The British Journal of Sociology 2011 Volume 62 Issue 1 Vegaphobia: derogatory discourses of veganism and the reproduction of speciesism in UK 1 national newspapers bjos_1348 134..152 Matthew Cole and Karen Morgan Abstract This paper critically examines discourses of veganism in UK national newspapers in 2007. In setting parameters for what can and cannot easily be discussed, domi- nant discourses also help frame understanding. Discourses relating to veganism are therefore presented as contravening commonsense, because they fall outside readily understood meat-eating discourses. Newspapers tend to discredit veganism through ridicule, or as being difficult or impossible to maintain in practice. Vegans are variously stereotyped as ascetics, faddists, sentimentalists, or in some cases, hostile extremists. The overall effect is of a derogatory portrayal of vegans and veganism that we interpret as ‘vegaphobia’. We interpret derogatory discourses of veganism in UK national newspapers as evidence of the cultural reproduction of speciesism, through which veganism is dissociated from its connection with debates concerning nonhuman animals’ rights or liberation. This is problematic in three, interrelated, respects. First, it empirically misrepresents the experience of veganism, and thereby marginalizes vegans. Second, it perpetuates a moral injury to omnivorous readers who are not presented with the opportunity to understand veganism and the challenge to speciesism that it contains. Date submitted: 10/31/17 Industry Summary: In the United States, approximately five million metric tons of pork variety meats and other byproducts are generated each year with a large amount of this material being rendered to generate low value products like pet food, meat/bone meal, fat, and grease. An alternative use of the US variety meats would be to market and sell them to consumers in countries like China that prefer strong tasting pork products like the variety meats. The desirability of these products in foreign markets makes them higher value products, which could help increase the value of live hogs for US producers. To be able to market and sell these variety meats in global markets, it is important to understand the microbiological status of these products. Therefore, the objective of the current study was to: Determine the microbiological profile of commonly consumed offal products (liver, heart, kidney, brain and intestine) as currently handled in pork production facilities in the United States. This microbiological profile will include tests for: mesophilic aerobic plate counts (APC), Salmonella, Yersinia enterocolitica, and Toxoplasma gondii. To address this objective, samples of heart, kidney, liver, brain and intestine were obtained from 15 pork processing plants in 10 states found across the Midwestern and Southeastern pork-producing region of the US. -

219 No Animal Food: The Road to Veganism in Britain, 1909-1944 Leah Leneman1 UNIVERSITY OF EDINBURGH There were individuals in the vegetarian movement in Britain who believed that to refrain from eating flesh, fowl, and fish while continuing to partake of dairy products and eggs was not going far enough. Between 1909 and 1912, The Vegetarian Society's journal published a vigorous correspond- ence on this subject. In 1910, a publisher brought out a cookery book entitled, No Animal Food. After World War I, the debate continued within the Vegetarian Society about the acceptability of animal by-products. It centered on issues of cruelty and health as well as on consistency versus expediency. The Society saw its function as one of persuading as many people as possible to give up slaughterhouse products and also refused journal space to those who abjured dairy products. The year 1944 saw the word "vergan" coined and the breakaway Vegan Society formed. The idea that eating animal flesh is unhealthy and morally wrong has been around for millennia, in many different parts of the world and in many cultures (Williams, 1896). In Britain, a national Vegetarian Society was formed in 1847 to promulgate the ideology of non-meat eating (Twigg, 1982). Vegetarianism, as defined by the Society-then and now-and by British vegetarians in general, permitted the consumption of dairy products and eggs on the grounds that it was not necessary to kill the animal to obtain them. In 1944, a group of Vegetarian Society members coined a new word-vegan-for those who refused to partake of any animal product and broke away to form a separate organization, The Vegan Society. -

Spicy Pork Meatballs, Spicy Meat Sauce, and Polenta Courtesy The Meatball Shop Yield: 4 to 6 servings INGREDIENTS: For the Spicy Meat Sauce: 2 tablespoons olive oil 1 large onion, finely diced 1 pound ground pork shoulder 2 teaspoons crushed red pepper flakes kosher salt 2 tablespoons tomato paste 2 26-ounce boxes diced tomatoes For the Spicy Pork Meatballs: 2 tablespoons olive oil 2 pounds ground pork shoulder 1 tablespoon, plus 1 teaspoon pickled, hot kosher salt 4 hot cherry peppers, minced ¼ cup fresh cherry peppers pickling liquid 4 white bread, minced 3 eggs For the Polenta: 1 teaspoon coarsely ground kosher salt 2 cups cornmeal ½ cup grated heavy cream 1/3 cup Parmesan 4 tablespoons unsalted butter METHOD: For the Spicy Meat Sauce: In a large pot, heat olive oil over medium heat. Add onion, ground pork, red pepper flakes, and salt and cook, stirring constantly until the meat is thoroughly cooked and onions are soft and beginning to brown, about 15 minutes. Add tomato paste and cook 5 minutes more. Add tomatoes and stir constantly until the sauce begins to boil. Cook 35 minutes, stirring every 5 minutes. Season with salt. For the Spicy Pork Meatballs: Preheat oven to 450°F. Drizzle olive oil into a 9-inch x 13-inch baking dish and coat the entire surface. In a large bowl, combine the pork, salt, cherry peppers, pickling liquid, bread, and eggs, mixing by hand until thoroughly incorporated. Roll the mixture into round, golf ball-size meatballs, making sure to pack the meat firmly. Place the balls in the prepared baking dish, being careful to line them up snugly and in even rows vertically and horizontally to form a grid. -

ABSTRACT This study examined two different appeals (rational vs. emotional) in the format of two short documentary clips aimed at influencing viewers to adopt a plant-based diet. Participants (N = 127) viewed one of two 2-minute documentary clips that explain the health benefits of adopting a plant-based diet from either a rational appeal based on scientific facts delivered by credible sources or from an emotional appeal of a personal testimonial where the speaker is overcome with emotion about the personal benefits experienced from her adoption of a plant-based diet. Participants viewed each clip and then rated the clip on perceived argument strength and attitude toward the message measures. The manipulation check of each appeal showed that each appeal was statistically significant. Therefore, the manipulation used in this study was effective. Findings indicate that neither message produced significant attitude favorability or perceived argument strength differences. An additional measure, Need for Cognition (NFC), was included to discover if people categorized as high NFC (N = 45) and low NFC (N = 33) favor one appeal over the other. -

It is a breathtaking portal into the chemically based and ecologically disastrous agriculture we call “food.” The film’s nationwide debut coincides with a third potential case of mad cow disease in the U.S. If confirmed, this case lends poignancy to filmmaker Howard F. Lyman’s early predictions about a once obscure disease—bovine spongiform encephalopathy (BSE) and its fatal human variation, Creutzfeldt-Jakob disease. While critics deliberate on the spread of BSE in this country, Lyman, author of The Mad Cowboy: Plain Truth from the Cattle Rancher Who Won't Eat Meat, does- n’t mince words. During an April 1996 appearance on the Oprah Winfrey show, Lyman argued an outbreak of mad cow disease in America could make AIDS seem like the common cold. He explained how the routine process of grinding up diseased cows to feed live cows turns herbivorous animals into cannibals, some infected with mad-cow. While that practice is now banned, cows may still consume cow blood and waste. Calves regu- larly ingest milk mixed with bovine blood serum. Lyman’s candor prompted Oprah to swear off burgers and Engler & Cactus Feeders Cattle Company to sue Winfrey, Lyman and Harpo Productions for $12 million each. But a U.S. District Judge threw out the Texas cattlemen’s food disparagement angle (nick- named “veggie libel laws”) and the trial ended triumphantly for Lyman and Winfrey. -
