Treating it with a seriousness never before accorded it by anyone, it is made from the estate’s organic Roditis grapes (rather than the Savatiano almost universally employed elsewhere), to which is added before fermentation a moderate quantity of resin drawn from pine trees growing on the property. 40% is fermented on wild yeasts in amphorae, the balance in stainless steel. Extended lees aging is the final touch before bottling. The result is an understated, elegantly dry wine that is a cinch with Mediterranean seafood dishes and will banish forever dubious memories of Greek beach holidays.

  • Hello Spanish Table Wine Friends!
Hello Spanish Table wine friends! The name of today's newsletter should be "It's All Greek To Me"... As you know Spanish Table is always on the cutting edge, & with Steve's love of Greek food, our increasing collection of cheeses, cookbooks & everything under the Greek sun, we took the plunge by buying Greek wine to go with your next meal. I have to say my head hurts a little from having to wrap my brain around these supercalifragilisticexpialidocious varietal names, but I've been very happy to test out some Greek recipes to go with the pile of wine samples we collected. Apparently these wines don't get shown around a lot, so once they were opened, we were the end of the road! Strange that more Greek wine is sold in restaurants than in retail stores... I've always been kinda intrigued by the ones I tried as they left me wanting to find more without much luck. So I went to Yanni's in Greenwood to snoop around their menu & sample some calamari & kebabs with their glass pours. Official business! I barely had time to get a few of these in today's newsletter, but I think we amassed a cool selection in a couple week's worth of time. Since Greece is now going through a renaissance & being lauded as one of the hot new wine regions in the world, it's the perfect time for wine aficionado's to get their feet wet. Summer couldn't be a better time to do so! Salud! Catherine CHARRED LAMB SALAD WITH PEA SHOOTS, LEMON, AND CAPERS from The New Greek Cuisine by Jim Botsacos with Judith Choate $29.95 Serves 6 2 boneless racks of lamb Coarse salt and freshly ground pepper 1 tablespoon dried Greek oregano 2 teaspoons Aleppo pepper 2 teaspoons ground coriander 2 teaspoons ground cumin 2 teaspoons ground fenugreek 2 teaspoons dried mint About 1/4 cup extra virgin olive oil 1 tablespoon well dried capers 1 cup mixed greens 2 tablespoons Kalamata Vinaigrette Using kitchen twine, carefully tie each piece of lamb at least once vertically and 4 times around the circumference to hold the meat firmly in place.

  • GAI'a Ritinitis Nobilis Retsina- Winebow
GAI'A Ritinitis Nobilis Retsina NV W I N E D E S C R I P T I O N One of the pioneers of the modern Greek wine revolution, Gai’a Estate (pronounced Yay-ya) was established in 1994 by Leon Karatsalos and winemaker Yiannis Paraskevopoulos. Their mission was to capture the best that Greece’s indigenous grapes have to offer by merging traditional viticultural and production methods with innovative techniques. The estate is named after “Mother Earth,” in honor of the unique terroir that gives birth to these world- class wines. A B O U T T H E V I N E Y A R D The Traditional Appellation for Retsina can be made anywhere in Greece, typically from Savatiano: a high-yielding, neutral-flavored white grape. Ritintis Nobilis represents a courageous re-interpretation of the oft-maligned Retsina style, made from high-quality Roditis grapes from cool-climate, north-facing hillside vineyards located on the Corinthian slopes; the ideal environment for producing grapes with elegance and a smooth, lemony character. W I N E P R O D U C T I O N The Retsina of Greek antiquity developed its distinctive flavor from pine resin that was used to seal the porous surface of the clay amphora used to store and transport wine. Although resin is no longer needed to provide air-tight containers for wine, today it is added directly to the must during the fermentation process in order to achieve the signature flavor profile. The grapes for the Ritinitis Nobils are destemmed prior to crushing.
