    MAI TAI 1.5 oz white rum ½ fresh lime juice ½ oz orange curaçao ½ oz orgeat syrup* (contains nuts) ¾ oz dark rum Shake all ingredients but the dark rum with ice and strain into a glass. Float the dark rum on top, and garnish with lime and a mint sprig. If you want to have fun with your dark rum float (because nothing says tiki like an over-the-top garnish), take the half a lime you squeezed and remove as much pulp as you can. Place the half lime shell in the glass and fill it with overproof rum instead of dark rum. Place a crouton in the lime shell (it will act like a wick) and light the crouton. Just keep the fire extinguisher handy. *You can find orgeat syrup in the cocktail mixer sections of most grocery stores or specialty wine shops. If you’re adventurous and have a lot of almonds, sugar, orange flower water, and some time on your hands, you can always make you own. You can also substitute almond syrup (like the kind you’d put into coffee drinks) in a pinch. Though the original tiki bars got their start before World War II, it was the post-war years where they truly flourished. Polynesian culture (or at least white Americans’ idea of Polynesian culture) captured the imagination through the 1940s and 50s.     Aloha Pineapple Smoothie ingredients 2 cups frozen pineapple chunks ¼ cup ice 1 cup pineapple juice 1 cup whole coconut milk (stirred) 2 tablespoons brown sugar Garnish with fresh pineapple wedges directions Place all the ingredients in a blender and blend until smooth add water if necessary Pour into two glasses and garnish with a wedge of fresh pineapple Polynesian Pomegranate Meatballs ingredients glaze: 3 tablespoons hoisin sauce 2 tablespoons pomegranate molasses* 2 tablespoons soy sauce 1 tablespoon miso paste* meatballs: 1 pound ground chuck ½ cup crispy fried shallots* 1 egg 2 tablespoons sesame seeds instructions Preheat the oven to 400 degrees Line a rimmed baking sheet with aluminum foil Combine the ground chuck, crispy fried shallots and egg and mix well Using a 1 ½ inch scoop, form the meatballs and place them on the baking sheet Combine the glaze ingredients and drizzle over the meatballs Sprinkle with the sesame seeds Bake for about 13-15 minutes or until browned and cooked through *Crispy fried shallots, miso paste, and pomegranate molasses can be purchased at Wegmans, Harris Teeter or on Amazon Strawberry Lime Daiquiri ingredients 1 12-ounce bag frozen whole strawberries Juice and zest of 1 lime ⅓ cup sugar 6 ounces water or light rum Fresh strawberries for garnish directions Place all the ingredients except the garnish in the blender and blend until smooth Divide among 4 glasses and garnish with a fresh strawberry Bacon Pineapple & Water Chestnut Tidbits ingredients 2 8-ounce can whole water chestnuts 2 tablespoons Dijon

    HAPPY HOUR BY MURRAY’S Tropical Rum Punch Prep: 3 hr. | Assembly: 5 min. | Total: 3hr. 5 min. | Makes: 3 cups A sweet citrusy cocktail for all seasons. Ingredients: Orgeat Syrup Tropical Rum Punch • 8 oz. Blanched slivered almonds • 2 oz. Aged rum • 86 oz. plus 2 cups Water • 1 oz. Fresh lime juice • 81 tsp. Orange Blossom Water • 1 oz. Orgeat syrup • 88 oz. Blank Slate Palm Sugar Syrup • Splash of grenadine to taste • 81 tsp. Almond extract • Crushed ice • 81 oz. Vodka (optional) Directions: Orgeat Syrup 1. Preheat oven to 400 degrees. 2. Spread out almonds on a baking sheet and roast for 4 minutes, shaking the tray halfway through. 3. Add roasted almonds to a food processor with 6 ounces of water and blend briefly until the mixture is uniform, but roughly chopped. 4. Transfer the mixture into a non-reactive mixing bowl and add 2 cups of boiling water. Let stand for 3-12 hours. 5. Line a strainer or chinois with overlapping layers of fine cheesecloth leaving enough trailing to hold on to. 6. Pour the mixture and allow to filter through assisting with a spatula. Fold up the ends of the cheesecloth carefully to trap the pulp in a bag and squeeze out the remaining liquid. 7. Place the strained mixture into a sauce pan and heat on medium heat without letting it boil (approximately 140 degrees). Add the Palm Sugar Syrup and mix. 8. Allow to cool to room temperature. Add Orange Blossom Water and almond extract and mix thoroughly. You may add vodka as a preservative if desired.
