfortunately our old back label erroneously states 9.4 acres). Bertrand Lilbert and his father Georges make only grand cru blanc de blancs from 100% Chardonnay. Their annual production averages 2,300 twelve-pack cases. To put this in perspective, the house of Moët & Chandon pumps out 25 million cases each year. Unlike Moët, the Lilberts make all of their wine from their own vineyards, which break down into 15 parcels in the grand cru villages of Oiry (10% of their total plantation), Chouilly (30%), and Cramant (60%) on the Côte des Blancs. The vine age average is 45 years old. Note that Cramant should not be confused with crémant. Crémant once used to be a term reserved for a style of Champagne with less pressure--and indeed the village of Cramant has a tradition of making wine in such a style, so much so that Lilbert's Perle was once labeled as Crémant de Cramant. But those days are gone and now crémant legally refers to all méthode Champenoise wine made within France but outside of the Champagne appellation." The Côte des Blancs is a ridge that begins just outside of Epernay and runs north-south.

FEMME DE CHAMPAGNE NV BRUT GRAND CRU The elegance of the Grands Crus Champagnes. With a delicate and fine structure, the cuvée Femme de Champagne Brut Grand Cru is a wine with great finesse and exceptional aromatic complexity. Femme de Champagne Brut Grand Cru reflects the elegance and refinements of the best crus, sought out by Maison Duval- Leroy for an unforgettable tasting experience. A blend of 87% Chardonnay and 13% Pinot Noir, Femme de Champagne Brut Grand Cru is the result of a delicate marriage of the best vineyards in the Champagne terroir (Avize, Chouilly, Le Mesnil sur Oger, Ambonnay). The colour of Femme de Champagne is bright yellow. At first the nose revels notes of citrus and fresh bread, this biscuit character then gives way to aromas of flowers and yellow fruits (hints of apricot, peach and quince). On the palate a bewitching flavour of ripe hazelnuts envelopes honeysuckle, this is quickly followed by the delicate notes of crystallized mandarin and orange peel. • Agrapart & Fils
SAMPLE CONTENT Overview Agrapart & Fils 57, avenue Jean Jaures Founded in 1894 by Arthur Agrapart, this outstanding estate in Avize acquired much of its present vineyard 51190 Avize land during the 1950s and ’60s, thanks to Arthur’s Tel. 03.26.57.51.38 grandson Pierre. Since 1984 it has been run by Pascal Agrapart and his brother Fabrice, who have taken the Fax. 03.26.57.05.06 domaine to ever-greater heights, emphasizing natural viticulture and the expression of terroir. The Agraparts’ vineyards are spread over 62 parcels, the majority of which lie in the grand cru villages of Avize, Cramant, Oiry and Oger. Average vine age is about 35 years, with the oldest vines in Avize over 60 years. Pascal Agrapart (pictured) is uninterested in be- ing labeled as either organic or biodynamic, but he does feel that it’s important to work according to natural rhythms and sensibilities, and both the vineyard work and the work in the cellar follow this philosophy. No chemical pesticides or weedkillers are ever used, and all of the vineyards are worked manually, encouraging the roots to descend deeper. The Agraparts place great im- portance on the proper technique and timing of pruning to control vineyard maladies, and some homeopathic treatments are also used in the vines to control para- sites. As expected for a Champagne estate that places a strong emphasis on viticulture, the average potential alcohol at harvest is very high here, normally around Status: RM 11 degrees, and Agrapart virtually never chaptalizes Vineyard area: 9.75 hectares any of his wines.
