  • Vegan Lunch Box : 150 Amazing, Animal-Free Lunches Kids and Grown-Ups Will Love! / Jennifer Mccann
1600940729 text_rev.qxd 4/21/08 8:53 AM Page i PRAISE FOR VEGAN LUNCH BOX “Jennifer McCann’s cookbook makes vegan cooking accessible and fun. It’s informative but not stuffy, detailed yet concise, and the recipes are creative without being difficult. There are so many delicious, well put to- gether options here, it’s not only perfect for kids but for anyone who ever eats lunch!” —Isa Chandra Moskowitz, author of VEGANOMICON “Being a vegan kid just got a lot easier! The menus in Vegan LunchLunch BoxBox make it easy to plan a balanced and nutritious lunch for your kids (or your- self!). The variety alone makes it worth having.” —Erin Pavlina, author of RAISING VEGAN CHILDREN IN A NON-VEGAN WORLD “Destined to become a classic, this is the book vegan parents have been waiting for. And who knew? A vegan mom started a blog describing the lunches she made for her son for one school year, and it won the 2006 Bloggie Award for “Best Food Blog” (NOT “best VEGETARIAN food blog,” but “Best Food Blog,” period!). It inspired, delighted, and motivated not only vegan parents, but omnivores bored with their own lackluster lunches. This book will continue delighting with recipes that are as innovative, kid- pleasing, and healthful as they are delicious.” —Bryanna Clark Grogan, author of NONNA’S ITALIAN KITCHEN 1600940729 text_rev.qxd 4/21/08 8:53 AM Page ii This page intentionally left blank 1600940729 text_rev.qxd 4/21/08 8:53 AM Page iii Vegan Lunch Box 1600940729 text_rev.qxd 4/21/08 8:53 AM Page iv This page intentionally left blank 1600940729 text_rev.qxd 4/21/08 8:53 AM Page v Vegan Lunch Box 150 Amazing, Animal-Free Lunches Kids and Grown-Ups Will Love! • Mamenori San® What Is Mamenorisan? M Amenorisan Is a Soybean Sheet Made from 100% Pure Soy Protein
mamenori san® What is Mamenorisan? M amenorisan is a soybean sheet made from 100% pure soy protein. Similar in size and shape to a sheet of seaweed nori, Mamenorisan is even more versatile. It’s perfect to make hand-rolled sushi for those who dislike the flavor of seaweed. And for chefs exploring new flavor and cooking applications, creativity is endless with Mamenorisan, especially with the whimsical color variations. Mamenorisan is highly adaptable, and can be rolled, wrapped, or folded like origami. It comes in a variety of colors and flavors, making it ideal for decorative presentations. Who Makes Mamenorisan? M amenorisan was created by J-Oil Mills Corporation. Formed from a partnership between three firms-- Yoshiwara Oil Manufacture, Hornen Cooperation, and Ajinomoto Oil Manufacture--the company ‘s main products have always been vegetable oils. In 1975, while researching uses for a pure, high-protein soybean meal remaining from the oil extraction process, J-Oil Mills began developing what would become Mamenorisan. It took 10 years to perfect the Mamenorisan product that we know today. The final product was first released in Japan in 1985, then exported to the United States four years later. J -Oil Mills Corporation has always adhered closely to their key business concept of “CSR“ (Corporate Social Responsibility), and continues to focus on their environ- mental commitment, which they refer to as “SHE” (Safety, Health, & Environment). Mamenorisan is also a superb functional food, holding together foods which would normally fall apart, such as vegetable sticks and saucy risotto. Unlike other wrap- per materials, Mamenorisan is delicate in texture and in flavor that it does not inter- fere with the featured food it’s incorporated into.

  • Food Business (Deliciousness Solutions, Group Companies Etc.)
    I. Food Business 5 The Integrated Food Solution Business (1) Increasing the importance of the BtoBtoC field The struggling BtoBtoC field Within the Ajinomoto Group, areas such as monosodium glutamate (MSG) for packaged food companies have been playing an important role, particularly in our cultivation of markets in Europe and North America. In Japan, alongside this business for packaged food companies, the expansion of the markets for food service and ready-made meals since the 1970’s has enhanced the importance of the BtoBtoC field (business targeting intermediary companies such as food manufacturing and food service). As of 2009, our business for industrial food manufacturers, food service, and ready-made meal producers was the responsibility of our Food Company’s Food Ingredients Department and Food Service Department and following the return to a business headquarters system in April 2010, they were positioned within the Food Products Division. At that time, both fields were experiencing severe market conditions. Overseas, there was price competition over MSG from Chinese companies and others. In Japan, factors such as low birthrates, an aging population, and sluggish earnings growth led to market contraction in the food service industry. Using a broader definition of the food service industry, which includes food product retailers (such as ready-made meal businesses selling precooked foods), market size remained roughly level from its peak of almost 33 trillion yen in 1998 (according to materials by the Japan Foodservice Association) through to 2011. Although there was a slight increase from 2012 onward, customer unit prices continued to fall overall. This also reflects the ratio of money spent on food outside of the house (spending on both food service and ready-made meals), which peaked in 2007 at 45.6% and then continued to decline slightly.
