This system allows us to serve you some truly exceptional wines by the glass without oxygen ever coming into contact with the wine. As the wine is dispensed, nitrogen is pumped into the bottle so oxygen never gets into the bottle! The wine is stored & dispensed at the optimal temprature of 58 degrees Pinot Noir, Kosta Browne, Santa Rita Hills, CA, 2018 Gives off cinnamon toast, raspberry coulis, macerated strawberries & rosewater perfume with accents of musk, lilac, blood orange & scorched earth—what a gorgeous perfume! Medium-bodied, it slowly builds in amplitude in the mouth releasing gobs of perfumed red berry fruits. It has a sturdy but finely grained frame and seamless freshness, finishing very long, layered and fantastically perfumed. Wow! -Robert Parker Burgundy, Dom. Gouges, Clos des Porrets, Nuits-St-Georges, Premier Cru, 2018 Aromas of wild berries and forest floor mingle with notions of grilled game and raw cocoa in a complex bouquet, framed by cedary new oak. On the palate, the wine is medium to full-bodied, layered and decidedly velvety for a young Clos des Porrets, with ripe tannins, tangy acids and a long, succulent finish Barolo, Pio Cesare, Piedmont, Italy, 2016 Enticingly fragrant, this wine offers alluring scents of iris, rose, perfumed berry and wild herb. It’s full bodied and elegant, delivering crushed raspberry, juicy Marasca cherry, star anise and orange zest set against a backbone of taut, fine-grained tannins. Bright acidity keeps it balanced and lends intensity Brunello di Montalcino, il Poggione, Tuscany, Italy, 2016 This vintage shows a slightly untamed or wild side with a dense and heavier fruit profile. The focus here is on blackberry, dried cherry, tobacco and even a touch of smoky tobacco or horse saddle. The wine shows the firm grip and tannic backbone that is a common trait in this vintage. Amarone della Valpolicella, Bertani, Classico, Veneto, Italy, 2009 Showcasing sour cherries, red plums, citrus, orange peel and grenadine. Very linear and tangy on the palate, but the muscular tannins provide depth and power. Medium-to full-bodied and medium-chewy on the vibrant finish. Beautifully crafted and expertly shaped. Flag-bearer for the modern style of Amarone. Super Tuscan, Querciabella, Camartina, Maremma, Tuscany, 2015 Like the wild, untamed coastline that borders the vineyards in Maremma, Camartina is lively, fruity, and intense. With lifted aromatics and high drinkability. A juicy and delicious 2015 red with plenty of berry and chocolate character. Medium to full body, round tannins and a flavorful finish. Super Tuscan, Sassicaia, Bolgheri, Tuscany, 2018 All about radiance and finesse, this iconic Tuscan red has beguiling aromas of cedar, wild red berry, menthol and pipe tobacco that mingle with fragrant blue flowers. Made with 85% Cabernet Sauvignon & 15% Cabernet Franc, the focused, elegantly structured palate is vibrant and savory, delivering cassis, orange zest, licorice and a hint of coffee framed in taut, polished tannins. Bright acidity keeps it energized and balanced. Shafer Vineyards, Relentless, Stags Leap District, Napa, 2015 Blended of 90% Syrah and 10% Petite Sirah, the deep purple-black colored 2015 Relentless has a total rock-star nose of flamboyant blackberry pie, plum preserves, mulberries and licorice scents with hints of Sichuan pepper, hoisin, Indian spices and smoked meats plus a waft of raspberry leaves. Very big, rich, full and decadently fruited in the mouth, the palate packs in black fruits and exotic spices layers with a firm, rounded tannin frame and just enough freshness to carry off the long, opulent finish.     250 years since the first rosé champagne Ruinart, the first established Champagne House, founded in 1729, has been shipping rosé champagne since 1764. The House’s account book is the proof. On 14 March 1764, it is written that there was a shipment of «a basket of 120 bottles, 60 bottles of which were Oeil de Perdrix». What is the connection between birds of the Gallinaceae family and the early history of the oldest Champagne House? In fact, the term «Oeil de Perdrix» means a colour which could be described as a delicate pink with coppery reflections. There’s no longer any doubt. Ruinart shipped its first bottles of rosé champagne in 1764. 250 years : such a fabulous anniversary in so many ways, an historic date which links Ruinart forever to the history of champagne. The account books, various correspondence and the accounts of the heads of the House have allowed us to discover a multitude of varieties and oenological trials in search of taste, flavour and the ideal colour. What was in all probability a rosé from maceration at the beginning would then evolve to become a blended rosé. Ruinart explored various ways of obtaining a coloured champagne, for example by using the colouring of some elderberries. The palette of colours for these wines was very large. There were a number of terms to define them in French: roset, oeil de perdrix, rozet, paillé (straw), clairet (pale wine) and even cerise (cherry). Towards the end of the 18th century, the expression «Oeil de Perdrix» disappeared in favour of names closer to those we use: rozet and then rosé.

JOSEPH WAGNER, OWNER & WINEMAKER The style of this wine, traditionally known in France as oeil-de-perdrix (pronounced: uh-ye-duh-per-dree), translates to “eye of the partridge,” and has been made by my family, using Pinot Noir grapes, for 40 years. Producing this wine requires a gentle hand and a readiness to press the juice quickly once it reaches the desired level of color. It is a true-to-the- roots style that is not just a by-product of red wine. The juice is fermented partially in French oak barrels, which add enough rich texture and light spice to beautifully complement the generous fruit-filled flavors. Please enjoy this wine very well chilled. The Pinot noir came from two blocks planted in 2004 on a steep hillside and farmed using the biodynamic method. These blocks Harvested: October 27, struggled to ripen in this very cool season and we decided to use them to 2011 make a crisp, low-alcohol white wine. Part of the way through fermentation, I was surprised at the beautiful aromatic and flavor profile and decided to Bottled: April 2012 produce a slightly off-dry, low-alcohol wine focused on its freshness and vibrant acidity. Alcohol: 9.5% Production Notes The grapes were pressed whole cluster and the barely colored juice was Suggested Pairings: fermented at 60 degrees. The fermentation was stopped just short of dryness and not allowed to go through malolactic fermentation. Fish, pork tenderloin, cold meats, and picnic foods Oeil de Perdrix translates to “Eye of the Partridge” and is an old name for a very pale rosé wine made from Pinot noir. A master of his craft, he established a signature style of elegant, tightly knit wines with a certain ampleur. When he passed away in 1982 his wife, Olga, and their daughter, Chantal Decelle-Lassalle, stepped in and took over the estate, upholding Jules’ high standards and progressively pushing the domaine to the next level. In 2006 Chantal’s daughter, Angéline Templier, joined the estate as winemaker. Their twenty-eight-year tradition of “une femme, un esprit, un style” (one woman, one spirit, one style) holds true today more than ever. In the 1970s, Kermit was the first to begin importing artisanal, grower Champagne, and the Lassalles have been in the KLWM portfolio longer than anyone. Today, we are proud that the relationship has continued into the third generation of the Lassalle family. Champagne J. Lassalle works with all three varietals authorized in the region (Chardonnay, Pinot Noir, and Pinot Meunier) on eleven hectares of vineyards, all of them premier cru. These tough, hardworking women continue to follow the vinification methods established by Jules in the forties: they use the same wooden basket press he installed in the winery over fifty years ago, pressing and vinifying the individual plots separately. It is one of the rare Champagnes that has been allowed to finish its malolactic fermentation, just like the great whites from the Côte d’Or.
