The “kiss” rule has been applied (keep it short and sweet), as there is much to learn. Ö 18cm Roll, sliced Ö Filled with garlic butter Ö Baked in the pizza oven until the butter melts and the roll crispens If Cheesy Ö Before roll is put in the oven, cheddar cheese is put over it. SKEWER OF MUSHROOMS Ö 100g button mushrooms, on a single skewer Ö Grilled and basted to perfection. QUESADILLA – Mexican Dish (Pronounced Kasadia) • Question: Cheese or Chicken & Cheese? • Question: Hot or not? (HOT = Chillies are added) Cheese Ö Two tortillas on top of each other. Ö Filled with grated cheddar cheese. Ö Put onto the flat top grill so cheese melts & the tortillas cook. Ö Cut into four equal triangles. Ö Served with shredded lettuce, diced tomato and guacamole. Ö Also served with salsa sauce. Chicken Ö Same as cheese Quesadilla, except strips of chicken are placed between the tortillas with grated cheddar cheese. If hot, chopped chillies are put in between the tortillas. Should be served with wet wipes if eaten with hands. MEXICAN “GOODIES” (“Goodies” = terminology) • Tortilla: Flat Mexican Bread, not a pancake • Guacamole: Avocado pulp, spices, onion & garlic-type dip • Salsa: Tomato, onion, green pepper, hot sauce, served cold. Spur Menu Breakdown – August 2002 Page 3 of 28 CRUMBED MUSHROOMS • Question: Garlic or Tartare sauce? Ö 12-15 Crumbed button mushrooms. Deep-fried. Ö Served in a lasagne dish, on a steak plate, with a snail fork. Served with garlic sauce or tartar sauce (mayo, gherkin, egg) CALAMARI STARTER • Question: Chips, rice or baked potato? Ö 125g Calamari rings, dipped in seasoned flour and deep-fried. Ö Served with a tartar sauce and a quarter lemon. Ö Also served with chips, rice or baked potato. NACHOS MEXICANA • Question: Hot or not? • Question: Full or half portion? Ö Nachos chips (hot corn chips), covered with heated salsa. Ö Then covered with chunky cottage cheese. Ö Then covered with cheddar cheese. Ö (If hot – chilli is added) Ö Put into the pizza oven until the cheese has melted. Ö Topped with shredded lettuce, diced tomato & guacamole. BUFFALO WINGS • Question: Half or full portion? • Question: Hot or not? (Basting may be offered as an alternative to hot or plain) Half Ö 300g = 8 pieces of Chicken wings = 4 full wings. Ö Deep-fried. Full Ö 600g = 16 pieces of Chicken Wings = 8 full wings. Ö Prepared in same manner as half portion. Plain Ö After wings have been deep-fried, they are put straight into the lasagne dish. Hot Ö After wings have been deep-fried, they are dipped into Dirky Sauce (Vinegar, red pepper & garlic) Ö Fry on the flat top and place into the lasagne dish. ALL wings are served in a lasagne dish, on a steak plate. Served with 8 celery sticks. Also served with a bowl of Dirky sauce and a Roquefort dressing. Ö Served with shredded lettuce, diced tomatoes and guacamole. Ö Small bowl of salsa on the side. NOTE: Jalapenos are large, green chillies SNAILS Ö 6 snails topped with melted garlic butter Ö Placed in a snail dish. Ö 2 slices of brown bread – cut into 4 triangles. Ö Snail fork – place on steak plate on right hand side. STEAK PLATTER, CHEDDAMELT STEAK), THE STEAK PART IS USUALLY SIRLOIN. THE MANAGER MAY ALSO USE RUMP IF HE WISHES TO DO SO. PLEASE ASK YOUR OPERATOR IF YOU SHOULD OFFER THE GUEST THE CHOICE OF RUMP OR SIRLOIN IN YOUR SPUR. IF THE GUEST WOULD LIKE A FILLET ON A ‘STEAK’ PRODUCT, HE WILL BE CHARGED AN ADDITIONAL COST, AS FILLET IS AN EXPENSIVE CUT. PLEASE INFORM THE GUEST IF HE REQUESTS THIS OF YOU. ALL Medium-rare AND Medium STEAKS ARE SERVED ON HOT SKILLETS (CAST IRON PLATES) “IN THE HAND” MEANS NO CHIPS, BP OR ONION RINGS ALL MEALS SERVED WITH A SLICE OF CHEESE ARE CALLED ON AS “YELLOW” ALL GRILLED MEATS ARE COVERED IN SPUR BASTING & SPRINKLED WITH SPUR SEASONING SALT, TO GIVE IT “THAT SPUR TASTE” AN EXAMPLE HAS BEEN PROVIDED FOR YOU WITH CERTAIN “STEAK” PRODUCTS, TO INDICATE WHEN YOU SHOULD SELL A SAUCE. (additional cost) LAZY-AGED STEAK • Question: How would you prefer your Lazy done? • Question: Chips, rice or Baked Potato? • Question: (e.g.) Would you prefer a cheese, mushroom or garlic sauce?
