produce a distinctive house style. Champagnes with a high percentage of Chardonnay (Moët et Chandon) tend to be light, racy and crisp. Those with a majority of black grapes (Drappier, Pommery) are deeper and richer. The real thing is only produced from the chalky soil of the Champagne region, southeast of Paris, using the time-consuming Methode Champenoise, a painstaking technique which involves second fermentation in the bottle. High-quality sparkling wine is also made by Methode Champenoise in Spain, Italy, Germany, and the United States. True Champagne is categorized by the level of sweetness (Brut, Extra Dry, Demi-Sec), based on how much sugar is added at the time of bottling.
