But he has already proven himself as a winemaker with exceptional talent. Born in 1975, he exudes confidence and drive and has a crystal-clear understanding of what constitutes a great Chardonnay de terroir. REPUTATION Laurent’s flagship wine is the Montagny 1er Cru “Les Bassets,” which he sources from his 2.35 hectare monopole of premier cru Chardonnay vines in the upper portion of the vineyard. The lower section is village wine. His first commercial vintage of Les Bassets, produced in 2002, put Domaine Laurent Cognard on the wine map. When this premier cru is young, it shows ripe, fruit-forward flavors with outstanding minerality; as it ages, it develops more richness and a fleshy, opulent texture. In 1997, when Laurent was 22, he left his family vineyard for Paris. His grandfather, Raymond Cognard, had supplied grapes to the Vinzelles co-op in the Mâconnais, and his parents, Jean and Marie Anne, sold their fruit to the cooperative in Bissey, near Buxy. Composé de 39 communes, le territoire dispose d’importants enjeux relatifs à l’eau : - L’urbanisation avec le développement de l’agglomération de Chalon-sur-Saône, - L’agriculture et le vignoble avec 2500 ha de vigne sur 22 communes - La complexité du réseau hydrographique (237 km), fortement anthropisé. L’analyse des données disponibles met en évidence un certain nombre de pressions et des enjeux forts sur ce territoire. Qualité des eaux liée aux pollutions diverses, dégradations morphologiques, perturbations du fonctionnement hydraulique et altérations de la continuité biologique constituent ainsi des thèmes d’interventions prioritaires pour répondre aux exigences de la Directive Cadre Européenne sur l’Eau transcrite en droit français dans le Schéma Directeur d’Aménagement et de Gestion des Eaux Rhône Méditerranée. Sur les 39 communes du territoire, une communauté d’agglomération (Grand Chalon), une communauté de communes, quatre syndicats d’assainissement collectif, quatre syndicats d’adduction en eau potable et trois syndicats de rivière reconnaissent la nécessité d’une démarche concertée de gestion de l’eau et des milieux aquatiques et se sont prononcés favorablement pour la mise en place d’une procédure de contrat de rivière.

Not much more than a few cliches: mustard, wine and some of the cities like Dijon, Auxerre and Beaune. Really nothing all that concrete, you know? So when Paul suggested that we take a little spin there, I didn’t need convincing. So much so that Véronique would still helping me plan the trip. This is a perfect opportunity to be guided by local experts. They gave me the addresses of their favorite places and hidden finds. And I can certainly tell you this: This trip absolutely rocks! Everything is gorgeous and accessible. Burgundy is, We’re discovering a multitude of breathtaking cities rich in cultural, in all respects, historical and natural character. But we reach city limits in no time at as good as all and then also tumble into the countryside and its vineyards. its reputation! We are being completely pampered by our hosts. It’s been an immense treat to share everything with them. After all, Burgundians are completely crazy about beautiful things and simply love life. In Burgundy, the best time is mealtime, with a glass of fine wine near at hand! Burgundy is a truly amazing place.
