A four-step experimental procedure was set up by performing the following tests; 1) Preliminary study of Lallzyme MMX ® oenological preparation (Lallemand Inc., Canada), commonly used to improve the short maturing of wines on lees, both in presence and in absence of two secondary fermentation yeast strains: Saccharomyces cerevisiae bayanus BCS103 ® (Fermentis, division of S.I. Lesaffre, France) and Saccharomyces cerevisiae bayanus Lalvin EC1118 ® (Lallemand Inc., Canada) in synthetic buffers, in dependence of pH and ethanol concentrations, kinetic parameters determination; 2) Sparkling wines production by the traditional method. Base wine inoculum was performed using the same selected yeast strains, both in absence and in presence of Lallzyme MMX ®; 3) Base wine and sparkling wines sampling at 4, 8 and 12 months after tirage and study of: yeasts morphological changes by TEM (Transmission Electron Microscopy) and SEM (Scanning Electron Microscopy) observations; foaming properties; free amino acids composition; total proteins content. A fourth step was focused on perform a sensory analysis 12 months after tirage by a trained panel group aimed at assess the differences between sparkling wines produced in presence and in absence of Lallzyme MMX ®. -

© Lonely Planet Publications 354 Champagne CHAMPAGNE CHAMPAGNE Known in Roman times as Campania, meaning ‘plain’, Champagne is a largely agricultural region and is celebrated around the world for the sparkling wines that have been produced here for more than three centuries. According to French law, only bubbly originating from this region – grown in designated areas (now being expanded to meet growing demand), then aged and bottled according to the strictest of rules – can be labelled as Champagne. The production of this prestigious sparkling wine takes place mainly in two départements: Marne, whose metropolis is the ‘Coronation City’ of Reims, and the less prestigious (though increasingly respected) Aube, whose préfecture (departmental capital) is the ancient and picturesque city of Troyes, home to several exceptional museums and entire streets lined with half-timbered houses. The town of Épernay, 30km to the south of Reims, is the de facto capital of Champagne (the drink, that is) and is the best place to head for dégustation (tasting session). The Champagne Route wends its way through the region’s diverse vineyards, taking visitors from one picturesque – and prosperous – wine-growing village to the next. A number of name-brand maisons (literally ‘houses’, meaning Champagne producers) have achieved international renown, but much of the region’s liquid gold is made by almost 5000 small- scale vignerons (wine makers) in 320-odd villages, many of whose family-run facilities welcome visitors. Champagne Lilbert-Fils Cramant The written record has the Lilbert family cultivating vines around its hilltop village of Cramant in 1746, and it’s probably a fair bet that they were there sometime before that (the oldest part of their 23-foot-deep cellar dates from 1712). The record further shows that as early as 1907 the family bottled its own wine for commercial sale. Despite such longevity, the house of Lilbert is tiny: it farms a mere 3.5 hectares of vines (this figure translates into 8.6 acres, and unfortunately our old back label erroneously states 9.4 acres). Bertrand Lilbert and his father Georges make only grand cru blanc de blancs from 100% Chardonnay. Their annual production averages 2,300 twelve-pack cases. To put this in perspective, the house of Moët & Chandon pumps out 25 million cases each year. Unlike Moët, the Lilberts make all of their wine from their own vineyards, which break down into 15 parcels in the grand cru villages of Oiry (10% of their total plantation), Chouilly (30%), and Cramant (60%) on the Côte des Blancs. The vine age average is 45 years old. Note that Cramant should not be confused with crémant. Crémant once used to be a term reserved for a style of Champagne with less pressure--and indeed the village of Cramant has a tradition of making wine in such a style, so much so that Lilbert's Perle was once labeled as Crémant de Cramant. But those days are gone and now crémant legally refers to all méthode Champenoise wine made within France but outside of the Champagne appellation." Champagne Avize Agrapart & Fils Interesting estate with domicile in Avize, founded in 1894 by Arthur Agrapart. Pierre Agrapart acquired the current parcels in the 50’s and 60’s, primarily in Avize, Cramant, Oiry and Oger. SAMPLE CONTENT Overview Agrapart & Fils 57, avenue Jean Jaures Founded in 1894 by Arthur Agrapart, this outstanding estate in Avize acquired much of its present vineyard 51190 Avize land during the 1950s and ’60s, thanks to Arthur’s Tel. 03.26.57.51.38 grandson Pierre. Since 1984 it has been run by Pascal Agrapart and his brother Fabrice, who have taken the Fax. 03.26.57.05.06 domaine to ever-greater heights, emphasizing natural viticulture and the expression of terroir. The Agraparts’ vineyards are spread over 62 parcels, the majority of which lie in the grand cru villages of Avize, Cramant, Oiry and Oger. Average vine age is about 35 years, with the oldest vines in Avize over 60 years. Pascal Agrapart (pictured) is uninterested in be- ing labeled as either organic or biodynamic, but he does feel that it’s important to work according to natural rhythms and sensibilities, and both the vineyard work and the work in the cellar follow this philosophy. No chemical pesticides or weedkillers are ever used, and all of the vineyards are worked manually, encouraging the roots to descend deeper. The Agraparts place great im- portance on the proper technique and timing of pruning to control vineyard maladies, and some homeopathic treatments are also used in the vines to control para- sites. As expected for a Champagne estate that places a strong emphasis on viticulture, the average potential alcohol at harvest is very high here, normally around Status: RM 11 degrees, and Agrapart virtually never chaptalizes Vineyard area: 9.75 hectares any of his wines. -
