    Traditional Colcannon Recipe ● 4 lbs (1.8kg) potatoes, or about 7-8 large potatoes (‘old’ potatoes or russet potatoes are ​ best, waxy potatoes won’t do) ● 1 green cabbage or Kale ● 1 cup ( 7 fl oz, 240 ml) milk (or cream) ● 1 stick (4oz, 120g) butter, divided into three parts ● 4-5 scallions (green onions), chopped ● Salt and Pepper ● Fresh Parsley or chives Not everyone adds scallions to colcannon, but they do add something worth having in my opinion. Method Peel and boil the potatoes. Remove the core from the cabbage, slice it thinly, and put into a large saucepan. Cover with boiling water from the kettle and keep at a slow rolling boil until the cabbage is just wilted and has turned a darker green. This can take anything from 3-5 minutes depending on the cabbage. Test it and don’t let it overcook, if anything it should be slightly undercooked. When the cabbage is cooked, drain it well, squeeze to get any excess moisture out, then return to the saucepan. Add one third of the butter and cover. Leave it covered and in a warm place, but not on a burner, with the butter melting gently into it while you continue. When the potatoes are soft, drain and return the saucepan, with the drained potatoes in, to a low burner, leaving the lid off so that any excess moisture can evaporate. When they are perfectly dry, add the milk to the saucepan along with a third of the butter and the chopped scallions if you are using them.

    St Brigid – Feast Day, 1st Feb S ’ St. Brigid, " Mary of the Gael", abbess and patroness of Ireland, and founder of the first Irish monastery in Kildare, was born near Dundalk in 450 A.D. Tradition tells us that her unbounded charity drew multitudes of the poor to her door and much enraged her father Dubhtach, a Leinster pagan Chieftain and a stubborn disbeliever. As he lay on his deathbed, she sat by him and whiled away the time weaving a cross from the rushes at her feet. Her father asked her to explain it’s meaning and was so overwhelmed that he became a Christian before his death. Many believed that this rush cross, which became her emblem, keeps evil and hunger from the homes in which it is displayed. For centuries, it has been customary on the eve of her feast-day for the Irish to fashion a St. Brigid's Cross of straw or rushes and place it inside the house, over the door. St. Brigid's feast day falls on the first of February, the day on which she died in 524 A.D. Her body lies at Downpatrick beside the graves of St. Patrick and St. Columba. The cross is made from rushes and tradition has it that the women who made them prayed for different people as they made each arm of the cross.     Barbara Thompson Colcannon Recipe (Serves 4) Ingredients: • 1 lb. cabbage, shredded • 2 lb. russet or Yukon gold potatoes, peeled and cut in 2” pieces • 2 leeks, cleaned and the whites thinly sliced • 4 slices of bacon, diced, cooked crisp • 1 c. milk (room temp.) • 1 stick of butter, plus 2T. (room temp) • Salt and pepper to taste 1. Peel and cut the potatoes in 2” pieces. Cover with water. 2. Boil the potatoes until tender when poked with a fork (about 15 min.) 3. In a large skillet, cook the bacon until crisp. Remove and drain on a paper towel and dice. 4. In the same hot skillet, add the cabbage and leeks, stirring often for 5-7 minutes. 5. Mash the potatoes with a masher or fork. Do not use a mixer. 6. Add the butter and milk. Stir until creamy. 7. Stir in the cabbage and leeks until well blended 8. Add salt and pepper to taste. 9. Put the colcannon in a serving bowl, making an indentation in the center. Put the 2 T. of butter in the indentation and serve. Variations on the theme: 1. The $5/5minute Hack 2. Breakfast Potato Patties 3. Bubble and Squeek Breakfast Potato Patties To your leftover Colcannon, add 1 egg and ½ c. flour (assuming you have 1 cup of potatoes left).
