Mai Tai Recipe MAI TAI 1.5 oz white rum ½ fresh lime juice ½ oz orange curaçao ½ oz orgeat syrup* (contains nuts) ¾ oz dark rum Shake all ingredients but the dark rum with ice and strain into a glass. Float the dark rum on top, and garnish with lime and a mint sprig. If you want to have fun with your dark rum float (because nothing says tiki like an over-the-top garnish), take the half a lime you squeezed and remove as much pulp as you can. Place the half lime shell in the glass and fill it with overproof rum instead of dark rum. Place a crouton in the lime shell (it will act like a wick) and light the crouton. Just keep the fire extinguisher handy. *You can find orgeat syrup in the cocktail mixer sections of most grocery stores or specialty wine shops. If you’re adventurous and have a lot of almonds, sugar, orange flower water, and some time on your hands, you can always make you own. You can also substitute almond syrup (like the kind you’d put into coffee drinks) in a pinch. Though the original tiki bars got their start before World War II, it was the post-war years where they truly flourished. Polynesian culture (or at least white Americans’ idea of Polynesian culture) captured the imagination through the 1940s and 50s. Whether through the experiences of returning servicemen from the Pacific Theater, Thor Hyerdahl’s 1947 Kon-Tiki expedition, or Hawaiian statehood in 1959, the booming middle class enjoyed their new affluence by sipping cocktails out of half-coconuts or hurricane glasses at one of the many tiki bars that dotted the nation in the post-war years. The Mai Tai is claimed by both Donn Beach of Don the Beachcomber and Victor Bergeron of Trader Vic’s. Like many tiki cocktails, there are almost as many recipes for it as there are bars that serve them. The recipe above is close to the original and drier than the orange-pineapple- grenadine modern evolution of a Mai Tai.     Mai Tai The original version by Trader Vic "You have more fun with a flower behind your ear, a Mai Tai in your hand, and good friends" - Trader Vic Specs: 60ml (2oz) dark rum 25ml (5/6oz) fresh lime juice 15ml (1/2oz) triple sec or curacao 10ml (1/4oz) orgeat syrup 5-10ml (1/4oz) rich demerara sugar syrup Spent lime husk Mint sprig to garnish Equipment: A jigger Shaker tins A rocks glass (or something similar shaped and fun in the tiki spirit!) A straw Method: Squeeze your lime juice, and keep one of the half husks. In to your shaker tin add all of the ingredients except the mint- you don’t want minty flavour in the cocktail, just the aroma from the garnish. Similarly, some people like to add the lime husk in to the tin while shaking, but I feel that the smell of the oils from the garnish is enough. Fill your tin with ice, seal and shake as hard as you can. We like to serve this drink as a ‘shake and dump’, that is with no strainers. It is a no fuss beach drink, after all! Just pour the entire contents of your shaker tin in to your rocks glass, garnish to look like a tropical island, and enjoy! Suggested ingredients: It's impossible to recreate the original recipe as the original rum is no longer available. We've gone for Appleton's Estate, it’s Jamaican like the original, and really robust. Orgeat is an almond syrup, and Monin is always a safe bet.

    Trails of the Cocktail Few cities can boast more historic significance in their cocktail culture than the Crescent City: birthplace of the Sazerac, Ramos Gin Fizz, the Grasshopper, the Hurricane, and (backed by one of the best apocryphal origin stories ever concocted) even the cocktail itself. In 1769 Spanish Colonial Governor of Louisiana Alejandro O‟Reilly issued a proclamation allowing one limonadier (lemonade seller), twelve taverns and six billiard halls to dispense alcoholic beverages. Closing time was ordained to be 8 pm, but bribes to the necessary officials extended the hours over the years. Rum came into the port of New Orleans and was taxed by the Spanish colonial government. Pat O‟s, Home of “The Hurricane” The “Hurricane”, the most popular drink at Pat O‟Brien‟s in the French Quarter, was created during World War II when liquor such as whiskey was in short supply. In order to purchase just one case of these preferred liquors, liquor salesmen compelled bar owners to purchase as many as 50 cases of rum, which was plentiful. In an effort to utilize the excess of rum, Pat O‟Brien's famous recipe emerged. The name came along soon after when a glass (shaped like a hurricane lamp chimney) was used to serve the popular rum cocktail. Don the Beachcomber (1907 — 1989), founding father of Tiki culture (Tiki bars, restaurants and nightclubs), enjoyed great popularity in the United States — mostly from the late 1940s through the mid-1960s. He and his friendly rival “Trader Vic” Bergeron are still remembered for their cultural influence.
